Quick Lemon Crisps
2 cups flour
3/4 tsp. baking soda
pinch of salt
3/4 cup shortening (I used butter
flavored Crisco)
1 cup sugar
2 packages (4 serving size each) lemon
instant pudding
3 eggs, slightly beaten
Cream shortening with sugar and pudding
mix. Add eggs and mix well. Stir in
flour, soda and salt and mix in
thoroughly. Drop from teaspoon onto
greased baking sheets, about 2-1/2
inches apart. Bake 375º for 8 to 10
minutes.
