Mom's Spiced Tea

1 cup Tang
1/2 cup instant tea
1 teas cinnamon
3/4 cup sugar
1 pkg Wyler's lemonade mix
1/2 teas cloves

Mix well. Place several teaspoons of mixture in cup with boiling water.

Mincemeat Cookies

1 cup shortening (I use Crisco)
1 1/2 cups granulated sugar
3 large eggs
1 tsp vanilla (optional)
3 cups unsifted all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 (9 oz) pkg None Such Condensed Mincemeat, crumbled
Preheat oven to 375°. In a large mixer bowl, beat the shortening and sugar until fluffy. Add eggs; beat well. Add vanilla, if using and beat until well blended. Stir together the dry ingredients then gradually add to the shortening mixture. Mix well. Stir in the crumbled mincemeat, mixing well to incorporate the mincemeat throughout the dough. Drop by rounded teaspoon, 2 inches apart, onto a greased baking sheets. (I sprayed the cookie sheets with non-stick cooking spray.) Bake in the preheated oven for 8 to 10 minutes or until lightly browned. Cool. Frost if desired. ---- Cook's Note: Chopped walnuts could also be added at the time the mincemeat is added to the dough, if desired.

Nancylanders, especially those who like mincemeat pie. It's that time of year for me when the store shelves once again contain Mincemeat. This is a time tested recipe for mincemeat cookies. I'm sorry that I can't take credit for the recipe as it comes from the side of a 9 ounce box of None Such Mincemeat. I did however add 1 teaspoon of vanilla to the recipe and I leave it to you whether to use this optional ingredient.

Wild Rice With Cranberries

1 pkg (6 oz) white and wild rice mix
2-1/4 cups chicken broth
2 tbsp butter or margarine
1 large onion, sliced
2 tsp brown sugar
1/2 tsp ground allspice
1 cup dried cranberries
1 tsp orange zest
1/2 cup toasted pecans or pine nuts

Prepare rice according to package directions using chicken broth and excluding seasoning packet. Melt butter in skillet and add brown sugar and onion. Cook over medium heat until liquid is absorbed. Cook on low until onions caramelize, about 10 minutes. Add cranberries, allspice and zest. Cover and cook about 5 minutes until cranberries plump. Put rice in a serving bowl and add onion mixture and nuts. Serve hot. Six servings.

Sugared Cranberry Trail Mix

1 cup whole almonds
2 cups small pretzels
1 cup dried cranberries
1 egg white
1/2 cup sugar
1/2 tsp ground cinnamon
1/2 tsp salt

Preheat oven to 350 degrees. Spread almonds evenly on an ungreased baking sheet. Bake 7-8 minutes or until nuts are slightly darker in color. Cool completely on pan. Reduce oven temperature to 225 degrees. In a large bowl, combine nuts, pretzels and cranberries. In a small bowl, beat egg white until foamy. Add sugar and cinnamon. Pour over pretzel mixture; toss until well coated. Spread evenly on a greased baking sheet. Bake 1 hour, stirring every 15 minutes. Cool completely on pan. Store in an air-tight container.

Christmas Jam Cake Recipe

4 c. flour
2 tsp. cinnamon
2 tsp. nutmeg
1/2 tsp. salt
2 c. raisins
5 eggs
1 c. butter
2 c. brown sugar
2 c. jam
1 c. buttermilk
1 tsp. soda, dissolved in milk

Sift flour, cinnamon, nutmeg, and salt. Mix with raisins. Cream butter and add sugar. Add jam to this batter mixture. Add the flour mixture, alternating with buttermilk. When all flour and buttermilk have been added, add beaten eggs and soda dissolved in milk. Stir thoroughly.
Bake at 350 degrees for 45 minutes to 1 hour.

Ice with following

3 c. brown sugar
Butter the size of an egg
1 c. water
1 c. raisins
1 c. dates
2 c. English walnuts

Cheese Ball Recipe

2 pounds of cream cheese
1/2 C of 6 onion soup mix

Beat this up with the mixer and then divided into thirds. One third I added a small can of sliced black olives drained well and a small jar of chopped pimentos. Second third added about 6 T of crumbled blue cheese. Third third added 1/3 to 1/2 C crumbled cooked bacon and horseradish to taste. I packed them into 6 small dishes as I was using them for 2 different parties. Made enough cheese balls for 2 parties of about 8 people

Cranberry Cheese Ball Recipe

2 8-ounce packages cream cheese, softened
4 tablespoons frozen orange juice concentrate or milk
2 tablespoons sugar, optional
Zest 1 orange, optional
1/4 teaspoon cinnamon, optional
1/2 cup dry cranberries, chopped
1/2 cup pecans, chopped, can use walnuts

Cook dry cranberries in 1/2 cup water in the microwave for 1 minute, drain and cool. In mixing bowl, beat cream cheese, orange juice concentrate, sugar, orange peel and cinnamon on medium speed until fluffy. Chop cranberries and pecans and stir into cheese mixture. Chill. Shape into ball. Serve with crackers.

 Chow Mein Noodle Cookies

1 cup chocolate chips
1 cup butterscotch chips
1 cup chopped nuts
1 cup chow mein noodles

Melt chips in microwave. Mix in nuts and chow mein noodles. Spoon out, drop on waxed paper, cool.

Crock Pot Chocolate Clusters

2 pounds white almond bark
4 ounces bar German chocolate
1 pkg. semi-sweet chocolate chips (12 ounces)
24 ounces dry roasted peanuts

Put all ingredients in Crockpot; cover and cook on high for 1 hour. Do not stir. Turn Crockpot to low and stir every 15 minutes for 1 hour. Drop on waxed paper and let cool. Store in a tightly covered container.

Honey Roasted Almonds

2 c whole almonds
2 T soy sauce
2 T honey
1/2 t grated orange zest
1/2 t garlic powder
1/2 t ginger
2 t olive oil

Preheat oven 350*. Mix all ingredients in a medium bowl, tossing to completely cover nuts. Spread almonds in a single layer on a jellyroll pan and toast for 15 minutes-stirring twice during baking. Serve immediately or store airtight for up to 3 days. **You better double this one or you will be sorry!!!

Hash Brown Quiche Recipe

3-cups shredded frozen hash browns, thawed and drained
1/2-stick butter, melted
3 large eggs, beaten
1-cup Half and Half
3/4-cup, diced cooked ham
1/2-cup diced green onions
1-cup freshly shredded mild cheddar cheese
salt and freshly ground black pepper (to taste)

Preheat oven to 450F. Press the drained hash brown between paper towels to get as much moisture out of them as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into the late. Press then into the bottom and up the sides to form a crust. Bake for 25 minutes. During the last few minutes of the crust baking time combine the remaining ingredients. When the crust is ready pout the egg mixture over it and return to the oven. Lower the oven to 350E and bake an additional 30 minutes. The quiche will be light golden brown on top and puffed.

Onion Soup Potatoes

6 med. potatoes with skins on
1 pkg. Lipton onion soup
1/4 lb. butter or margarine
1 c. water

Slice potatoes in casserole and sprinkle with onion soup. Stir. Add butter and water. Bake at 350 degrees for 1 hour, uncovered.

Cajun Spiced Pecans

1 pound pecan halves
1/4 cup melted butter
1 tablespoon chili powder
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper

Combine all ingredients in slow cooker. Cover and cook on HIGH for 15 minutes. Turn to LOW and continue to cook, uncovered, stirring occasionally for 2 hours.

Transfer nuts to a baking sheet and cool completely.
