Peach Upside Down Cake

Peach Upside Down Cake

2 Cups (or 3) chopped peaches
1 Tablespoon Vegetable oil
1/2 Teaspoon (to 1 tsp.) cinnamon or nutmeg

1 Large egg
1/4 Cup Vegetable oil
2 Tablespoons Milk
1/2 Cup Unsweetened orange (or pineapple) juice
1-1/2 Cups Unbleached all purpose flour
1/2 Teaspoon Baking powder
1/2 Teaspoon Baking soda

Combine fruit, 1 tablespoon oil and cinnamon or nutmeg in bowl. Toss together. Spoon into oiled 8" square baking dish. Set aside. Beat together egg, 1/4 cup oil, milk and orange juice. Combine
flour, baking powder and baking soda. Stir into juice mixture and beat until smooth. Pour batter evenly over peaches and smooth top. Bake at 350 degrees F. for 30 minutes. Cool to just warm and turn out onto a serving dish. Serve plain or with ice cream or whipped cream.
