Chicken Rice Salad
This is a really
great summer salad.
1 cup uncooked regular rice
1 pkg. (10 oz.) frozen peas
1/2 cup chopped green
1 cup sliced radishes
cooked diced chicken
1/4 cup French
1/2 cup mayonnaise
1/2 tsp. curry powder
1/8 tsp. dry
Salt & pepper, to taste
Cook rice and chill for several
hours. Cook peas slightly and let cool.
In large bowl, mix together the rice,
peas, celery, green onion, radishes and
chicken. In separate bowl combine the
remaining ingredients and fold into rice
mixture, until well coated. Chill until
ready to serve.
