Diabetic Fudge

2 (8 oz.) packages cream cheese
26 packets Equal (or any artificial sweetener to equal ½ cup sugar)
1 tsp. vanilla
2 (1 oz.) squares unsweetened chocolate
1/2 cup pecans

Beat the cream cheese and Equal together until smooth. Add the vanilla. Melt the chocolate and allow to cool. Beat cooled chocolate into the cream cheese. Stir in pecans. Spread into an 8" x 8" dish. Keep refrigerated.

Crab Meat Quiche

2 Tbs diced green onion
3 Tbs butter
1/4 lb. cooked and sliced crab meat
3 eggs
1 cup whipping cream
1 Tbs. tomato paste
1/4 cup grated Swiss cheese

Preheat oven to 375°. Cook the onions in the butter over a moderate heat until tender. Do not brown. Add crab meat. Stir until warm. Add a pinch of salt and pepper, bring to a boil and remove from heat. Beat the eggs, cream and tomato paste together. Blend into crab meat mixture. Season with salt and pepper. Pour into or 8 inch pastry shell and top with cheese. Bake 20-30 minutes, until top is puffed and brown. Serve hot or cold. Lobster or shrimp may be substituted for crab, if desired.

Several of my former co-workers have tried to get me to start a teaching blog about my ideas and experiences. I kept up with my website for awhile but just lost interest and they miss it. Hi Nancy: Hope all is well with you and kitties. Erma in Jacksonville, Fl. wanted an E'Clair in a bowl recipe. This is the same thing I believe, and I think I sent it in once before. This recipe calls for a 13 x 9" dish and I first had it this past year at a family gathering. Everyone loved it so , I think you will like this one too. It seems to have the same ingredients that you mentioned Erma.

Eclair Cake

2 (3.5 ounces) packages of instant French vanilla or vanilla pudding mix
1 (8 ounce) container cool whip, (thawed)
3 cups of milk
1 (16 ounce) package of graham crackers
1 (16 ounce) container chocolate frosting

In a medium bowl, thoroughly blend the pudding mix, cool whip and milk.

Arrange a single layer of graham cracker squares in the bottom of a 13 x 9 inch baking dish. Evenly spread the pudding mixture over the crackers.
Top with another layer of graham crackers.

Microwave the container of chocolate frosting only enough so that it will pour. Spread the frosting over the whole cake up to the edges of the baking dish. Cover, and chill
for at least 4 hours before serving. Enjoy.

It's really easy to make and it's yummy..

This recipe is for Sue who wanted a soft, melt in your mouth peanut butter cookie recipe

Soft Peanut Butter Cookie

2 cups sugar
2 cups creamy peanut butter
2 eggs
2 tsp. baking soda
pinch of salt
1 tsp vanilla

Stir peanut butter and sugar together until smooth. Beat in eggs one at a time and then add baking soda. Roll dough into 1 inch balls and place 2 inches apart. Flatten with a glass or criss-cross with a fork. Bake 8-10 minutes at 350. I have added mini chocolate chips and these are wonderful.

Gay in L.I., I also stated that I used the equivalent of 2 cans of chicken broth for my Amish chicken noodle soup. That was besides the water. I prefer to use stock or broth so the taste isn't diluted like it would be with water. I used 6 boneless, skinless chicken tenders in my pot also. That isn't a ton of chicken, but just enough for 2 good meals for 2 of us. I also did not use a full 4 cups of noodles. I guess I really halved the recipe. I am sorry I did not specify in my posting! Erma in Jacksonville, Fl, this eclair cake can be made in a bowl to be served as a trifle. I made it the other day to take to shuffleboard today. yummy! I sent it in for the 11/9/09 newsletter also.

Éclair Pudding Cake

1 sm. box instant vanilla pudding
1 c. milk
1/2 c. confectioners sugar
8 oz. Cool Whip
Graham crackers
1 (16 oz.) can chocolate frosting
Mix pudding, milk and sugar. Stir in Cool Whip. Layer an 8x8 inch square dish, in this order: graham crackers, pudding mix, crackers, mix, crackers, mix and crackers. Spread frosting on top. Chill.

Nancy, Here is another crockpot recipe with few ingredients. It is easy and very good.

Crockpot Chicken and Stuffing Supper

4 boneless skinless chicken breast halves
1 can (10 and 3/4 oz.) cream of chicken or cream of mushroom soup
1/3 cup milk
1 box Stove Top stuffing mix--the seasonings are in it
1 and 2/3 cups water

Place chicken in crockpot. Combine soup and milk and pour over chicken.
Combine stuffing mix and water and spoon over chicken.

Cover. Cook on low 6 to 8 hours.

For Sue's request, here's my all time favorite Peanut Butter Cookie Recipe. The finished product is a nice shape and soft in the middle.

Peanut Butter Cookies

1/2 cup peanut butter (I prefer the extra crunchy)
1/4 cup Crisco
1/2 cup brown sugar
1/2 cup granulated sugar
1 egg, well beaten
1 cup all-purpose flour
1 teaspoon soda
1 teaspoon vanilla flavoring

Cream peanut butter and Criso together. Add sugar gradually, continuing until mixture is light and fluffy. Add beaten egg. Then, add flour and soda; mix well. Drop or roll by teaspoons on to ungreased cookie sheet. Press down with tines of a folk. Bake 10-15 minutes at 350 degrees. Avoid overbaking. Mine are usually done in 12 min.

Here's another recipe for Peanut Butter Cookies using a shortcut method. It's makes a tasty, pretty shaped cookie. However, I do prefer my old all time favorite listed above.

Shortcut Peanut Butter Cookie

1 regular size box of chocolate or yellow cake mix
1/3 cup water
1 cup crunchy peanut butter
2 eggs
1 teaspoon vanilla flavoring
granulated sugar to coat

Mix all ingredients till well blended. Roll into teaspoon size balls and dip in granulated sugar. Place on ungreased cookie sheet. Press each cookie with tines of fork. Bake at 350 degrees about 11-12 minutes or until very lightly browned.

This is for Linda in No Ga. Regarding glass top stoves and using cast iron pans on them.

Linda, Ladies, I don't have a glass top stove, but as an ex machinist, I do know cast iron.

If the cast iron pan is "as" cast, it will be rough on the bottom, and the surface will be super hard , even harder than most machinist tools.
The iron is way harder than glass is, and it will scratch, run your finger, or your finger nail across the bottom of the pan, and see if there is any roughness, if so I would think twice about using it.

If it has been completely machined and has a very smooth bottom then it might???? be OK.

Personally, I think I would look for an alternative pan.

Crunchy Green Pea Salad

1 pkg. frozen peas
2 hard boiled eggs, chopped
1 (8 oz.) can water chestnuts, drained & sliced
2 tbsp. chopped pimiento
1/3 c. thinly sliced green onions
1/2 c. sliced celery
1/3 c. mayonnaise
1 tbsp. mustard
1/2 tsp. garlic salt
1/4 tsp. Pepper

Cook peas in water as per package directions until just barely tender; drain. Rinse briefly with cold water to cool quickly; drain again. In a bowl combine cooled peas, eggs, water chestnuts, onion and celery. Mix mayonnaise, mustard, garlic salt and pepper. Stir into vegetables gently and chill 24 hours

Peanut Butter Fruit Dip

8 oz. pkg. cream cheese, softened
3/4 c. brown sugar
1/4 c. white sugar
2 tbsp. peanut butter

Beat all ingredients together until smooth. Serve with fresh fruit.

Macaroni And Ham Casserole

2 c. cooked ham
1 can mushroom soup
1 tbsp. minced onion
1 c. American cheese
2 c. elbow macaroni
2/3 c. water

Cook macaroni in water, add 1 tsp. salt. Drain, rinse in cold water, and drain again. Mix together all ingredients except cheese. Place mixture in a greased casserole dish and top with cheese. Bake at 350 to 375 degrees for 30 minutes.

Stuffed Peppers (to Freeze)

1 lb. hamburger
1 clove garlic, crushed
1 tsp. salt
2 cans tomato soup
8 green peppers
1 c. chopped onions
2 tsp. chili powder
1/2 tsp. black pepper
1/2 lb. sharp cheese, cut up
1-1/2 c. cooked rice

Cook beef, onion, garlic until meat is brown. Add seasonings and soup, simmer covered 10 minutes. Add cheese, cooking until cheese melts. Stir in rice. Cool.
Cut peppers in half lengthwise and take out seeds. Cook in boiling salted water about 3 minutes. Drain and cool. Place peppers on baking sheet. Stuff with meat-rice mixture. Place in freezer until frozen. Remove, wrap, seal and return to freezer.

To serve: Remove wrapping and partially thaw at room temperature. Place in shallow pan, cover with foil. Bake at 400 for 30-45 minutes.

Easy Stuffed Green Peppers

2 large green peppers cut in half length wise (4 pieces total)
1 pkg. Spanish Rice-a-Roni
1 sm. can tomato sauce
Cheese of your choice

Par Boil cut green peppers, I usually do this in microwave. Drain and pat dry peppers. Cook Spanish Rice-a-Roni per package directions. Stuff peppers with Rice-a-Roni. Season tomato sauce according to your taste and pour over stuffed peppers. Top with cheese. Bake in 350 oven till bubbly.

This can also be frozen..I defrost before heating. Recipe can be doubled.

Low Fat Bisquick Substitute

2 cups all purpose flour
1 cup whole wheat flour
1/4 cup wheat germ
2 tablespoons oat bran
1/2 cup nonfat dry milk powder
3/4 teaspoon salt
3 tablespoons baking powder
1/3 cup canola oil

Mix dry ingredients in a food processor or electric mixer. Slowly pour in the oil as the machine is running. Scrape the sides of the bowl with a rubber spatula. Store in an airtight container in the freezer.

Hi Nancy. Just searching and came across this gift basket list that I had send in a couple of years ago. Thought maybe some of your newer viewers would like them.

Gift Baskets can be fun and easy once a theme is picked out. They can be a
great idea if a group of people want to contribute for a shower or birthday gift.

Sewing Basket - Fill a sewing box or basket with needles, thread, thimble, buttons, finish by tying with a tape measure.

Baking Basket - Fill a Bundt pan or a candy clay basket with mixing spoons, collected recipe cards from each participant, spatula, measuring cups, and a cookie cutter. To make it even more special paint a set of pot holders or apron.

Pasta Basket - Fill a large colander, lined with a kitchen towel, with dried pasta, spices, sauces, a bottle of wine, and some bread sticks.

Children's Craft Can - Fill a white paint bucket with paints, paper, stickers, brushes, pencils, and markers. Finish by painting the child's name on the bucket and top with curling ribbon on the handles.

Bath Basket - Line a basket with an elegant towel, add soaps, a candle, sponges, bubble baths, bath beads, oils, and pampering spa
products all in the same color family. Finish it with a large piece of tulle tied in a bow with a silk flower.

The Grill Master Basket - Line a basket with an apron add a cookbook, marinades, rubs, grilling tools, and potholders.

A Pancake Breakfast Set could include Syrups, Pancake Mix, syrup pitcher, cloth napkin as a liner, jams, and so forth.

Picnic Basket - In a wicket basket lined with a blanket add a bottle of wine, 2 glasses, cheeses, corkscrew, crackers, a cheese board and knife. Include a disposable camera to capture the fun times.

Movie Basket - To an empty popcorn tub add microwave popcorn, candy, canned sodas, videos, CD's, or tickets to the movies.

New Car Bucket - To a bucket add car soaps, wax, chamois cloths, sponges, key chain and special auto scent products.

Bon Voyage Basket - Line a basket with a crinkled map and add a travel journal, pen, small photo album, stamps, prepaid phone card, travel pillow, and simple stationery.

Fisherman's Basket - Inside a creel add lures, line, bobbers, bait, hooks, sinkers, and tie it all up with a tape measure.

Beer Basket - Fill a cooler with an assortment of beers, pretzels, favorite snacks and an opener for a big hit.

Get Well Basket - Fill a cherry basket with chicken noodle soup, Aspirin or Tylenol, a thermometer, current magazines, a crossword
puzzle book, pencil, paper back books, fresh fruit, and a Get Well Bear.

Tool Basket - Inside a Tool Bag add a hammer, screw driver, tape measure, pencil, level, assorted nails, screws and a 'how-to' book.

Computer Basket - Fill a basket with discs, CD's, a mouse pad, post it notes, paper, and paper CD sleeves.

Over the Hill Basket - In a black basket add Geritol, Preparation H, Magnifying Glass, and Ben Gay.

Gardener's Basket - Inside a large pot add seeds, gloves, hand rakes, trowels, seeds, bulbs, and a decorative item for the garden.
To add a crafty touch paint the garden gloves and pot.

Easy Cherry Milky Way Pie
Servings: 6

1 can 21 oz. cherry pie filling
4 tsp Lemon juice
4 (1 1/2 oz) milky way bars
1/3 c Chopped nuts
1 (9") pie crust, chilled

Add the lemon juice to pie filling. Place in pie shell. Thinly slice candy bars over top. Sprinkle with nuts. Bake in a preheated 450 degree oven for 10 minutes. Reduce temperature to 350 degrees. Continue baking 10 to 15 minutes more. Cool and serve.

Éclair Dessert

1 box graham crackers
2 small boxes instant french vanilla pudding
3 cups milk
1 12oz Cool Whip
1 can chocolate fudge frosting

Layer crackers in 9x13" pan. Mix pudding and milk together, then fold in Cool Whip.
Put layer of pudding mix, then another layer of crackers, more pudding, another layer of crackers. Melt frosting in microwave (about 1 minute). Pour frosting over top layer of crackers. Best if chilled overnight. If there are any leftovers, keep refrigerated.

My family loves this, especially in the summer. Nancy, I REALLY enjoy your newsletter.
