Crockpot Baked Stuffed Apples recipe

ingredients:

6 medium tart red apples
1 cup light brown sugar
1/4 cup golden seedless raisins
1/4 cup soft butter
2 cups very hot water
3 tbs. orange juice-concentrate
cinnamon

ingredients:

Wash, core and stem apples, but don't peel them. Stand them in a buttered mold and stuff them with 2/3 cups brown sugar and the raisins. Fill the tops of the core cavities with butter and sprinkle the remaining sugar over the tops. Place mold in slow cooker and pour the hot water into the cooker. Sprinkle the orange juice over the apples. Cover and cook on low for
3-5 hours or until the apples are tender.

I've had this recipe forever and the original had a lot of oil! I used to mix this in the pan.

Wowie Cake recipe
6-8 Servings

ingredients:

1-1/2 cup All-purpose flour
1 cup sugar
1 tsp Salt
1 tsp Baking soda
3 Tbsp heaping tablespoons cocoa powder, About 1/4 Cup
6 Tbsp oil
1 tsp Vanilla
1 Tbsp vinegar
1 cup cold water

directions:

Note: This would also be good served with whipped cream or vanilla ice cream. A light frosting might be good too but I wouldn't use
anything heavy on this moist fluffy cake.

Preheat oven to 350 degrees. In a medium mixing bowl, mix all the dry ingredients together by hand. Add all the wet ingredients until well combined. Pour into a 8x8" pan which has been prepared with non stick spray. Bake for 30 minutes or until done. Serve warm or allow to cool and serve with a dusting of powdered sugar

Caramel Pumpkin Cheesecake Dip recipe
Yield: 8 Servings

ingredients:

2 (8 oz) cream cheese, softened
2 cups powdered sugar
1 cup canned pumpkin
1/4 cup sour cream
1-1/4 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 cup caramel sauce

directions:

[Note: Amazingly creamy cheesecake combines with pumpkin and caramel makes the perfect fall dip!

In a Kitchenaid or with a mixer, combine cream cheese and powdered sugar until frosting consistency. Add pumpkin, sour cream, cinnamon, nutmeg, and cloves. Mix until it is fully incorporated. Pour the caramel sauce on top and create a marble look by swirling with a knife.

Serve with graham crackers, cinnamon sugar pita chips, or gingersnaps.

I've evidently had it for a while cuz I don't know where I got it and I started putting the source down when I joined the Nancylanders. Hi Nancy, I lost my recipe for a hot chicken sandwich that was baked in the oven for 30 minutes. had cooked chicken shredded, cheese ect. I think it was a taste of home recipe. please send it in I would appreciate anyone helping me find this recipe.

Hi Nancy and all great cooks: This is really a delicious salmon recipe . Hope you like it . So Easy!!

Baked Dijon Salmon recipe

1/4 cup butter melted
3 Tblspns Dijon mustard ( I use whatever mustard is in the fridge)
1 1/2 Tblspn honey
1/4 cup dry bread crumbs
1/4 cup chopped pecans
4 Teaspn chopped fresh parsley (optional)
4 (4 0zs) salmon fillets ( usually just get about 1 lb salmon
salt & pepper to taste
lemon wedge for garnish

directions:

Preheat oven to 400 degrees F. In small bowl stir butter mustard and honey . In another bowl, mix bread crumbs, pecans and parsley . Brush salmon with honey mustard mixture and sprinkle the top of the salmon with bread crumb mixture . Bake 12 - 15 minutes or until it flakes easily with fork. Season with salt and pepper if desired . garnish with lemon I'm not much of a fish person but this recipe is really good !!!!!

This is a great treat for the fall or any time. You can substitute milk, including soy milk, for the yogurt, if you prefer. It makes a great afternoon snack for adults and kids. It, as well as other smoothies, could be a good option for the individual, who needed ideas for healthy after school snacks for her kids.

Pumpkin Smoothie
Makes 2 servings

ingredients:

1/2 cup pumpkin puree
1/2 of a very ripe banana - optional
3/4 cup fat free vanilla yogurt
1 Tablespoon honey or other sweetener of your choice
1/2 teaspoon pumpkin pie spice
1/4 teaspoon vanilla extract or other flavor
1 cup crushed ice

directions:

Place all ingredients in a blender and puree until smooth, making sure the ice is completely crushed.

Nutella is a favorite spread at our house, this is a great way to make your own and save some money.

Homemade Chocolate Hazelnut Spread (Homemade Nutella) recipe
adapted from the LA Times

ingredients:

2 cups raw hazelnuts
1/2 cup unsweetened good quality cocoa powder
1 cup powdered sugar
1/2 teaspoon vanilla
1/8 teaspoon salt
3 tablespoons hazelnut oil, more as needed

directions:

Preheat the oven to 400 degrees. Spread the hazelnuts evenly over a cookie sheet and roast until they darken and become aromatic, about 10 minutes. Transfer the hazelnuts to a damp towel and rub to remove the skins.

In a food processor fitted with a blade, grind the hazelnuts to a smooth butter, scraping the sides as needed. About fine minutes.

Add the cocoa, sugar, vanilla, salt and oil to the food processor and continue to process until well blended, about 1 minute. The finished spread should have the consistency of creamy peanut butter; if it is too dry, process in a little extra hazelnut oil until the desired consistency is achieved. Remove to a container, cover and refrigerate until needed. Allow the spread to come to room temperature before using, as it thickens considerably when refrigerated. It will keep for at least a week.

Mixing this up a day before and then baking it the next day is a treat. You are not in the kitchen the whole time. I fix this for holidays and it has always been a hit.

Chicken Poulet recipe

ingredients:

2 large chicken breasts, cooked and shredded
1 Cup Shredded Cheddar Cheese
1/2 C Mayo
1/4 C Green Onions
4 eggs
1 stick margarine
2 Cups Chicken Broth (many times I use the broth made from boiling the chicken breasts)
16 ounce pkg Pepperidge Farm corn bread stuffing mix
1 cup milk
1 cup water
1 can cream of mushroom soup
Sprinkling of salt
Melt stick of margarine in cup of water by heating in the microwave. Place stuffing mix in bowl. Pour water and margarine over and stir. Add 2 eggs and chicken broth, stir.

directions:

In separate bowl, combine shredded chicken, mayo, and onions. Stir well.

Place 1/2 of stuffing mix in bottom of a 9×13 pan. Top with all of chicken mixture. Dash salt over chicken. Top with remaining stuffing mix. Beat together remaining two eggs and milk. Pour over mixture in pan. Cover and place in refrigerator for at least eight hours.

Before baking, remove cover and spread cream of mushroom soup over top. Place in 350 oven, uncovered, and bake for an hour. Check to make sure it’s not soupy. If so, cook a little longer. Remove from oven and top with shredded cheese. Return for another five minutes, or until cheese is melted.

Garlic Roasted Cauliflower recipe

ingredients:

3 cups cauliflower florets
1/4 cup olive oil
1 tsp organic sea salt
1 tsp fresh milled black pepper
6 cloves minced garlic
1 Tbsp parsley

directions:

Preheat oven to 400 degrees Fahrenheit.

Chop florets into small pieces. Toss with olive oil, salt, pepper, garlic and parsley. Spread on a jelly roll pan and bake for 45-60 minutes, stirring every 15 minutes, until browned and crisp.

Makes 6, 1/2 cup servings. Store leftovers in the refrigerator, assuming there are leftovers. Which there likely won’t be.

Hi Nancy ~ In the Oct 2 newsletter, Jane Ann from Alabama submitted a recipe for Pecan Pie Muffins. In her text she stated they usually make 10 muffins but, later on she stated the recipe makes 24 muffins. The recipe sounds very interesting and I would very much like to make the muffins but, I would like to know is it 10 or is it 24?

Appreciate all the work you do in putting this newsletter out for all of us. Been a member for many years.

I made this for my women's club meeting last night, and everyone really did like it.

Crescent Apple Cake

ingredients:

1 can (8 oz.) refrigerated crescent roll dough
3 large cooking apples, peeled and each cut into 16 slices
3/4 cup sugar
1 tbsp. flour
1/2 tsp. cinnamon
1 tbsp. butter, softened

directions:

Heat oven to 350/ Separate roll dough into two large rectangles. Place in ungreased 9 inch square pan over bottom and 1/2 inch up sides to form crust: seal perforations. Arrange apple slices in 3 rows on crust. Combine sugar, flour, cinnamon and butter and sprinkle over apple slices. Bake at 350 for 40 minutes, or until apples are tender. Best served slightly warm with whipped cream or vanilla ice cream.

This delicious apple cake is very popular at potlucks and also our family dinners.

Awesome Apple Cake recipe

ingredients:

2 cups finely chopped apples
1 cup sugar
1 egg
1 cup flour
1/2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped nuts

directions:

Mix apples with sugar in mixing bowl until sugar dissolves. Stir in remaining ingredients and pour batter into a greased 9 inch square pan. Bake at 350 for about 35 minutes, or until toothpick comes out clean. Prepare topping.

Topping:
Combine 1/3 cup packed brown sugar, 1/3 cup granulated sugar, 2 tbsp. flour. Gradually add 2/3 cups water. Cook over medium heat until clear and thickened. Add 2 tbsp. butter and 1/2 tbsp. vanilla. Poke holes in top of cake with a meat fork and pour on topping. Cool some before serving. Wonderful topped with whipped cream.

newsletter site, so have been able to go back and look at the ones I missed, and now am able to post recipes again also.

Pumpkin Donut Balls recipe

ingredients:

1-1/2 cups sugar
1/4 cup cooking oil
2 eggs
1 cup cooked pumpkin
3-1/2 cups flour
4 tsp. baking powder
3/4 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. nutmeg
1/4 tsp. salt
1/2 cup evaporated milk
1 tsp. vanilla

directions:

Mix sugar, eggs, oil and pumpkin in large mixing bowl. combine flour, baking powder, spices and salt and add to pumpkin mixture alternately with milk. Mix in vanilla. Drop batter into hot oil and cook about 1-1/2 minutes on each side.
Drain and roll in powdered sugar or cinnamon-sugar.

Hello Everyone...
First I'd like to thank Nancy and whoever else may have been responsible for once again sending me these terrific daily recipes. For some reason they disappeared from my computer and no matter what or how hard I tried, nothing brought them back. I am responding here to GeeBee, for her quest for a good chili recipe, one that I have been working on over the years, and even won top prize at a chili cook-off where I work. I know it is a bit involved, but well worth the time and effort.

Jerry's Famous Chili

ingredients:

1 tbsp olive oil
1 tbsp butter
1 medium sweet onion, chopped
1 green pepper, chopped
1 or 2 cloves garlic
1 lbs ground beef (85%)
1 28 oz can plum tomatoes*
1 14 oz.can tomato sauce *
1 14 oz can fire roasted diced tomatoes*
2 tbsp chili powder (Penzey’s)*
2 tsp sugar
1 tsp salt (plus more to taste after cooked)
½ tsp. fresh cracked pepper
2 tbsp chopped fresh parsley
½ tsp oregano
1 bay leaf
1 can dark red kidney beans, drained and rinsed.
and…lastly about 2 tsp unsweetened cocoa

directions:

In a pot, sauté the onions and peppers in oil and butter until the onions are just translucent. Remove from pan and then add meat, cook until just brown, leaving in fairly large chunks. Drain off most of the fat, but keep a little. Mix the chili powder with about 2 or 3 tbsp. hot water.
Add the onions and peppers, and all the remaining ingredients except the beans into the pot. Stir in the chili powder. Bring to a slow boil, lower the heat and simmer for about an hour or until thick. When the chili is as thick as you like, add the beans and adjust seasoning if necessary.

*It is important to use good quality tomatoes and sauce here. I've tried many different brands and have found Hunts so far to be pretty good. Also, Penzey's medium hot chili powder is also just about the right seasoning for this, not too hot, but gives just the right spice and heat.

Jane Ann in Alabama, This sounds yummy, but I don't understand the instructions at the beginning, to split the loaf "diagonally." Do you mean horizontally? And the second time, when cutting into serving pieces, do you mean vertically?

I am not sure which recipe this refers to but think it might be the Onion Bread Recipe.


Great newsletter today; love the fall recipes. Does anyone have a recipe for toasted pumpkin seeds that you start in boiling salted water, then bake in oven. I had a recipe but lost it; this one softens and plumps the seeds and was very good recipe. Hope someone can help.

Mama Lane's Sweet Potato Pudding recipe
Yield: 6 Servings

ingredients:

1 cup Sugar
3 Tbsp Butter
1 cup Milk
1 Egg
2 cup Sweet Potatoes, Grated
1 tsp Vanilla

directions:

Note: I generally quadruple the recipe and use a large rectangular pan.

Put all ingredients together in a 5x9x2" baking dish. Bake in a 350 degree oven, 1 to 1 1/2 hours. Stir 2 or 3 times to keep from burning.
Bake until brown on top.
