Recipes Using Potato Chips

Sour Cream Potatoes

8 med. potatoes, cooked & diced
1 can cream of chicken soup
1-1/2 cups sour cream
1/4 cup melted margarine
2 tablespoon chopped onion
1-1/2 cups grated cheddar cheese
Salt & pepper
1 cup potato chips, crushed

Combine all of the above. Spread in a 9"x3" pan and top with potato chips and grated cheddar cheese. Bake at 350 degrees for 30 minutes.

Baked Barbecue Chicken

4 chicken breasts, halved
1 lg. bag of barbecue potato chips
1 stick butter

Melt the butter and coat the chicken well. Crush the bag of chips into small crumbs. Roll the chicken in the chips, covering thickly. Place in a shallow baking pan in the oven at 350° and bake for one hour.

Green Beans Dish

2 cans green beans (drained)
1 can of cream of mushroom soup
1/4 lb Velveeta cheese, cubed
1/2 cup crushed potato chips

Mix all ingredients except the potato chips. Place in a 2 qt baking (glass) dish. Microwave 15 minutes, stir, add potato chips on top and bake in the microwave for another 5 minutes.

Ham Casserole

2 C. cooked ham, cubed
1 can cream of mushroom soup
1/4 C. milk
1 C. celery, diced
1 C. cooked rice
3/4 C. mayonnaise
1 tsp. onion, grated
1 tsp. lemon juice
3 hard boiled eggs, sliced
1/2 tsp. salt
1/2 cup potato chips, crushed

Mix all ingredients together except topping and place in large casserole dish. Top with potato chips. Bake in 375° oven for 30 minutes.
Makes 4-6 servings

Oven Fried Fish

1 lb. perch fillets
1/4 cup milk
1 cup crushed potato chips
1/4 cup grated Parmesan cheese
1/4 tsp. dried thyme
1 tablespoons dry bread crumbs
2 Tbs. butter or margarine, melted

Cut fish into serving size pieces. Place milk in a shallow bowl. In another shallow bowl combine potato chips, parmesan cheese and thyme. Dip fish in milk, then coat with the potato chip mixture. Sprinkle a greased 8 inch square baking dish with bread crumbs. Place fish over crumbs; drizzle with butter. Bake uncovered in a 500 oven for 12-14 minutes or until fish flakes easily with a fork.
4 servings.

Cauliflower Casserole

1 can Cheddar cheese soup
1/3 cup milk
2 pkg. (10 ounce.) frozen cauliflower, thawed
1 cup crushed potato chips

Mix soup and milk, season to taste. Add cauliflower and potato chips. Put in 1 1/2 quart covered baking dish. Bake at 350 degrees for 25 minutes. Uncover and cook for 10 minutes more.
Makes 4-6 Servings

Creamed Corn Casserole

1 (14 ounce) can of cream style corn
1 egg, beaten
1 cup of shredded cheese
1 cup of crumbled potato chips

Mix together after it is done, add crumbled up potato chips. Bake at 350 degrees.

Potato Chip Baked Chicken

6 chicken breasts, boned
1 cup potato chips, crushed
1 stick butter
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic salt
1/2 tsp. onion salt
1/2 tsp. paprika
1 tsp. Worcestershire sauce

Preheat oven to 350 degrees. Grease low-sided baking dish. Melt butter and add all ingredients except chicken and potato chips. Dip chicken in butter then roll in potato chips. Place chicken in prepared pan and bake for 45 minutes or until tender.
Makes 6 servings

Spaghetti Casserole

1 (8 oz.) pkg. spaghetti
1 medium onion
4 whole cloves
2 tablespoons butter
1 (8 oz.) can tomato sauce
1/2 cup grated parmesan cheese
Cayenne pepper to taste
1 onion, grated
4 strips bacon, barely cooked
1/4 cup potato chips, crushed

Break spaghetti into 2 inch pieces. Cook with whole onion, stuck with cloves, in 2 1/2 quarts boiling salted water, until al dente. Drain. Remove onion, and butter noodles. Preheat oven to 350 degrees. Butter a baking dish and add alternate layers of spaghetti and tomato sauce, Sprinkling each layer with parmesan cheese, cayenne pepper and grated onion. Cover with strips of bacon and crumbs. Bake until crumbs are browned, about 20 minutes.
Serves 4.

Baked Fish

2 lbs. fish fillets (haddock)
1/2 cup Caesar salad dressing (creamy)
1 cup crushed potato chips
1/2 cup grated cheddar cheese

Dip fish in salad dressing. Place in greased pan. Combine chips and cheese. Sprinkle over fish. Bake at 450 degrees for 10 minutes.

Onion Casserole

6-8 lg. onions, sliced 1/4 inch thick, separate into rings
3 c. grated Cheddar cheese
1 cup crushed potato chips
1 can mushroom soup, diluted with 1/2 cup half and half or evaporated milk

Parboil onions until just tender. Drain. In deep casserole, place in layers of 1/3 of the onions, cheese, and potato chips. Do this twice. For the third layer, place onions. Cover with diluted soup. Top with rest of cheese and potato chips. Bake at 350 degrees for 25 minutes or until hot and bubbly.

Asparagus Casserole

1 tall can asparagus, drained
2 hard boiled eggs
1 sm. pkg. potato chips
1 can mushroom soup
1/2 lb. cheese
Salt and pepper to taste

Place a layer of asparagus in a casserole. Follow with 1 egg sliced, then 1/2 of the cheese then 1/2 of the mushroom soup. Sprinkle with salt and pepper. Repeat with the remaining ingredients. Crumble potato chips over the top. Bake in oven of 350 degrees until the cheese melts.
Makes 4-5 servings

Tomato Casserole

4 med. tomatoes, sliced 1/2 inch thick
1 c. grated Cheddar cheese
1/2 c. thinly sliced onion
3/4 tsp. salt
1/8 tsp. pepper
1 c. crushed potato chips

In a small casserole dish, arrange layer of tomato slices, cheese and onion. Two layers of each. Sprinkle each tomato layer with salt and pepper. Top with crushed chips. Bake 1 hour at 350 degrees.

Potato Chip Cookies

1 cup butter
1 cup granulated sugar
1 cup light brown sugar
4-1/2 oz. bag crushed potato chips
1 (12 oz.) bag peanut butter chips
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
2-1/2 cup flour

Cream butter, sugars, eggs and vanilla; beat well. Add baking soda and flour together. Add crushed potato chips and peanut butter chips. Bake at 350 degrees for 10-12 minutes.

Pecan Cookies

1 c. margarine
1 tsp. vanilla
1/2 c. chopped pecans
1/2 c. sugar
1/2 c. crushed potato chips
2 c. sifted flour

Combine all ingredients. Form into small balls. Place on ungreased cookie sheet. Press flat with tumbler dipped in sugar. Bake at 350 degrees for about 15 minutes or until lightly browned.

Potato Chip Cake

1 pound butter, melted
1 cup sugar
1 teaspoon vanilla
3 cups flour
2 cups crushed potato chips
1 cup chopped walnuts

Mix all ingredients until well blended. Grease and flour 9x13 inch pan, put cake mixture in pan. Chill 1 hour and bake in 350 degree oven for about 30 to 45 minutes.

This is another cake recipe that Marcie WI may want to try using her coconut rum. I also have a Bacardi rum chocolate layer cake recipe that I obtained from a friend, but have not made, if she would like it.

Bacardi Rum Cake

1 package (18.5 or 19 ounce) cake mix, yellow or white
1 small package (3 1/2 oz.) instant vanilla pudding (Do not make the pudding.)
1/2 cup Bacardi Rum
1/2 cup Water
1/2 cup Vegetable Cooking Oil
4- Eggs
1/2 cup Chopped Pecans

Grease and flour bundt pan or tube pan. Crumble nuts in bottom of cake pan or add to cake. Place cake mix and pudding mix in large mixing bowl. Add: rum, water, oil, and eggs. Mix for 2 minutes. Pour batter in bundt pan and Bake at 325º for 50 to 60 minutes. I like to mix my pecans in the cake and I use a cup.
Remove cake from oven and Immediately poke holes about 1 inch apart in cake almost to bottom. pour Hot Rum Glaze over cake, let cool in pan for 30 minutes, then remove to serving plate. Rum glaze recipe below.

NOTE: Hot Glaze will cause cake to settle, but don't be alarmed for it is delicious.

Hot Rum Glaze

1- cup sugar
1- stick butter (I use Parkway)
1/4- cup light Bacardi Rum
1/4- cup water

Place all ingredients in small saucepan. Boil for 2 - 3 minutes, pour over cake.

Note: You can also cool cake in pan for 10 minutes, then remove from pan and place on serving platter, poke holes in cake and pour or brush hot rum glaze over cake, which is how I prefer to do the glaze.

Hi Susie!
Glad to see that you are back. You were missed. Sorry to hear of your troubles with our ankle and your hip replacement, but you are certainly far better off having had them repaired. I have had three knee replacements and a hip as well, and I still not only get around, but I also dance at every opportunity.

I wish you the very best of luck with our new bionic part. They really work very well.

I hope to see more of you online now that you are up and running again.
