Here are some of our favorite recipes for using leftover ham, if we have any after a big family dinner. Ham is hugely popular with our extended family and preparing one always brings back wonderful memories of my dad. The third recipe is from a 2010 newsletter and was shared by Dot H in Mississippi. It is delicious with ham, shrimp or even without any meat or seafood.

Ham Rice Salad Recipe

10 oz. pkg. frozen peas, cooked and drained
2 cups cooked rice
1 Tablespoon minced onion
¾ cup mayonnaise or Miracle Whip
3 Tablespoons sweet pickle or. chopped dill pickle (your choice)
1 cup chopped ham
1 cup shredded cheddar or Swiss cheese
1 Cup cherry tomatoes (optional)

Xook peas and rice according to package directions. Drain peas thoroughly. In a large bowl stir the peas, onions, pickles, ham, cheese and Miracle Whip into the rice. Refrigerate until ready to serve. If adding tomatoes and you cut them up, do this right before serving.
Serves 6 - 8.

Fiesta Salad Using Chicken, Turkey or Ham Recipe

6 cups torn Romaine lettuce
2 cups cubed up cooked turkey (or rotisserie chicken)- can substitute cooked turkey or ham

6 slices bacon-cooked & crumbled
15 oz can black beans-rinsed & drained
1 cup cherry tomatoes-halved
1/4 cup chopped red onion
1/2 cup mayonnaise
1/2 cup salsa
4 oz sliced black olives-drained
6 oz Colby Jack cheese-shredded
Tortilla chips

Combine lettuce and next 5 ingredients in a large bowl. Stir together mayonnaise and salsa until blended. Toss with meat mix. Plate up salad and sprinkle with olives and cheese. Serve with chips.

How much ham do I need to buy for 20 people?  I am having 20 friends over for Easter Sunday meal. I don't want to buy too much ham and have it as leftovers for a long time.  Can someone help me determine how much ham to buy per person.

Eggplant Jambalaya Recipe

1/4 cup olive oil
1 yellow onion, finely chopped
1 red or yellow pepper, finely chopped
2 celery stalks, finely chopped
1/2 lb. ham cut into 1/2-inch cubes or 1/2 lb. of shrimp, cleaned
3 cloves of garlic, minced
2 large bay leaves
1-1/2 teaspoons minced fresh oregano
1 teaspoon minced fresh thyme
1/4 teaspoon cayenne pepper
1/2 cup green onions, including tops, finely chopped
1 small eggplant (about a half lb.) peeled and cut into 1/2-inch cubes
1 14 ounce can diced tomatoes, with juice
1-1/2 cups chicken or vegetable stock
1 cup uncooked long-grain white rice
salt and pepper to taste

In a deep saute pan with a tight fitting lid, warm the oil over medium heat. Add the yellow, bell pepper, celery, and the ham or shrimp, and saute, stirring frequently, until the vegetable are very tender and lightly browned, 10-15 minutes.

Add the garlic, bay leaves, oregano, thyme, and cayenne and cook, stirring, just until the garlic releases its fragrance, about 2 minutes. Add 1/2 cup of the green onions, the eggplant, tomatoes, stock, and rice. Stir well and season with salt and black pepper. Raise the heat to medium high, bring to a boil, and then immediately reduce the heat to low. Stir well, scraping the pan bottom to be sure nothing sticks. Cover tightly and cook, without stirring for 20 minutes. Uncover and check to see if the liquids is absorbed and the rice is tender. If not, recover and cook for a few minutes longer.

Remove the pan from the heat and set aside to let stand, still covered, for 5 minutes. Discard the bay leaves and stir lightly with a fork to fluff before serving. Garnish with the remaining green onions.
Makes 6 servings.

Baked Spaghetti Squash and Cheese Recipe
Makes 7 cups.

5 1/2 cups cooked spaghetti squash (from about 2 small)
1 Tbsp butter
1 Tbsp olive oil
1/4 cup minced onion
1/4 cup flour (use 2 Tbsp corn starch for gf)
2 cups skim milk
1 cup fat free chicken broth (vegetable broth for vegetarian)
8 oz 2% reduced fat mild cheddar
salt and pepper, to taste
4 cups (about 4 oz) baby spinach
1/8 cup grated parmesan

Preheat the oven to 375ºF.
Cut the squash in half lengthwise; remove and discard seeds. Place squash on a baking sheet. Bake until tender, about 1 hour. Separate the strands of squash with a fork and place in a medium bowl; discard shells. Maintain the oven temperature.
Heat butter and oil in a large saucepan over medium heat. Add onions and cook about 2 minutes. Stir in flour. Reduce heat to low and cook, stirring continually 3 - 4 minutes.

Add milk and chicken broth and continue whisking, raising heat to medium-high until it comes to a boil and becomes smooth and thick, about 2 minutes stirring; season with salt and pepper.
Once it becomes thick, remove from heat, add cheddar cheese and mix well until cheese is melted. Adjust salt and pepper to taste, add cooked spaghetti squash and baby spinach, pour into a baking dish and sprinkle parmesan cheese on top. Bake until bubbly and golden 25 to 30 minutes.

 My son has asked me to make a specific Jell-O salad for this year for Easter.  He called it Fulton Salad.  I have no idea what he is talking about.  Does anyone have a TNT recipe for this salad. 

Pepperoni Pizza Dip Recipe

8 oz packages of Cream Cheese
1 cup pepperoni, chopped
1 cup tomato sauce
4 green onions, chopped
8 oz Shredded whole milk mozzarella cheese
Garnish with additional pepperoni and green onions

Let cream cheese sit at room temperature for approximately an hour or until soft. Set aside 5 whole pieces of pepperoni and a teaspoon of chopped green onions. Preheat oven to 350°.
Spread cream cheese evenly in a pie or quiche dish.

Sprinkle the pepperoni evenly over the cream cheese.
Pour the tomato sauce over the pepperoni and use spoon to make sure it is spread over the entire dish.

Sprinkle the green onions over the tomato sauce
Sprinkle the mozzarella cheese evenly over the top
Garnish with whole pepperoni and green onions if desired
Bake for approximately 30 minutes or until the cheese on top is bubbling and slightly brown.
Serve with crackers, tortilla chips or pita chips and Enjoy!

Mesquite Garlic Trout Recipe
Low Carb

An easy, delicious gourmet tasting dish, using only 4 ingredients.

1 tsp mesquite seasoning
4 tsps minced garlic
1 tsp salt
2 lb trout

Pre-heat oven or outside grill to 450 °F (220 °C).
Cut the head and tail off of a gutted, cleaned trout.
Place the minced garlic inside the open belly of the trout (add more than 4 teaspoons if preferred). Sprinkle mesquite seasoning and salt over the garlic and allow the belly to close naturally.
Place the trout onto a sheet of aluminum foil and wrap the foil loosely over the trout so that it is sealed, but in a tent fashion.
Place in the oven or grill for approximately 20 minutes.
Check to see if the meat flakes. Do not overcook.
