This is for Desertbloom in NV request for tamale pie. This
is a recipe I got from my mother. It was often requested by
friends coming for dinner.
Tamale Pie Casserole
Put in saucepan 3/4 C. corn meal and 3/4t. salt.
Stir in 1 1/2 C. water.
Add gradually 1 3/4 C. canned milk.
Stir and boil until mixture thickens.
Cover and let cool. Preheat oven to 375*. Grease 13X9X2 pan.
Cook slowly for 5 minutes: 6T. chopped onions in 2 1/2 T.
shortening. Add 1 lb. lean beef and cook until it looses
it's red. Then add 3/4 C. canned diced tomatoes, 1/4 t. salt
(you may want to add more salt to taste) 1/8 t. pepper, 1t.
chili powder., and 1 can Kidney beans. Stir and cook until
well blended. Spread half of corn meal mixture in baking
dish, cover with meat mixture, then top with remaining corn
meal mixture. Bake until the top is lightly browned, about
45 min.
(Sorry I don't remember if I drained the beans or not.)
