This is a cheap, tasty and filling meal for 4, made in one pot. You could add side dishes such as creamed potatoes, or anything that you fancy. I served it with roast potatoes and garden peas, this, with the addition fed 6, could maybe have got more servings, but there were 4 gutsy guys eating. I had a delicious pack of spiced Irish sausages, compliments of my future Irish DIL. She was charged for overweight at Dublin Airport, I'm not surprised the amount of Irish goodies she brought with her. Anyone tried Irish Spiced Beef??? Wow. I cooked it in the slo-cooker overnight with a mixture of Guinness and plain water. It was wonderful!

One Pot Sausage and Lentil Stew
Serves 4

1 Tbsp olive oil
400g pack sausages
1 onion, finely chopped
1 garlic clove, crushed
1 red pepper, sliced
250g lentils (I used puy lentils)
150ml vegetable stock
125ml red wine or extra stock

Heat oil in a pan, cook the sausages until browned, then remove. Tip in remaining oil, onion, garlic and pepper, then cook, about 5 mins more until softened. Add lentils and sausages to the pan with the stock and wine, if using. Bring up to the boil, then simmer for 20 mins until lentils have softened and sausages are cooked through.

Serve with plenty of crusty bread.
