Nancy's Kitchen - Tried and Tested Recipes
Overnight French Toast Casserole

Nancy I came across a recipe for a French Toast Casserole. It is called Overnight French Toast Casserole and I know that there are a lot of recipes for is but what I like about this recipe is that you can use any bread including raisin bread but no icing on it, hot dog buns, hamburger buns, any type of rolls leftover and just bread. I would not use Rye Bread or any seeded on top bread.

Overnight French Toast Casserole

1 stick or 1/2 cup butter, mieted
12 slices Texas toast or any bread item leftover
1 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup pecans, chopped, optional
1 teaspoon vanilla extract
5 eggs
1 1/2 cups milk

Melt butter and pour in a 9"x13" pan. Mix the brown sugar, cinnamon, nutmeg and nuts. Whisk eggs, milk and vanilla together.

Layer bottom of pan with half of the bread pieces then sprinkle half brown sugar mixture over the bread.

Next layer second half of bread. Pour egg mixture over the bread pieces, making sure all are covered evenly. Sprinkle remaining brown sugar mixture on top. Cover and refrigerate overnight.

In the morning remove from the refrigerator removing the foil and cove with new foil. Preheat oven to 350º bake the casserole for 30 minutes. Uncover and bake 15 more minutes so the French Toast is brown and set.
