Fruit Cocktail Recipes - Page 2 (10/18/2012)










Re: Nancy, I would like a Fruit Cocktail Cake recipe that has been handed down many generations. I had one that was so easy to make and tasted out of this world. But I have lost the cook book but I can't buy a new one because it was one that was from a Church that we were members of years ago. I remember that you didn't drain the fruit cocktail, of coarse it had flour, I believe it had oil, on top of cake you sprinkle brown sugar nuts and then you put it in the oven. I would like to make this for our granddaughter when she comes over on Wednesday night. I enjoy making foods that she doesn't have at home.

Scarlett's Fruit Cocktail Cake

1 Box SuperMoist Rainbow Chip Cake Mix (I use the Funfetti cake mix)
3 eggs, well beaten
1 can (1 lb. can) fruit cocktail, undrained
1 tsp vanilla

Beat all above ingredients until well blended.
Spray a 13 x 9 x 2 pan and pour ingredients in and spread evenly. Bake at 350 degrees for 40 minutes
or until toothpick comes out clean.
When cool frost with Betty Crocker Rainbow Chip (Funfetti) and cover with multi-colored sprinkles.
Makes a great cake for a birthday!

Can you tell the recipe is old???!!! Don't think Betty Crocker makes Rainbow Chip mix or frosting any more...NOTE: instead of the frosting you could put the topping you mentioned on it. Enjoy!
