Return to December Recipe Index

Good morning Nancy and 'Landers! Lordy, but I'm sick of the cold, along with the rest of the East Coast 'Landers!

I've just been lurking for quite a while, but enjoying all the wonderful recipes. Finished chemo last summer, in remission, Praising the Lord.
Here's a long-time favorite, and I dragged it out last week. Real comfort food for cold weather.

Meatball Hot Pot (Soup/Stew)

Meatballs:
1 pound hamburger
1 slice bread, crumbed
1 teaspoon salt
1/8 teaspoon allspice
1 egg
1 8 ounce can tomato sauce (DIVIDED)
1/8 teaspoon pepper
2 tablespoons oil for cooking
Combine all above BUT USE JUST 1/4 cup tomato sauce, reserving the rest. Make into meatballs.
Brown in Dutch oven or heavy pot, cooking slowly until browned on all sides.

Everything else:
1 package onion soup mix
1 1/2 cups sliced carrots
1 cup chopped green bell pepper
3 cups water
1 10 ounce package frozen gren peas
3 medium potatoes, diced (no need to peel if you don't want to)

When meatballs are browned nicely, add everything else (INCLUDING the rest of the tomato sauce)
Bring to a boil and cook over low heat until veggies are done. That'll take 30-45 minutes or so.

You can use the already made frozen meatballs if you're in a hurry, but I have done both ways and prefer the homemade ones, above. IF you use frozen, just add the entire can of tomato sauce to Everything Else.

Serve this with crusty warm bread. And let us know if you like it! Incidentally, haven't made it in crockpot, so don't know if it would work or not.. maybe meatballs would get to mushy?
Keep warm! Kathi in Virginia
