Broccoli Corn Bread
1/2 cup butter, melted
1/3 cup finely chopped onion
1/2 tsp. salt
3/4 cup cottage cheese
1 pkg. frozen chopped broccoli, thawed
and drained
4 eggs, slightly beaten
1 pkg. (8-1/2 oz.) quick corn muffin mix
In mixing bowl, combine melted butter,
onion, salt, cheese, broccoli and beaten
eggs; blend. Stir in muffin mix. Pour
into greased 9 x 13 inch baking pan.
Bake at 400º for 20 minutes, or till
tests done with a toothpick. Cut into
serving size squares and serve
immediately.
Makes 12 servings. This is so delicious!
