Egg Salad with Egg Beaters Recipe

1 c. Egg Beaters
2 Tbsp. celery, finely chopped
2 Tbsp. green pepper, finely chopped
1/2 c. light Miracle Whip
1/4 Tbsp. salt substitute
dash of black pepper
1/2 tsp. prepared mustard

Pour Egg Beaters in heavy 8-inch skillet. Cover tightly. Heat just until eggs are firm to touch, about 10 minutes. Remove from heat. Cool and remove from skillet. Cut into cubes. Combine eggs, celery, green pepper and seasonings. Mix with mayonnaise. Chill before serving. Use as sandwich filling or serve on lettuce.
Makes 4 sandwiches or 3 salads.

Egg Beaters Baked Custard Recipe

1 box (4 egg equivalent) Egg Beaters
2/3 c. sugar
1 tsp. vanilla
1/4 tsp. salt
4 c. skim milk, scalded
nutmeg

Mix first four ingredients. Add scalded milk gradually. Pour into 1 1/2-quart pan. Set in pan with 1-inch water. Sprinkle top with nutmeg. Bake at 350° for 1 hour and 15 minutes or until set. A silver knife inserted should come out clean.

Homemade Mayonnaise Using Egg Beaters

1 tsp. salt
1 tsp. sugar
2 tsp. French's mustard
3 Tbsp. vinegar
2 c. canola oil
Egg Beaters equaling 1 egg

Blend all these ingredients in blender until smooth.

Egg Beaters Homemade Ice Cream Recipe

2 cartons Egg Beaters (equals 8 eggs)
3 3/4 c. sugar
1/2 gal. 2% milk (approximately)
1 Tbsp. vanilla

Beat Egg Beaters until fluffy. Gradually add other ingredients, mixing well. Pour into 6-quart ice cream freezer. Add milk to fill line. Freeze according to freezer directions.

Eggbeaters Squash Squares Recipe
Makes 4 Servings

3 c. grated yellow squash
1/2 c. grated onion
1 c. Bisquick flour
1/2 c. oil
1/2 tsp. salt
1/2 c. Parmesan cheese
Egg Beaters to equal to 4 eggs

Mix well and bake in a 7 x 11-inch baking dish at 375° for 30 minutes.

Egg Beats Potato Dumplings Recipe

1/2 c. instant mashed potatoes, mixed with only water and salt
Egg Beaters to equal 4 eggs
1/2 tsp. salt
1-1/2 c. flour

Mix instant potatoes with water and salt. Blend eggs into cooled potatoes. Slowly add the flour. Dip a tablespoon into salted, boiling water to get it hot. Use hot spoon to chop off a 1/2 tablespoon of dough and drop it into the hot water. Keep doing this until all dough is used up. Let the dumplings boil until all are expanded and look spongy and are floating. Take out with slotted spoon and toss with butter. Use in soups, stews, casseroles, etc.

Egg Beaters Spinach Quiche Recipe

1 large onion
10 oz. frozen spinach, thawed and water squeezed out
Egg Beaters to equal 5 eggs
1/2 lb. farmer cheese

Sauté chopped onion; add spinach and stir. Cool 5 minutes. Mix with Egg Beaters. Can add mushrooms. Place in a 9 or 10-inch pie plate. Bake at 350° for 45 minutes.

Egg Beaters Baked Egg Casserole

2 c. croutons
1 lb. browned sausage
Egg Beaters to make 4 eggs
2-1/2 c. milk
6 oz. grated Cheddar cheese
1 can mushroom soup

Beat the eggs until well mixed. Add the browned sausage, milk, cheese and soup. Mix. Line a 9 x 13-inch pan with 2 cups croutons. Add the above mixture. Bake at 325° for 60 to 75 minutes.

Egg Beaters Fried Okra Recipe

4 or 5 c. cut up okra
1/3 c. milk
1/2 tsp. salt
Egg Beaters to equal 4 eggs
1 c. self-rising flour
oil (to fry)

In large bowl, beat eggs, milk and salt. Add okra; toss to coat well, then add flour. Toss until flour is all taken up. Heat oil in heavy skillet. Drop by spoonfuls into hot oil; flatten with spoon. Turn heat down; cook until done and golden brown. Serve warm or hot.

Egg Beaters Oven Fried Okra Recipe
10 servings.

1-3/4 lb. fresh okra
1/2 tsp. salt
1/2 c. nonfat buttermilk
1 1/2 c. cornmeal
1/8 tsp. pepper
1/4 c. Egg Beaters
vegetable cooking spray

Wash okra; trim ends, and cut into 1/2 inch pieces. Combine cornmeal, salt and pepper in a medium bowl; stir well and set aside. Combine buttermilk and egg in a large bowl; stir in okra. Let stand 10 minutes. Dredge okra in cornmeal mixture. Place okra on a baking sheet coated with cooking spray. Bake at 450° for 40 minutes or until crisp, stirring occasionally.

Egg Beaters Salmon Loaf Recipe
Makes 8 servings

1 large can deboned salmon
2 c. fine bread crumbs
1 tsp. lemon juice
1/2 c. Egg Beaters
1 can mushroom soup

Preheat the oven to 350°. Mix all ingredients together and press into an ungreased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Bake 45 minutes.

Egg Beaters French Toast Recipe

Egg Beaters to equal 4 eggs
3 slices bread (nonfat brand)
cinnamon
sugar
Pam spray
syrup

Spray pan with Pam and dip bread into Egg Beaters. Fry until golden brown. Turn and fry second side. Put cinnamon and sugar on finished toast and pour on syrup.

Egg Beaters Broccoli Quiche

1 small box Stove Top stuffing
1 pkg. chopped broccoli, steamed
1 can skimmed canned milk
Egg Beaters to equal 4 eggs
Mozzarella cheese, shredded

Cook stuffing as directions say on box. Form as crust in greased pie plate. Put steamed broccoli over crust. Add the milk and Egg Beaters. (Mix these two ingredients together before pouring over broccoli.) Top with shredded Mozzarella cheese. Bake at 350° for 35 to 40 minutes, until it is brown and firm. Let set for 5 minutes.

Egg Beaters Oven Baked Chicken Recipe

4 to 6 chicken breasts
Egg Beaters to equal 2 eggs
60 Ritz crackers, crushed

Remove skin and bones from chicken, dip well in Egg Beaters (defrost Egg Beaters and use while very cold), then roll or press chicken breasts in the crushed Ritz crackers. Place in baking dish and bake for 1 hour at 325°. If you have cracker crumbs left, place on top of chicken.

Egg Beaters Broccoli Skillet Corn Bread

1 (10 oz.) pkg. broccoli (frozen)
1 box Jiffy corn bread mix
1 stick melted oleo
1 medium onion, chopped
Egg Beaters to equal 4 eggs
1 c. grated Cheddar cheese

Mix all ingredients together. Batter will be thick. Put in iron skillet; bake at 350° for 20 to 25 minutes or until done.

Egg Beaters Turkey Meatloaf Recipe

1-1/2 lb. ground turkey
1/4 cup Egg Beaters
1 Tbsp. oregano
1/4 c. Italian bread crumbs
Minced onion
1 Tbsp. horseradish

Mix all ingredients and shape into loaf. If mixture seems a little dry or stiff, add a little milk (1 or 2 tablespoons). Bake at 350 degrees for approximately 35 minutes.

Egg Beaters Ground Beef Meatloaf Recipe
Makes 8 servings.

1-1/2 lb. lean ground beef
1/4 c. Egg Beaters
3/4 c. oats
1 c. tomato juice
1/4 tsp. bell seasoning
1/2 tsp. onion salt

Preheat the oven to 350°. Combine all ingredients. Mix well. Press firmly into ungreased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Bake 50 minutes. Cool 5 minutes and slice.

Egg Beaters Tangerine Cream Pie Recipe

3 tangerines, peeled and separated or 2 cans sliced
2 Egg Beaters
3/4 c. white sugar
1 tsp. cinnamon
2 Tbsp. cornstarch
1/2 tsp. nutmeg
1/2 c. milk
1 tsp. salt
1 tsp. cream of tartar
1 tsp. cinnamon/sugar mixture

Combine Egg Beaters, sugar, cinnamon, cornstarch (mix with small amount of milk), nutmeg, milk and salt. Cook over medium fire until thick. Place tangerine slices, drained, over bottom of cooked pie shell. Peak over pie. Cook until egg whites are golden brown at 350°.
Cool and serve.

This is a recipe I have been using for a very long time, and are
always so good. We like this best over cooked egg noodles,
but could serve with steamed rice or mashed potatoes too.

Many Ways Meat Balls Recipe

1 lb. lean ground beef
Cooking oil
1/4 cup fine dry bread crumbs
1/4 cup minced onion
1 egg, slightly beaten
1/4 tsp. salt
Pepper, to taste
1 can soup - Cheddar cheese, cream of celery, or cream of mushroom
1/2 cup water
2 tbsp. chopped parsley

Mix first 6 ingredients and shape into 16 meat balls. Brown meat balls in skillet with a little oil; drain. Stir in the soup (we like cream of mushroom the best) and add water and parsley.

Cover and simmer for about 20 minutes, stirring occasionally.

Sundae Bars Recipe

1/4 cup butter
1 pint (2 cups) chocolate ice cream - softened
1-1/2 cups flour
1 cup brown sugar
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup chopped nuts
1/2 cup butterscotch baking chips
1 egg

Melt butter in saucepan and remove and from heat; stir in ice cream. Add remaining ingredients, stirring till smooth. Spread in a greased 9 x 13 inch baking pan. Bake at 350 for 35 to 30 minutes. Cool and cut into bars.

Can frost with a favorite chocolate frosting, or sprinkle top with powdered sugar. (we like them with a thin chocolate frosting).

I know you will fall in love with this dessert after the first bite!
You can can also use a 20 oz. can of crushed pineapple (well drained) in place of peaches, but we like it best with peaches. I have never tried it with fresh sliced peaches, but I bet it would be delicious.

Peaches 'N Cream Dessert Recipe

3/4 cup flour
1/4 tsp. salt
3 tbsp. butter
1 egg
1 tsp. baking powder
1 pkg. (4 serving size) regular vanilla pudding - not instant
1/2 cup milk
1 can (15 oz.) sliced peaches, drain and reserve juice
1 pkg. (8 oz.) cream cheese, softened
1/2 cup sugar
3 tbsp. reserved peach juice
1 tbsp. sugar
1/2 tsp. cinnamon

In large bowl for electric mixer, combine flour, salt, butter, egg, baking powder, pudding mix and milk. Beat for 2 minutes on medium speed. Pour into greased 10 inch pie plate. Top with drained fruit. In small bowl, beat together until smooth
the cream cheese, reserved peach juice and 1/2 cup sugar. Spoon over peaches to within 1 inch of the edge. Mix together the 1 tbsp. sugar and cinnamon and sprinkle over the top of cream cheese filling. Bake at 350 for 30 to 35 minutes, until crust is golden brown. Filling will appear soft. Cool and serve. Store in refrigerator.

 This has rather unusual ingredients in it, but the chicken has the BEST flavor and comes out so nice and moist. If you need to watch your sugars, you could use sugar-free preserves. I like using the dry onion-mushroom soup mix.

Apricot Chicken Recipe

8 boneless & skinless chicken breast
(can use other cut up chicken pieces)
1 envelope dry onion soup
1 bottle (9 oz.) 1000 Island salad dressing
1 jar (12 to 14 oz.) apricot preserves
(I used apricot-pineapple)

Mix sauce ingredients well and spoon over chicken in a baking pan.
Bake at 375 for 1 hour uncovered. Is wonderful served over rice.
