If anyone is looking for a low cal, low fat granola this is it. I make this and hide it. It is so good. I made this for my sister and she ate the whole recipe at one sitting. I now
give it to her in one cup containers 1 at a time.

Easy Light Granola

In food processor grind to powder.
1 cup oats

In a large bowl mix to combine:
Above ground oat powder
2 cups oats (any type except instant)
2 tsp cinnamon
2/3 cup brown sugar or 1/3 cup Splenda
2 cups of assorted dried fruits, any nuts and seeds
(I used dried cranberries, apricots, sunflower and walnuts)

Add and stir well to distribute:
3 tbs maple pancake syrup (I use SF)

Finally add and toss until all ingredients are coated:
4 tbs butter, melted

Spray a cookie sheet. I like little chunks of nuggets. Grab a small handful of mix and squeeze together to form
a glob. Mix should hold together fairly well. You should wind up with a single layer of large nuggets, smaller nuggets and loose pieces. Do not move the granola once it is on the sheet.

Bake 300 oven for 20 minutes. Take the sheet from the oven and very, very gently stir the granola. You do not want to break the nuggets you formed.

Place the sheet back in the oven and bake an additional 10-20 minutes depending on how toasted you like it.
(I leave mine in the oven for the full 20 minutes.)

Remove from oven and place cookie sheet on a cooling rack. It will harden completely as it cools.
