Black Eyed Pea Soup

1 cup chopped onion
1 cup chopped green bell pepper
1 cup chopped celery
4 garlic cloves, minced
2 cups shelled fresh black-eyed peas or frozen black-eyed peas, thawed
1 1/2 cups water or vegetable stock
1/2 cup diced lean cooked ham
Salt to taste
1/4 teaspoon hot sauce or to taste
1/8 teaspoon black pepper
2 (14 1/2 oz.) cans beef broth
1 cup sliced fresh or frozen okra
1 cup seeded chopped tomato or canned diced tomatoes

Coat a large Dutch oven with cooking spray. Place pot over medium-high heat until hot. Add onion and next 3 ingredients, sauté 5 minutes or until tender. Add peas and next 6 ingredients, bring to a boil. Cover, reduce heat, and simmer 20 minutes or until peas are tender. Add okra and tomatoes, cook, uncovered, 20 minutes or until okra is tender. Yield: 4 servings (serving size 2 cups)
