We eat a lot of fish at our house. Here are a couple of our favorite recipes.
Sharon

Parmesan Broiled Fish
Makes 6 servings.

2 lbs. fish fillets, skinned
2 tbsp. lemon juice
1/2 c. parmesan cheese, grated
1/4 c. margarine, softened
3 tbsp. mayonnaise
3 tbsp. green onions, chopped
1/4 tsp. salt
Dash liquid hot pepper sauce

Place fillets in a single layer on a well-greased baking platter. Brush fish with lemon juice. Combine remaining ingredients. Broil fillets 4" from heat source for 4 to 6 minutes or until fish flakes easily. Remove from heat and spread the cheese mixture. Broil 2 to 3 minutes or until lightly browned.

Picante Fillets
Makes 6 servings

1-1/4 lbs. fish fillets
1 (1 lb., 8 oz.) jar mild or medium picante sauce
2 tbsp. canola oil
2 c. rice, cooked and hot

Rinse fillets and cut into serving size portions. Heat oil in skillet and sear fish on both sides. Add the picante sauce and simmer fish for 5 to 7 minutes. Serve over hot rice.

Oven Fried Fish
Makes 5 to 6 Servings

1/4 c. margarine, melted
1 tbsp. lemon juice
1/4 tsp. pepper
1/4 tsp. paprika
1/4 tsp. basil
1/8 tsp. garlic powder
1 lb. fillet or flounder
1/4 c. dry bread crumbs
2 tbsp. oil

Combine margarine, lemon juice, pepper, paprika, basil and garlic. Dredge fish in margarine-herb mixture and roll in bread crumbs. Spread oil in shallow baking dish and arrange fish in one layer. Spoon remaining mixture over fish. Bake uncovered in 475 degree oven for 15 minutes or until fish flakes easily with fork.

Southwestern Fish Dish
Makes 5-6 Servings

1 tbsp. water
1 lb. fish fillets
1 sm. onion, chopped
1 med. tomato
1 (8 oz.) jar picante sauce
1/2 c. black olives, sliced
1/2 c. cheese, shredded

Put water and onion in microwave for 2 minutes. Place fillets on top of cooked onion, put in microwave for 4 minutes. Cover with tomato, picante and olives, microwave for 2 minutes. Cover with cheese and heat 1 minute.

Santa Fe Chicken
Serves 6

1 can (15 oz) black beans, rinsed and drained
2 cans (15 oz) whole kernel corn, drained
1 cup bottled thick and chunky salsa
5 or 6 skinless, boneless chicken breast halves (about 2 lbs)
1 cup shredded Cheddar cheese

In a 3-1/2- or 4-quart electric slow cooker, mix together the beans, corn, and 1/2 cup salsa. Top with the chicken breasts, then pour the remaining 1/2 cup salsa over the chicken. Cover and cook on high setting for 2-1/2 to 3 hours, or until the chicken is tender and white throughout; do notovercook or the chicken will toughen. Sprinkle cheese on top, cover, and cook until the cheese melts, about 5 minutes.

Cabbage Rice Casserole

1 lb. ground beef
1 small onion
1 medium head cabbage, chopped
1/2 c. regular white rice
1 can tomato soup
3/4 c. water

Season meat and brown; saute onions. Remove drippings. Put 1/2 of cabbage in casserole dish. Layer meat, rice and rest of cabbage. Pour soup and water over it all. Bake at
350 degrees for 1 hour.

In Sat. April 20th newsletter, Judy is looking for cornbread recipes. Here is my favorite and I rarely make any other one.

Sour Cream Cornbread

1 1/2 cups cornmeal
1/2 c flour
1 1/2 tsp. baking powder
1 scant tsp. baking soda
1/2 tsp. salt
1 c sour cream
1 - 15 oz can cream-style corn
3 eggs
6 tbsp. melted butter

Combine dry ingredients in a large mixing bowl. Whisk together the remaining ingredients. Combine mixtures, stirring until all ingredients are moistened. Spread in a greased and floured 9-inch baking pan. Bake at 375 for 35-40 min. Could add green chili’s if desired.

Red Lobsters Coconut Shrimp Pina Colada Dipping Sauce (Clone)

1/2 cup sour cream
1/4 cup pina colada mix
1/4 cup crushed pineapple (canned)
2 tablespoons granulated sugar

Prepare pina colada dipping sauce by combining all ingredients. Cover & chill

Pina Colada Dip recipe I have is:
1 cup sour cream
1 cup Pina Colada non alcoholic drink mix
1/4 cup crushed pineapple, drained
1 Tablespoon lemon juice

mix together , cover and put into refrigerator
My recipe says this is from Red Lobster's site but is no longer posted

Crockpot Recipes for One or Two

Crock-ette Smothered Steak
Serves 2

1/2 lb round or swiss steak, 3/4 thick
salt pepper
1 small onion, thinly sliced
1 8 oz can tomato sauce

Cut round steak in half and season with salt and pepper. Place onion slices in crock-ette. Place meat on top of onion. Pour tomato sauce over all. Cover and cook 8 to 10 hours.
A Crock-ette is a small crockpot ( 1-1/2 quart)

Crock-ette Pepper Steak
Makes 2 Servings

1 onion thinly sliced
1 green pepper thinly sliced
1/2 red pepper thinly sliced
1 1/2 pounds beef roast, sliced against the grain
1 tb Soy Sauce
1 tb Sesame oil
Salt and pepper to taste
1 tsp Brown Sugar
2 garlic cloves thinly sliced

Put the vegetables in the crock-ette. Add the meat and the seasonings. Cover and cook 8 to 10 hours.

Crock-ette Old Fashioned Bean Soup
Makes 2 servings

2/3 cup dry great northern beans...soak over night and then drain
2 cups water
1/4 cup chopped ham
salt and pepper to taste
2 tablespoons chopped celery leaves
1/2 cup chopped onion
1 small bay leaf

Put all ingredients in Crockette. Cover and cook 10-12 hours.

In the 4/16 newsletter Victoria H , requested recipes for lemon crunch pie. This probably is not exactly what she is trying to replicate, but thought I would send it in any way, as it is easy to make and delicious. You can substitute  a can of lemon pie filling for the pudding, if you prefer.

Lemon Crunch Pie

30 Cream filled lemon filled vanilla cookies, finely crushed
1/4 cup melted butter
2 (4 servings size) packages instant lemon pudding prepared according to package directions, but use 1/2 cup less milk.
1 8 ounce thawed dessert topping- Cool Whip
1/2 cup lemon drop candy finely crushed

Preheat oven to 350 degrees. In a medium bowl combine crushed cookies and butter melted. Spread evenly in bottom and up the sides of a deep dish pie plate. to make a crust. Bake 10 minutes, remove from oven and cool completely. Prepare lemon pudding and spread evenly in cooled pie crust. In large bowl combine thawed dessert topping and crushed candy. Spread evenly on top of lemon pudding. Cover pie with pie cover or plastic wrap and chill for at least 2 hours. To prevent the plastic from sticking to the top of the pie, you can insert a few toothpicks in the pie. letting them stick up to prevent the plastic from touching the topping. Remove toothpicks before serving.

Southern Corn Bread

1-1/2 cups yellow cornmeal
3/4 tsp. baking powder
1 tsp. salt
1-1/3 cups buttermilk
2 eggs
1/4 cup melted Crisco

Mix all dry ingredients and set aside. Beat eggs and add to buttermilk pour into cornmeal mixture and stir. Add shortening and beat again. Pour into hot greased heavy 10" skilet and baked at 450% for 25 to 30 mins. Or til done. We love this recipe and I make my dressing using it.
