Pumpkin Spice Cake recipe

ingredients:

1/2 c. shortening
1-1/3 c. sugar
2 eggs
1 c. canned or fresh pumpkin
2/3 c. buttermilk
1-3/4 c. sifted all-purpose flour
2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. allspice
1/4 tsp. ginger

directions:

Cream the shortening and sugar until fluffy. Add eggs, one at a time, beating well. Combine pumpkin and milk. Sift dry ingredients and spices; add to creamed mixture alternately with pumpkin, beating well. Bake at 350 degrees for 40 to 45 minutes in a greased and floured oblong baking pan.

Frost with: 1/2 cup butter (softened), 1 egg yolk, 2 teaspoons vanilla, and 3 cups sifted confectioners' sugar. Blend and beat at medium speed for 3 minutes before spreading on cooled cake.

I'm wondering if anyone in Nancyland has a pumpkin loaf cake recipe? I tried one from a different website and it looked great while cooking but when it was done and cooling, wasn't as tall as it should have been. I sliced it up and noticed it was sort of flat in the bottom part. Not much flavor either. So please, help!

This is a nice drink for cool fall days. If you don't have cheesecloth on hand, you can add the spices directly to the cider and remove them with a slotted spoon. You can use a crock pot or slow cooker to keep the mixture warm, if using for a party.

Hot Spiced Apple Cider recipe

ingredients:

2 quarts apple cider
1/3 c. lightly packed brown sugar or to taste
1 tsp. whole cloves
1 tsp. whole allspice
2 (3 inch) cinnamon sticks

1/4 cup rum if desired - Can substitute a few teaspoons of rum or vanilla flavoring for a non alcoholic version.

directions:

In the center of a 12" square of cheesecloth, place spices. Wrap tightly and tie securely with kitchen twine.

In large saucepan over low heat, bring cider and brown sugar to a simmer.

Add cheesecloth packet and cook 10-15 minutes. Stir in rum, if desired. Remove cloth packet. Ladle into mugs.

Here is another favorite recipe using butternut squash. You can adjust the spices and cheese to your taste. Cooked sausage or other meat can be added, if desired, as well as other vegetables. The roasted squash is also delicious without the pasta.

Butternut Squash with Pasta recipe

ingredients:

1 medium size butternut squash - about 2 pounds
1 coarsely medium chopped, sweet onion
Salt and pepper to taste
3 - 4 Tablespoons olive oil
8 ounces medium pasta of your choice
2 minced garlic cloves
1 teaspoon basil
1/2 cup shredded parmesan cheese, plus more for garnish - fresh is best

directions:

Heat oven to 375°.

Using a vegetable peeler, peel the squash. Scoop out seeds and cut into 1/2- to 1-inch cubes. Combine squash, chopped onion, garlic, basil, salt, pepper, and 3 to 4 tablespoons of olive oil. Toss to coat and spread out in a large jelly roll pan or roasting pan.

Roast for about 30 to 35 minutes, or until tender and lightly browned, turning about halfway through the roasting time.

Meanwhile, cook pasta as directed on the package; drain and rinse with cold water. Set aside.

Add the cooked and drained pasta to the roasted butternut squash. Put back on the heat and continue cooking stirring, until pasta and squash are hot. Taste and add salt and pepper, as needed. Toss with the 1/2 cup of shredded Parmesan cheese just before serving. Garnish with more Parmesan, if desired.
Serves 4 to 6.

Toasted Salted Pumpkin Seeds recipe

ingredients:

1 cup pumpkin seeds
3 cup water
1/4 cup salt

directions:

Soak pumpkin seeds in salt water overnight. Drain off salt water and spread seeds on a large cookie sheet. Bake in a 350 degrees oven for 15 minutes. Stir them, then bake 15 minutes longer or until golden brown.

I made the Mexican scramble, turkey sloppy joes, crumb topped gingerbread, apple cake with the sauce on top, and cherry casserole cake. All are fantastic. Thanks to Nancy for all the great recipes.

I have been trying to get some good fall pictures of my furry assistants.  Give Ditto a treat and he will pose for a picture, but you have to catch Little One asleep because it is the only time he slows down enough to get a picture.
Little One is helping me with the newsletter again tonight.  He is sleeping wrapped around the keyboard.  He is a cat this is not happy unless he is right next to me every second.

Pumpkin Upside Down Cake recipe

ingredients:

1 pkg. yellow cake mix
1 can (15 oz.) pumpkin
1/2 cup sugar
1 can sweetened condensed milk
2 eggs
2 tsp. pumpkin pie spice

directions:

Mix cake mix according to package direction and pour into a greased 9x13 inch baking pan. Beat together pumpkin, sugar, milk, eggs and spice. Pour over cake batter evenly. Bake at 350 for 40 minutes. Let stand for 5 minutes and invert onto a serving tray. When cold, cut into squares and top with whipped cream, or topping.

NOTE: If I'm taking this to a meeting, or a potluck, I frost it with the whipped cream (or topping) on the top and sides. If using whipped cream (which I prefer) I use a 1 pint beaten with a little powdered sugar and vanilla to flavor.

A tasty stick-to-your-ribs dish to serve on a cool fall day.

Cabbage Patch Stew recipe

ingredients:

1-1/2 lbs. lean ground beef
1 medium onion, diced
1/2 cup diced celery
1/4 cup diced green pepper
1 can (15 oz.) stewed or diced tomatoes
1 can tomato soup
2 cups water
1-1/2 cups coarsely shredded (or chopped) cabbage
Salt & pepper to taste
1 or 2 tsp. chili powder, to taste
1 tbsp. brown sugar

directions:

Brown hamburger with onion, celery and green pepper. Stir in remaining ingredients; heat to boiling and reduce heat to simmer. Cook 30 minutes, covered, until cabbage
is tender.

NOTE: I use the seasoned salt and pepper for this, but could
use regular.

This is one of our favorite apple desserts. We like it topped with a little whipped cream, or topping.

Apple Dessert recipe

ingredients:

Layered Apple Cake
2 large apples (or 3 smaller ones)
2 tbsp. sugar
2 tbsp. cinnamon (NOT tsp.)
1 cup cooking oil
4 eggs
2 cups sugar
1 tsp. vanilla
1/2 cup fresh-squeezed orange juice
1 tsp. salt
2 tsp. baking powder
3 cups flour

directions:

Mix apples with the 2 tbsp. sugar and and cinnamon. Set aside. Beat together the oil, eggs, 2 cups sugar, vanilla and orange juice with electric mixer on medium speed. Add flour, salt and baking powder and mix in on low speed. Layer half of the cake batter into a well greased and floured 10 inch tube pan. Layer apples over the top evenly and pour rest of batter over apples. Bake at 350 for 1 hour and 20 minutes, or until tests done. If top starts to get too dark, cover loosely with a piece of foil. Cool 20 minutes before removing from pan to cool.

Nancy, I realized after I sent in the recipe for the Layered Apple Cake today, that I forgot to say that the apples for the cake are to be thinly sliced. I don't want to confuse any of the Nancylanders.

Halloween Recipes 


Moist Pound Cake recipe

ingredients:

1 (18.25-ounce) package all butter cake mix
4 large eggs
3/4 cup vegetable oil
1/2 cup sugar
8 ounces (1 cup) sour cream
1 teaspoon vanilla extract

directions:

All ingredients should be at room temperature. Preheat oven to 350º. Combine cake mix, oil, sour cream and sugar. Add eggs one at a time until thoroughly mixed. Stir in vanilla. Spray (or grease) bundt pan and sugar coat the inside of pan (this creates the crisp crust found on the old fashioned pound cakes). Pour batter into prepared pan and bake for approximately 45 minutes or until cake test is done.

Nancy, I made this the other day for the first time and we loved it. I didn't have Chicken Tenders, so I took Boneless Chicken Breast and cut them in strips. I also made notes at the end to what I would do different. I would also say to adjust the portions to what you can eat in one meal. It was great the first night but the veggies did not reheat well.

Mediterranean Chicken with Orzo recipe

ingredients:

2-1/2 lbs. uncooked chicken breast tenders
2 cloves garlic, finely chopped
3/4 cup uncooked orzo
1 cup chicken broth
1/4 cup water
2 tsp. chopped fresh or 1/2 tsp. dried rosemary leaves
1 tsp. dried mint
1/4 tsp. salt
1 medium zucchini, cut lengthwise into fourths, then cut crosswise into slices (3/4 cup)
2 plum (Roma) tomatoes, cut into fourths and sliced (1 cup)
1/2 med. bell pepper, chopped (1/2 cup)

directions:

Heat 10-inch nonstick skillet over medium-high heat. Cook chicken in skillet about 5 minutes, stirring frequently, until brown.

Stir in garlic, pasta and broth. Heat to boiling; reduce heat. Cover and simmer about 8 minutes or until most of the liquid is absorbed.

Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer about 5 minutes, stirring once, until bell pepper is crisp-tender and pasta is tender.

Use Montreal Steak Seasoning on Chicken and add at least 1 cup of orzo. I also just used one can of chicken broth and no water. I also did not use dried mint.

Cream Cheese Cake Mix Cookies recipe

ingredients:

1 cake mix, any flavor
8 oz cheese, room temperature
1/4 cup butter, room temperature
1 large egg
1 tsp vanilla, optional -depending on flavor)
1 cup add-ins, (flavored Chips, candy, nuts, etc)

directions:

(Note: these are good and so easy. Use your imagination. I love the flavor the cream cheese gives it. I'm a chocolate chip fiend, so I used a Duncan Hines French Vanilla cake mix and a small package of chocolate chips.)

Preheat oven to 375 degrees. Cream together butter and cream cheese. Add egg and vanilla; mix until well blended. (I used a mixer for this part only.) Stir in cake mix a little at a time until it's all blended and then add any chips, candy or nuts, as you like. Spoon onto cookie sheet and bake for 10 minutes, until edges are brown.

In the 7 October Newsletter Susie Indy posted a recipe for Cheeseburger soup. Well, here's another version that I've had much success with over the years. Also I've included a second recipe for Hamburger Chowder that some Nancylanders might take a fancy to. Mr. Myron Drinkwater - Lake Forest, CA

This soup is insanely delicious! Made with fresh ingredients and topped with cubed Velveeta cheese, you will make it again and again!

Cheeseburger Soup recipe
Yield: 4 to 6 servings.

ingredients:

1 lb ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 tsp dried basil
1 tsp dried parsley flakes
4 Tbsp butter, divided
3 cups chicken broth
4 cups peeled and diced potatoes
1/4 cup all purpose flour
2 cups of Velveeta processed cheese, cubed
1 1/2 cups milk
3/4 tsp salt
1/4 tsp ground black pepper
1/4 cup sour cream

directions:

Brown the ground beef in a 3-quart saucepan. Drain and set aside. In the same saucepan add 1 tablespoon of butter and add the chopped onion, shredded carrots, diced celery, dried basil and parsley flakes. Saute until the vegetables are tender. Add the broth, potatoes and beef and bring to a boil. Reduce heat, cover and simmer for 10 to 12 minutes or until the potatoes are tender. In small skillet melt remaining butter and add the flour. Cook and stir for 3 to 5 minutes or until bubbly. Add to the soup and bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Stir in the cheese, milk, salt and pepper. Cook and stir until cheese melts. Remove from heat and blend in the sour cream.

Hamburger Chowder recipe
Yield: 6 servings.

ingredients:

3/4 cup diced onion
3/4 cup minced green bell pepper
2 Tbsp olive oil
1 1/2 lb ground beef
4 1/2 cups sliced potatoes
3 cups canned tomatoes, undrained
4 1/2 tsp salt
5 tsp all-purpose flour
3/4 tsp chili powder
1/2 cup cold water

directions:

Sauté the diced onion and pepper in olive oil. Add the ground beef and cook for 10 minutes. Drain. Cook the sliced potatoes in 3 cups water until tender. Add the canned tomatoes and salt to the sautéed onion, pepper and ground beef. Bring slowly to a boil over medium-low heat. Combine the flour and cold water and chili powder and pour into the chowder mixture. Stir until thickened. Simmer over low heat for 10 minutes, stirring frequently.

Cook's Note: If the chowder is thicker than desired, slowly add beef stock/broth, vegetable stock/broth or water until the desired thickness is achieved. Remember to stir constantly while adding the liquid.

Individual Chicken Pot Pies

ingredients:

Chicken Mixture
1 tablespoon vegetable oil
1 lb boneless skinless chicken breasts, cut into bite-size pieces
1 medium onion, chopped (1/2 cup)
1/2 cup chicken broth
1 cup frozen peas and carrots
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground thyme
1 cup shredded Cheddar cheese (4 oz)
Baking Mixture
1/2 cup Original Bisquick® mix
1/2 cup milk
2 eggs

directions:

Heat oven to 375°F
First, start with Bisquick baking mix, milk and eggs .Combine and start with a little less than a tablespoon in each greased muffin cup or use muffin liner.

Next add your filling .. Add about 1/4 cup of the mixture to each cup. Finally, top it off with one more tablespoon of the Bisquick mixture. Bake for 25-30 minutes then pop them out of the pan.
