In the December 23 newsletter
Emily mentioned Porcupine meatballs cooked in the pressure
cooker. She did not remember who requested a recipe and
neither do I. This recipe was in the booklet that came with
my Presto Pressure cooker. I have made it many times and
they are very good. They are a little dense so do not
pack them tightly when forming into balls.
Pressure Cooker Porcupine Meatballs
1 1/2 lbs. ground beef
1/2 cup uncooked rice, not instant
1 tsp salt
1 Tbsp. minced onion -or more to your taste
1 can condensed tomato soup
1/2-1 cup water
Combine meat, rice ,salt and onion. Shape into small balls.
Heat tomato soup and water in the pressure cooker. Drop meat
balls into the soup mixture. Close cover securely. Place
regulator on the vent pipe and cook 10 minutes at 15 lbs.
pressure. Let pressure drop of its own accord.
Serves 5-6
