Extra Recipe Edition

At one time I had a recipe for a cake roll made with a gingerbread cake. Does anyone have a similar recipe to share? I would like to make one for Christmas.

Hi Nancy, feline assistants, all 'Landers, I have lost my recipe for the dry ingredients of "cake in a mug."

I would like to mix this up as small gifts for Christmas. The recipe called for an angel food cake mix, combined with another cake mix, and other dry ingredients.

This is a great recipe for a brunch or breakfast on Christmas or other holiday I am guessing you could use other flavors of pie filling, but have not yet tried using them.

Apple Stuffed French Toast Recipe

20 slices bread, French, White, Cinnamon or other favorite bread
8 eggs
2 cups half and half
2 cups milk
2 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg

Filling Ingredients:
16 ounces cream cheese
1 egg, beaten
1 tsp. vanilla
1 tsp. cinnamon
21 ounce can apple pie filling

Mix the first four Filling ingredients together until well combined. Fold in the apple pie filling. Spread cream cheese mixture over 10 slices of the bread and top with the other 10 slices, forming a sandwich.

Place bread sandwiches in a large baking pan that has been sprayed with non-stick spray.

Combine the eggs, half and half, milk, vanilla, cinnamon, and nutmeg. Beat until well mixed. Slowly pour the egg mixture over the top of the sandwiches until all the bread is soaked.

Cover and refrigerate overnight. Bake at 350 degrees covered for approximately 40 minutes. Then uncover and bake for an additional 20 minutes. Let stand 10 minutes before cutting and serving.

Sprinkle with confectioners sugar and toasted almonds or pecans. Serve with warm maple syrup, if desired.

Dill Pickle Dip Recipe

here is a favorite dip for the holidays: tastes like the pickle wraps but much faster!

1-1/2 blocks of cream cheese (12 oz.) softned
1 cup sour cream
1 Tbsp. garlic powder
3 packages of corned beef cut fine ( I use budding)
1-1/2 cups drained chopped dill pickles
mix well and chill

Serve with crackers!

Easy Sugar Cookie Recipe

Sugar Cookie
2 c. sugar
1 c. butter
1 tsp. vanilla
2 eggs
1 c. buttermilk
1 tsp. soda
2 tsp. baking powder
1 c. flour
1 tsp. salt

Put soda in milk, stir together baking powder, salt and 1 cup flour. Combine sugar, butter and vanilla. Cream until white. Add eggs and cream well. Add milk and 1 cup flour alternately. Add 4 cups of flour all at once, mix well. Let set 3 to 5 minutes. Roll small amounts 1/4 inch thick and cut with cookie cutter. Bake on ungreased cookie sheet at 350 degrees about 10 minutes. Do not overbake. Can be sprinkled with colored sugar or iced.

1 lb. powdered sugar
1 tsp. vanilla
1/2 stick margarine

Cream together. Add enough canned milk to make spreadable.

Chocolate M and M Cookies Recipe

2 c. flour
1 (3 1/2 oz.) box chocolate flavored instant pudding mix
1/2 tsp. soda
1 c. (2 sticks) butter, softened
1 c. brown sugar, firmly packed
2 eggs
1-1/2 c. M & M's
1 c. nuts, chopped (optional)

In small bowl, combine flour, pudding mix and baking soda. Set aside. In large bowl, combine butter and brown sugar. Beat until creamy and smooth. Beat in eggs. Gradually beat in flour mixture. Stir in candy and nuts. Drop slightly rounded tablespoonfuls onto ungreased baking sheet. Bake in 350 degree oven for about 12 minutes.

Fudge Cookies Recipe

1 can Eagle Brand milk
2 tsp. butter
6 oz. chocolate chips
1 c. flour
1 c. nuts
1 tsp. vanilla

Melt chocolate chips and butter on low heat. Stir and add Eagle Brand milk, flour, nuts and vanilla. Cool -- spoon by teaspoon on greased pan. Bake at 325 degrees for 10-12 minutes.
