Grilled Shrimp Kebabs

1 pound raw shrimp, peeled and deveined
2 tablespoons soy sauce
2 cloves garlic, minced
1 tablespoon rice wine vinegar
1 tablespoon sesame oil
1/4 teaspoon pepper flakes, optional

Place shrimp in a resealable plastic bag. Combine remaining ingredients in a small bowl and pour over shrimp. Seal bag and place in refrigerator for 20-30 minutes. Preheat grill for medium heat. Remove shrimp from bag and discard marinade. Thread shrimp onto skewers and place on grill. Cook for 4-6 minutes. Remove from heat and serve.

Cheeseburger Quiche

1/2 lb. lean ground beef
1/3 cup chopped onion
2 eggs
1/2 cup mayonnaise
1/2 cup half and half
6 oz grated cheddar cheese
4 oz mushrooms – sliced
salt and pepper

Brown ground beef and onion. Drain. Add mushrooms and cook through. Beat eggs and mix in mayonnaise, half and half, cheese and seasoning. Put beef mixture in sprayed pie pan. Pour egg mixture over. Bake at 350 for 45 minutes. Let stand 10 minutes before cutting.

This is my kind of recipe. Only 4 ingredients and look awfully easy to make. Hope you all enjoy them.

7 UP Biscuits

4 cups Bisquick
1 cup sour cream
1 cup 7-up
1/2 cup melted butter

Mix Bisquick, sour cream and 7 up. Dough will be very soft - don't worry. Knead and fold dough until coated with your baking mix. Pat dough out and cut biscuits using a round biscuit / cookie cutter. Melt butter in bottom of cookie sheet pan or 9x13 casserole dish. Place biscuits on top of melted butter and bake @ 425 degrees for 12-15 minutes or until brown.

Good morning Nancy and all Landers,
Here is my Taco Soup recipe that a good cook at our local restaurant was kind enough to share with me. This soup freezes well.

Taco Soup

1 pound hamburger, browned and drained
1 large onion, chopped and cooked with the beef
2 (15 oz) cans either dark or light kidney beans-don't drain
1 (15 oz) can whole kernel corn, don't drain
1(15 oz) can crushed tomatoes-don't drain
1 packet taco seasoning mix( I buy big container of Taco mix at Sam's so I use 3 Tbsp. of this)
1 packet ranch dressing mix-use dry
1 1/2 cups water

Mix all ingredients in large kettle and simmer for 1 hour-stirring as needed. You can also add celery and green peppers that you have chopped- however much you want. The generic brand of taco mix and ranch dressing mix works just fine. Enjoy

I have looked for Breyers ice cream but they don't have it at my local store, so I will wait until I go to Walmart for some. Also will look for something to make ice cream in.

My sister, sent me this recipe, So I am making some Banana Ice cream tonight.
Take fully ripe Bananas, slice them like coins, and freeze. When frozen hard place in a blender, and blend until completely creamy and smooth. (At the freezing stage now.)

Dark Chocolate Banana Ice Cream
makes 2 servings

1-1/2 peeled medium bananas, sliced into coins and frozen until solid
3 tablespoons unsweetened cocoa powder
2 tablespoons cream
1/2 teaspoon vanilla extract

Blend bananas in food processor until they are the consistency of soft serve ice cream. Blend in cocoa powder, cream, and vanilla.

I like patties when I cook, so much easier to handle and cook. I am on the Atkins diet (down 60+ pounds now) and I can't eat potato patties, so I present my version of:

Spaghetti Squash Patties

Spaghetti Squash
Egg Beaters, or Egg whites.
Bacon grease for Frying

Put the Spaghetti Squash in a bowl, size and shape to determine the patty, about 3/4 inch thick. And add some egg whites, stirring as you do so. Just enough to wet the squash. But not dripping wet. Compress to remove excess egg.
Dump gently into the frying pan, reshape as necessary.

Watch the underside of the patty, when it starts to brown, gently flip it over, might have to use fingers or a spatula on the top to help hold the shape. Reshape if necessary.
Then fry them until the egg is set, and the bottom starts to brown, and serve hot.
I prefer Bacon Grease for the frying.

Spaghetti Squash are difficult to form into a shape, and the small amount of egg white holds them together, and the egg taste is not objectionable.

I often use a BBQ rub or marinade on the squash as I am cooking them or some green chili mixed in with the squash.
Done this way, they will hold there shape a lot better.

For AK in KA wanting dessert suggestions for her upcoming event, Dirt Pudding, also known as Oreo Pudding, is always a huge hit and often requested when I am making a dessert for a crowd. I have never had leftovers. I am assuming you have this recipe, so have not sent it with this post. Peanut Butter Stripe delight was submitted by Judy Alaska in the 3/12 newsletter, which would also be a delicious choice, if your guests like both Oreos and peanut butter. these recipes are also big hit's easy to make and were extremely popular in the 70s and 80s. The second one can also be made using Twinkies, now that they are again being sold.

Using Graham Cracker Crust

2 c. crushed graham crackers
1/2 stick butter, melted

Mix together and spread in 9x13 pan. Bake at 350 degrees for 10 minutes.

2nd Layer:
1 c. powdered sugar
8 oz. cream cheese
8 oz. Cool Whip

3rd Layer:
1 (6 oz.) instant chocolate pudding
1 (6 oz.) instant vanilla pudding
3 c. cold milk

4th Layer:
8 oz. Cool Whip
Shaved Hershey bar

Crust: Mix and pat into 9"x13" pan, bake at 350 degrees for 10 - 15 minutes. Cool.

Beat 2nd layer until fluffy, spread on cool crust. Whip 3rd layer and spread over 2nd layer. Top with 4th layer. Refrigerate.

Holy Moly Cow Cake sometimes known as Damien Cake

1 box chocolate cake mix - 2 layer size
1 jar caramel syrup or hot fudge sauce
1 can sweetened condensed milk
4 Butterfinger candy bars (2.1 oz each, crushed)or candy bar of your choice
1 container (12 oz) frozen whipped topping
1 pkg (8 oz) cream cheese at room temp

Prepare cake as directed on package. Bake in 13x9 inch pan. When cake is done and still hot, poke holes in it. Pour condensed milk over cake. Then pour caramel syrup. Top with half the crushed candy bar pieces.

Put the whipped topping and cream cheese in a bowl and mix with an electric mixer until smooth and combined. Spread the cream cheese icing over the top of the cake. Then sprinkle the remaining candy pieces over the top. Refrigerate for 20 minutes (or longer) before cutting.

Bacon and Roasted Brussels Sprouts recipe

3 cloves of garlic
1/4 pound of bacon
1 pound of Brussels sprouts

1 Cut bacon into 1” wide strips. I used apple-smoked bacon for another burst of flavor.
2 Chop off the stalks of each Brussels sprout. Cut each sprout in half
3 In an oven preheated to 400 degrees, roast the bacon for 10-15 minutes.
4 Remove bacon from the oven and add the sprouts. Chop garlic and mix in with Brussels sprouts and bacon mixture.
5 Roast everything for another 20 minutes or until bacon is fully cooked.
6 Pour into bowl and serve hot.

Crock Pot Chili Verde

1 Onion, chopped
1 Sweet Red Pepper, chopped
1 Garlic Clove, minced
1 Tablespoon Olive Oil
1 4oz. Can Green Chiles, diced
7 Tomatillos, chopped
2 lb Pork, fat trimmed, and cubed
2 Teaspoons Dried Oregano
1 Teaspoon Dried Cumin
1 Teaspoon Red Pepper Flakes
1 Teaspoon Dried Cilantro
1/2 Cup Beer

Sauté Onion, Red Pepper, and Garlic in Olive Oil. Place all ingredients in crock pot and cook on low for 8 hours. Make Burritos or use as dip.

Sour Cream Apple Pie

One 9"' pie crust
1/3 cup flour
Apples to fill it heaping full
2/3 cup cream -any kind- I use sour cream
I cup dark brown sugar
3/4 tsp. cinnamon
3 Tbsp. Butter
2 to 3 tsp. Cider vinegar to taste

Mix butter ,sugar ,flour into crumbs. Sprinkle 1/4 into bottom of shell. Put in apples and heap them in the pie. Sprinkle apples with cider vinegar. Mi x 1/2 remaining crumbs with cream and pour mixture over apples. Finally , mix the remaining 1/4 crumbs with cinnamon and sprinkle on top. Bake in a 425' oven for 10 min. until the crust browns slightly and then reduce to 350 ' for another 30 min. Serve with ice cream.
