Salmon Loaf (Chef Raymo)
1 large can salmon, picked off bones
1 egg
1 cup fine breadcrumbs
1/2 teaspoon salt
1/3 cup finely chopped celery
1/3 cup finely chopped onions
1 Tablespoon dried parsley flakes
1/2 cup mayonnaise (not salad dressing)
Mix together all of the ingredients and
shape into a loaf like you would a meat
loaf. Place into a lightly greased
baking dish and bake in a preheated
350° oven for 1 hour. Serve with
macaroni and cheese, a green salad and
broccoli. Serves 4
