I try a recipe for pork chops tonight that I got off line. My DH who doesn't eat much really chowed
down on them. lol They were very good so I will send it in. The recipe came from the Food Network
by Aaron McCargo Jr. known as " Big Daddy".

Smothered Pork Chops

2 tsp. seasoning salt
1 tsp. black pepper
1 tsp. smoked paprika
1/2 tsp. granulated garlic
1/2 tsp. onion powder
2 (1-inch thick) pork chops
1/2 cup self-rising flour
3 - 4 Tblps. grapeseed oil
1 Tblslp. freshly chopped thyme leaves
1 Vidalia onion, sliced
2 Tblsp. minced garlic
2 cups beef stock
1 cup chicken stock

Preheat oven to 350º

In small bowl mix together the seasoning salt, pepper, paprika, garlic powder and onion powder. Season each pork chop liberally with the spice mixture. Add flour to a small bowl and stir in the remaining spice mixture. Dredge the chops in the flour shaking off excess.
In a large cast iron skillet oven medium-high heat, add the oil. Sear each chop for 2-3 min., then flip and sear the other side for an additional 2 min. Remove from the skillet to a plate and set aside. Add the thyme, onion, garlic and1-2 Tblsps. of seasoned flour and cook until slightly caramelized, about 2-3 min. Stir in the stocks and with a wooden spoon scrape up any bits from the bottom of the skillet. Add the chops back to the pan and cover. Put in the oven and bake until tender and the sauce has thickened, about 18 - 20 min. Remove the chops and sauce to a platter and serve.

Note:
I put the seasoning salt, pepper, paprika, garlic powder, onion powder and reg. flour in plastic bag and dropped the pork chops in one at a time an shook the bag, then put them in a skillet with garlic oil and browned, put on a platter, then I rinsed out the skillet and put in a little more garlic oil and added 3 chopped garlic cloves, chopped a small onion and I didn't have fresh thyme so I just added some dried thyme. I put in 1/4 to 1/2 flour and sauté this until light tan then put in one can of chicken stock. I cooked this until thick, then put my 4 half inch chops in a baking dish and poured this sauce over it and baked it until tender. It was very tasty.
