Portuguese Bean Soup














~carol in SoCal was asking for a Portuguese Bean Soup recipe in a recent newsletter, and this is the recipe I got from a dear friend of mine years ago, and we think it is very tasty, so hope this is like the one she is looking for.

Portuguese Bean Soup

1 cup dried red beans
6 cups water
2 onions, sliced
1 clove garlic, minced
1/4 lb. salt pork, cut into thick slices
1/4 tsp. allspice
1 can (6 oz.) tomato paste
3 tsp. beef bouillon (or 3 cubes)
3 potatoes, peeled and cut into small bite-sized pieces

Soak beans all night in water to cover. Cook about 3 hours, or until tender. Drain off water. Brown salt pork. In crock pot, put the cooked beans, salt pork, 6 cups water and remaining ingredients. Cook on low for about 8 hours, or until vegetables are tender. Makes 6 to 8 servings.
