Mama's Pecan Coconut Cake

1 c real butter-soft
2 c sugar
3 cups Swan's cake flor
4 eggs
1 t vanilla
1/2 t almond flavoring
2 t baking powder
1/2 t salt
3/4 plus 2 T milk

Cream butter well and gradually add sugar, creaming well bout 10 minutes. Mix in flavorings. Add eggs one at a time beating after each. Sift the flour, baking powder, and salt. Beat into batter alternately with milk. Beat smooth. Pour into 3-9" round pans that have been sprayed well. Bake 24-28 minutes or done. Cool in the pan 10 minutes on a rack. Turn out of pans onto the same rack to cool while you cook the frosting.

Pecan Coconut Cake Frosting

6 egg yolks
16 oz evaporated milk
2 t vanilla
2 c sugar
1 c butter
3-1/2 c coconut
1 c ground pecans

Whisk yolks, milk, vanilla in pot well. Add sugar and butter. Cook on medium 12 minutes until thick and golden brown, stirring constantly. Remove from heat and add coconut and nuts; mix well. Cool until spreadable. Stack cake with icing between layers, on top and sides.
