Spring is coming! This is one of my favorite Spring/Summer salads.

Spring Pea Salad

10 oz frozen peas, rinsed in hot water
1 cup diced celery
1 cup chopped cauliflower
1/4 cup sliced green onion
2 Tablespoons chopped cashews
1/4 cup crisp, crumbled bacon
1/2 cup sour cream
1 cup prepared Hidden Valley Ranch salad dressing
1/2 teaspoon Dijon mustard
1 small clove garlic, minced

Combine vegetables, nuts, bacon and sour cream. Mix dressing, mustard and garlic together and pour over salad mixture. Toss gently and chill. Serves 4.
