Fruit Cocktail Recipes - Page 2 (10/18/2012)










This recipe is for Susie Indy. I just made this yesterday and it is delicious. For the topping, I used a can of coconut pecan frosting.

Earlene Fruit Cocktail Cake

2 cups sugar
2 eggs, beaten well
2 cups plain flour
2 teaspoons soda
1/4 teaspoon salt
2 (#303) can fruit cocktail

Beat eggs and add sugar. Beat until creamy. Add fruit cocktail, juice and all. Mix well. Add flour, soda and salt and mix well. Bake at 350° in a 13x9 inch pan for 30 to 35 minutes.

Topping
1 cup sugar
1 small can evaporated milk
1 stick margarine
1 cup chopped nuts
1 can coconut
2 teaspoons vanilla

Place first 3 ingredients in saucepan and bring to a boil (sugar milk and margarine). Simmer for 10 minutes. Remove from heat and add nuts, coconut and vanilla. Stir well. Pour over hot cake.

Note: To take the easy way out, you can use 1 can of the coconut pecan frosting mix and its just as good.
