Fluffy Rice Pudding













I wonder if this is the rice pudding recipe that Athena has been hoping to find. It is from the 60s or maybe even earlier, as I remember my mom and other relatives making it, when we were kids.

Fluffy Rice Pudding

1/2 cup rice, not instant
3 Cups whole milk
1 Cup Sweetened condensed milk, not evaporated milk
2/3 Cups sugar
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon - optional
3 Eggs separated
1 teaspoon cream of tartar
1 teaspoon vanilla extract - can use other flavors of extract
3/4 cups fruit- optional

In a double boiler or heavy bottom saucepan combine rice, milk, sweetened condensed milk sugar, salt, nutmeg and cinnamon. Cook over medium heat until the rice has absorbed most of the liquid, stirring frequently. Remove from heat, cover and cool slightly. Beat egg yolks and quickly stir in the rice mixture to prevent curdling. Return to heat and cook until the mixture coats the back of a silver spoon. Remove from heat and stir in vanilla extract and fruit, if using. Let cool.

Beat egg whites with cream of tartar until stiff peaks form, then stir in to cooled rice mixture. Spoon in to parfait glasses. Can add toasted coconut, chocolate curls, or nuts to top, if desired.
