What Not to Freeze

Freezers are wonderful inventions. They save us time and money. How many times do we head for the freezer when it's time to think about a meal? And for many of us, the freezer houses much of our emergency supply of food.

But some things freeze better than others. We thought we would give you a partial listing of things that don't freeze well.

Fried foods (especially deep fried foods): They taste stale

Gravies and sauces with wheat in them: They tend to separate.

High water content vegetables (lettuce, tomatoes, celery, etc.): They get limp.

Raw fruit: They turn dark or get mushy unless blanched.

Potatoes: They get grainy and soft.

Cooked pasta (unless very firm): Tends to get soft and mushy.

Crumb toppings on casseroles: They tend to get soggy.

Soft cake frostings: They tend to get tacky.

Sage: It tends to get bitter.

Cloves: It tends to get sharper in the freezer.

Garlic: The flavor tends to get stronger when frozen.

Salt: It tends to loose savor when frozen.

Onions: They tend to loose their flavor.

Green peppers: They tend to get stronger tasting when frozen

Artificial sweeteners: they tend to lose their effectiveness once frozen.

Most spices and many extracts are altered by freezing, some getting stronger and some losing flavor. The longer they are stored, the more pronounced the change.

Nancy and friends I am back. It has been a long time but I have made it. In July I had a ganglion cyst removed from my ankle area and had a hip replacement done at the same time. Yes, the day of the operations I was up walking around. You can walk on your feet even when you have a cyst removed.

I am going to post a recipe that I like and have made often because I have never been able to make stuffed cabbage. This is good and so easy.

unstuffed cabbage recipe

ingredients:

1 cup long grain white rice, uncooked
1 (14 oz.) can chicken broth, I use stock better taste
6 cups green cabbage, chopped
1 lb. ground chuck beef (80% lean)
1 cup frozen chopped onions
1 (14.5 oz.) can stewed tomatoes, undrained
1 (8 oz) can tomato sauce
2 teaspoons sugar, I don't use
1/4 teaspoon grind black pepper

instructions:

Place rice and chicken broth/stock in a 3 quart pan. Bring to a boil over medium heat, stir. Place cabbage on top , DO NOT stir. Cover, reduce heat to medium low. Cook 15 minutes or until rice and cabbage are tender. Meanwhile cook beef and onion in large skillet over medium high heat 5 minutes or until beef is crumbled and no larger pink, stirring occasionally. Drain. Add undrained tomatoes, tomato sauce, sugar if using and pepper to meat. Break up tomatoes with spoon. Reduce heat to medium low, simmer about 10 minutes. When rice mixture is done add to skillet toss together.

popcorn candy clusters recipe

ingredients:

1 cup freshly air popped popcorn
1 cup (8 oz.) milk chocolate chips
1 cup peanuts (shake salt off in a colander)
In a saucepan, melt chocolate chips on lowest heat.

instructions:

Add popcorn and nuts, and then stir until they are well coated.
Drop by ice cream scoop onto cookie sheets covered with wax paper and refrigerate until firm.

Note: Butterscotch chips with pecans and popcorn is extra YUMMY! The pecans should be roasted in the oven for about 12 minutes.

stuffed zucchini recipe

ingredients: 

1- 1/2 pound small zucchini
1 -1/2 cup fresh bread crumbs
1/2 cup grated processed American cheese
1/4 cup minced onions
1 tablespoons chopped parsley
1 -1/4 teaspoon salt
1/8 cup black pepper
2 eggs, beaten
2 tablespoons butter or margarine
1/4 cup grated processed American cheese

instructions:

Scrub zucchini well. Cut off ends; do not peel. Cook whole with 1 teaspoon salt in 1 inch boiling water, covered about 5 to 7 minutes. Start heating oven to 350°

Cut zucchini in halves lengthwise. With tip of spoon, carefully remove flesh from shells. Chop into small pieces, then combine with bread crumbs and rest of ingredients except butter and 1/4 cup cheese. Pile mixture lightly into zucchini shells, dot with butter. Sprinkle with 1/4 cup grated cheese. Arrange shells in large baking pan. Bake 30 minutes or until brown on top. Makes 4 servings. Can be make ahead and frozen until needed.

Baked Beans

ingredients:

1 (16oz.) can Campbell's pork and beans
1 Tablespoon mustard
2 Tablespoons ketchup
1 medium onion, diced
1 Tablespoon Worcestershire sauce
4 strips turkey bacon, partially cooked and cut into small pieces (can also use regular bacon)
2 Tablespoons brown sugar

instructions:

Combine and mix all ingredients into a mixing bowl. Place into a casserole dish. Bake at 325° for 45 to 60 minutes. Serves 4 to 6 people.

Parmesan Crusted Chicken recipe

ingredients: 

1/2 cup of mayonnaise (may use light)
1/4 cup of Parmesan Cheese
4 chicken breast halves, boneless, skinless
4 tsp. Italian Seasoned bread crumbs

instructions:

In medium bowl, combine mayonnaise and cheese. On baking sheet arrange chicken and top with mayonnaise/cheese mixture and sprinkle on break crumbs. Bake at 425 degrees for 20 minutes or until chicken is thoroughly done.

Here's an easy low-carb recipe that my husband and I like for tasty quick suppers. I usually mix it in my Magic Bullet blender. Speaking of my blender, does anyone have TNT recipes for a peach smoothie and a really good hummus recipe?

Chili Relleno Casserole recipe

ingredients: 

2 large fresh poblano peppers (they are mild, not hot and bell
peppers can be used instead)
1 cup shredded Pepper Jack Cheese
3 eggs
1/4 cup milk
1/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon cayenne pepper
1/8 teaspoon salt
1/2 cup additional Pepper Jack Cheese

instructions:

Preheat oven to 450 degrees. Grease a 2-quart baking dish and set aside. Quarter peppers and remove stems, seeds and veins. Immerse peppers in boiling water for three minutes, drain well and place in the bottom of baking dish and cover with one cup of cheese. In a separate bowl, beat eggs and milk well. Add flour, baking powder, cayenne and salt. Beat until smooth and pour over peppers and cheese.

Bake uncovered for 15 minutes or until knife inserted in center comes out clean. Remove from oven and cover with remaining cheese and let sit for five minutes or until cheese is melted. Delicious served with picante sauce and sour cream.

Chicken Breast Divan recipe

ingredients:

1/2 c. margarine
4 boned chicken breasts
1 tsp. salt
1/2 tsp. paprika
Fresh broccoli
1 can mushroom soup
1/2 c. mayonnaise
2 tsp. lemon juice
2 tsp. Parmesan cheese

instructions:

Melt margarine. Brown chicken that has been covered with salt and paprika. Place broccoli in greased pan. Top with chicken. Combine soup, mayo, lemon juice. Spread on chicken. Bake at 350 degrees for 20 to 25 minutes. Sprinkle cheese, place under broiler until lightly browned.

Microwave Mug Banana Bread recipe
1 Servings

ingredients:

3 tbsp + 1 tsp all-purpose flour
1 pkt or 12 drops stevia, or Other Sweetener Equal To 2 Tsp Sugar
2 Tbsp brown sugar
1/8 tsp salt
1/8 tsp baking powder
1/8 tsp baking soda
1 egg
1/4 tsp vanilla extract
1 Tbsp vegetable oil
1 Tbsp milk
half a banana, mashed
cinnamon, for sprinkling-(optional)

instructions:

[Note: I added chopped walnuts and also used 1/2 ww & 1/2 all purpose flour. My microwave isn't new so I would add 10 seconds the
next time]

In a large microwaveable mug lightly misted with non-stick spray, blend flour, sugars, salt, baking powder & baking soda. Add egg & mix until all the dry ingredients are incorporated. Stir in vanilla, oil & milk, then mashed banana. Microwave 1-1/2 minutes to 3 minutes, depending on
your microwave.

*You can stop it & peek in the door at 90 seconds to check if its done - it will probably rise over the top of the mug as it's heating, & if it's still runny it's not done yet. But be careful not to overcook! I have a pretty bad microwave, and mine took about 2 1/2 minutes.

Microwave Pudding recipe
1 Servings

ingredients: 

1/2 cup Sugar
2 Tsp Cornstarch
2 Tbsp Flour
1/4 tsp Salt
2 cup Whole Milk
2 Eggs, Beaten
1 tsp Vanilla
2 Tbsp Butter

instructions:

Combine sugar, cornstarch, flour, salt and add 2 cups milk. Microwave 7 to 10 minutes on HI. Stir. HI for 3 minutes and Stir. HI for 3 minutes and Stir. Add 2 beaten eggs to milk. Add 1 tsp vanilla, 2 tablespoons butter and microwave on HI for 1 to 2 more minutes.

Homemade Ice Cream Recipes


This question is for Judy(in Alaska) in N/L of 9/11/13. What temp do you bake the Glorified Gingerbread?? I assume it is 350 degrees, but don’t want to make without knowing for sure. By the way Judy, I appreciate all the really good recipes you send in. Also, thanks again Nancy for allowing us to share in the newsletter. I love being a Nancylander!!!!!

Lime Jello Avocado Salad recipe

ingredients: 

1 pkg. lime Jello
1 cup boiling water
1 cup mayonnaise
1 tbsp. onion juice
2 tsp. Worcestershire sauce
1 c. mashed avocado
1 c. sour cream

instructions:

Dissolve Jello in boiling water. Set until thickens slightly. Add remaining ingredients, pour in mold. Let set 6 hours.

Frozen Banana Milk Shake recipe

ingredients: 

1 lg. ripe firm banana
1 c. skim milk
Non-calorie sweetener equal to 2 tbsp. sugar
Dash of nutmeg

instructions:

Peel banana, slice into large chunks. Freeze. When frozen, combine in blender with 1 cup skim milk, non-calorie sweetener equal to 2 tablespoons sugar and dash of nutmeg. Blend just until mixture is thick and frosty. Serve immediately.
Makes 1 servings.

Snicker Pie recipe

ingredients:

12oz. fat free frozen vanilla yogurt
1 small box sugar free - instant chocolate pudding
1/4 cup chunky peanut butter
1 cup cool whip free
3 ozs. grape nuts cereal

instructions:
Mix all ingredients together and pour into 8" pie pan and freeze.

Hi Nancy,
I have a request to make to all the good cooks in this group. When I was a child, my mom would bake apples. She would put red hot candies in them and something else which I can't remember what it was or never knew. Could someone please help me if you know how to make this recipe.

Susie's Quick Vegetable Soup recipe

ingredients:

1 lb. stew beef
1/4 cup oil
2 potatoes, cubed
1-1/2 cups vegetable juice
1 cup beef broth
1, 8 oz., can diced tomatoes, drain juice
1, 16 oz., bag frozen mixed vegetables, green beans, corn, peas & etc
1/2 medium onion, chopped
salt & pepper to taste
1 bay leaf
1/4 to 1/2 teaspoon thyme, dried & crush

instructions:

In a large pot add the oil and stew beef brown then add the onion cooking until transparent. Add the beef broth, potatoes, vegetable juice, diced tomatoes, frozen vegetables, salt & pepper, bay leaf and crushed thyme. Cook this for about an hours to no longer than 1-1/2 hours. You can also make this in the crock pot. Brown the beef adding it to the crock pot. Then add as above. Cook this on low for 8 hours. When you are ready to serve this remove the bay leaf.
Serves 4 to 6.

Ham Stir Fry recipe

ingredients: 

1 to 2 cups match stick ham, leftovers
1 medium onion quartered
1 cup tiny carrots, cut lengthwise in half
1 chunk green pepper
2 to 4 tablespoons soy sauce lite
4 tablespoons peanut butter
1/4 to 1/3 cup pineapple juice
1/2 to 1 cup chunk pineapple
1 to 2 tablespoons peanut oil

instructions:

Put the peanut oil in the frying pan and let it get hot. Then put in the carrots and cook about 5 minutes, then add the onion pieces, green pepper pieces and let cook until just crisp. Then push the vegetables to one side and make sure they don't burn and add the ham and brown slightly and pass to the side. In a small bowl mix the pineapple juice, peanut butter and soy sauce well and add the sauce to the meat and vegetable mixture and you might have to mix corn starch and a little water to add to the sauce. At the same time add the pineapple pieces so they get warm.
Serves 2 to 4.

Seasoned Okra recipe

ingredients:

1 bag of frozen or fresh okra (approx 4 cups)
(I use the cut okra)
Lawry's Season Salt

instructions:

Spread the frozen or fresh okra on a cookie sheet. Sprinkle season salt liberally on okra. Put in oven @ 350° for 15 minutes.
Really Good and not fattening!

Banana Cake recipe

ingredients: 

6 Bananas
2 cups sugar
4 egg yolks
1 tsp. Vanilla
4 tsp. baking powder
1 tsp. baking soda
4 cups flour
3/4 cup vegetable oil (I use Canola)
3/4 cup lukewarm water
4 egg whites, beaten stiff

instructions:

Mash bananas; add sugar, egg yolks and vanilla. Sift together baking powder, baking soda, and flour and add to first mixture. Add oil and water. Fold in egg whites. Pour into a 9"x13" baking pan, sprayed with Pam. Bake 350 degrees for one hour or until a pick comes out clean. Be careful not to overbake.

Dilled Cucumbers recipe

ingredients:

2 medium cucumbers, peeled and sliced
1/2 tsp. salt
1/2 c. sour cream
1 TBS lemon juice
2 TBS green onion, chopped
1/8 tsp. pepper
1/4 tsp sugar
1/2 tsp dried dill weed

instructions:

In small bowl, toss cucumbers with salt. Allow to stand for 10 minutes. Meanwhile, combine all remaining ingredients. Drain cucumbers and combine with sour cream mixture. Chill until ready to serve.
