Wilted Spinach Salad











 



Wilted Spinach Salad
Serves 2

2 tablespoons bacon fat
2 tablespoons all purpose flour
1 small onion, minced
1 cup water
1/2 teaspoon powdered mustard
2 tablespoons vinegar
3/4 pound fresh spinach, cleaned, drained and chopped
salt and pepper to taste
crumbled bacon, optional

Melt bacon fat. Stir in flour and onion. Gradually stir in water, mustard, and vinegar. Cook over low heat, stirring constantly, until smooth and thickened. Pour over spinach. Mix well, and
season to taste. Sprinkle with crumbled bacon, if desired. Serves 2.
