Reduced Calorie Banana Pudding Recipe
Makes 2 Servings

1 cup skimmed milk
1 tablespoon cornstarch
1 beaten egg
2 to 3 packets sweetener
2 tsp. vanilla
1/2 to 1 thinly sliced banana

Beat egg in small saucepan. Add milk and cornstarch; cook and stir until thickened. Take off burner and add remaining ingredients.

Reduced Calorie Banana Milk Shake Recipe
Yields 1 serving (1-1/2 cups)

1/3 c. nonfat dry milk
1/2 c. water
1 tsp. vanilla extract
1 small banana or 1/2 (6-inch) banana

Put ingredients in blender. Add 2 to 3 ice cubes and whirl. Serve and enjoy.

Reduced Calorie Strawberry Banana Shake
Makes 2 (16 oz.) shakes

1 c. frozen whole strawberries
1 frozen banana (cut up in 1/2 inch pieces)
1 c. milk (skim or whole)
1 Tbsp. diet strawberry preserves
2 pkg. Equal Sweetener

Turn on blender and drop frozen strawberries, one at a time. Next, drop in banana pieces. Stop blender and scrape with spatula. Add milk, preserves and sweetener and blend. Makes 2 (16 oz.) shakes

Reduced Calorie Cherry Coke Salad Recipe
Makes 4-6 Servings

2 pkg. diet cherry Jell-O
3 bananas
1 Diet Coke

Mix Jell-O in 2 cups of boiling hot water. When dissolved completely, add the can of regular or Diet Coke, whichever recipe you use, then let it set until cool, then add bananas. Top with Cool Whip or light Cool Whip and serve.

Reduced Calorie Banana Ice Cream Recipe

6 c. skim milk
1/8 c. chopped pecans
13 pkg. Sweet 'N Low
1 (1.3 oz.) box sugar-free vanilla instant pudding
2 bananas
1 tsp. vanilla
1 package Dream Whip

In a large bowl or electric mixer, combine milk, bananas, pecans, vanilla and sweetener. When well mixed, add dry topping mix and dry pudding mix. Mix well and pour into freezer can or 1/2 gallon ice cream freezer. Add enough 2% milk to come up to fill line and freeze by freezer directions. Makes 1/2 gallon. Chill can before pouring ingredients into can. Chill beaters before mixing ingredients.

Reduced Calorie Raspberry and Banana Jell-O Salad

2 (3 ounce) pkg. diet raspberry Jell-O
1-1/2 cup boiling water
10 ounces frozen raspberries or blackberries
2 (8 ounce) cans crushed pineapple
1 banana
1 cup sour cream

Dissolve Jell-O in boiling water; add frozen raspberries and stir until thawed. Stir in pineapple and banana. Pour half into 8-inch square pan and refrigerate 30 minutes; spread sour cream over gelatin, then pour remaining Jell-O over the sour cream.

Reduced Calorie Banana Ice Cream Recipe

2 medium bananas, frozen
1/4 cup skim milk
1 cup frozen strawberries
2 packets Equal
1 teaspoon vanilla
1/8 cup skim milk

Peel bananas, wrap in foil and freeze for several hours. Chop bananas into about 1-inch long slices. Place bananas in blender with 1/8 to 1/4 cup skim milk and blend at medium speed, turning blender on and off to combine bananas and milk (consistency should be lumpy). Add strawberries (or other frozen fruit), a few at a time. Add Equal, vanilla and enough milk to make a creamy consistency. It is done when mixture has look of soft serve ice cream. This mixture does not freeze well, but may be frozen up to about 30 minutes.

Banana Baked in Foil Recipe
Serves 4

4 small bananas, peeled
1/4 tsp. rum extract
1/2 cup diet Coke
2 vanilla beans, split lengthwise

You will need 4 pieces of aluminum foil.

Preheat oven to 425°. Fold sheets of aluminum foil lengthwise in the shape of a boat. Place each banana in each boat. Pour the Coke, rum and vanilla bean over each one. Close foil. Place on a baking sheet. Bake 15 minutes.

Peanut Banana Salad Recipe

2 apples, sliced
2 bananas, sliced
1/4 c. lemon juice
1/2 c. mayonnaise
6 Tbsp. peanut butter, softened
1/3 c. hulled sunflower seeds
6 leaves lettuce
1/2 c. peanuts

Wash, core and slice the apples. Quickly dip them into the lemon juice and let drain. Peel and slice bananas; quickly dip them into the lemon juice and let drain. In a medium size mixing bowl, combine the mayonnaise and softened peanut butter until well mixed. Stir the sunflower seeds into the mayonnaise mixture. Stir the apple slices into the mayonnaise mixture until all slices are well coated. Put lettuce leaves onto small plates. Spoon the banana mixture onto the lettuce leaves and sprinkle with peanuts.

Blueberry Banana Pie Recipe
Makes 9 inch Pie

1 (9-inch) deep dish pie crust, baked
1 can blueberry pie filling
3 to 4 bananas
8 oz. Cool Whip

Bake and cool crust. Slice a layer of bananas in bottom of pie crust. Spread 1/2 can blueberry pie filling over bananas. Repeat layers. Top with Cool Whip. Refrigerate. It is done!

Can use vanilla wafer or graham cracker crumb pie crust.

Rhubarb and Strawberry Tart With Cheesecake Filling Recipe
Yields 8 servings.

Crust:
1 1/4 cups whole-wheat pastry flour
1/2 cup almond or hazelnut meal
1 tablespoon sugar
1/2 teaspoon sea salt
1 stick unsalted butter, cold, cubed
1 egg
2 tablespoons water

Filling:
2 cups sliced fresh strawberries
1 cup sliced ripe rhubarb
Scant 1/2 cup sugar, divided
1 tablespoon balsamic vinegar glaze
4 teaspoons cornstarch
1/8 teaspoon salt
1 package (8 ounces) cream cheese, softened
1 egg yolk

Topping:
1/4 cup almond or hazelnut meal
1 tablespoon coarse sugar (like turbinado)
2 tablespoons butter, cubed

To make crust: Place flour, nut meal, sugar and salt in bowl of food processor and pulse to combine. Add butter and process until coarse meal forms. Whisk egg with water and add to bowl. Process until dough comes together. Turn out onto plastic wrap and knead into ball, then flatten to disk shape and wrap up tightly. Refrigerate for at least 1 hour.

Turn disk out onto large square of floured parchment paper — it’s helpful to tape it to your work surface. Using rolling pin, roll out crust to fit two-piece 11-inch tart pan, about 1/8-inch thick. Transfer crust to tart pan by inverting pan over crust, then picking up parchment paper and flipping it over. Carefully peel off paper. Press dough up sides of pan; fold overhanging dough back onto itself to 1/4 inch above edge of pan. Place tart pan on baking sheet and refrigerate while you prepare the filling.
To make filling: In large bowl, toss together strawberries, rhubarb, 1/3 cup sugar, balsamic vinegar glaze, cornstarch and salt. Set aside to blend for about 30 minutes.

In separate bowl, beat cream cheese, remaining sugar and egg yolk until smooth.

Spread in crust. Using slotted spoon to drain liquid, top with strawberry-rhubarb mixture. Discard liquid.

To make topping: In small bowl, combine all topping ingredients. Spoon over tart. Place tart in refrigerator for 30 minutes.
To bake: Preheat oven to 425 F. Place baking sheet with tart on lower oven rack and bake for 20 to 25 minutes, or until crust is golden. Allow to cool for 15 minutes before slicing.

Rhubarb Dump Cake Recipe

1 pound rhubarb, cut into 1/4 inch pieces (between 3 and 4 cups)
1 cup white sugar
1 (3 ounce package) strawberry Jell-O
1 package yellow cake mix
1 cup water
1/4 cup butter, melted
Preheat oven to 350 degrees. Grease a 9x13 inch baking dish. Spread the rhubarb evenly in the bottom of the baking dish. Sprinkle the sugar over the rhubarb, followed by the Jell-O, and finally the cake mix. Pour the water and melted butter over the top. Do not stir. Bake for 45 minutes or until the rhubarb is tender

Cookies and Cream Bread

Cookies & Cream Ice Cream Bread takes just three ingredients to make magic. Your family will adore this quick bread!

Ingredients
2 cups cookies & cream ice cream, full fat, not light
1 1/2 cups self rising flour
10 Oreos, or other preferred sandwich cookies

Directions
Preheat oven to 350°F. Spray an 8" x 4" loaf pan with baking spray containing flour and line the bottom with a rectangle of parchment paper. Set aside.
In a large bowl, mix together softened ice cream and self-rising flour until all the flour is evenly moistened. Stir in half of the cookie pieces. Scrape batter into prepared pan and smooth the top. Sprinkle top with remaining cookie pieces and gently press into the top.
Bake in preheated oven for 40-45 minutes, until a tester inserted in the middle comes out clean. Remove from oven and turn bread carefully out of the baking pan. Cool completely on a wire rack.

Butterscotch Pie Recipe

This butterscotch pie won first place at the 2010 Iowa State Fair for Mindy Paulson of Pie on Sunday blog fame.

Ingredients:
1 - 9-inch baked pie crust -

Filling
1 cup lightly packed brown sugar
1/3 cup all-purpose flour
2 cups whole milk
3 large egg yolks
1/4 teaspoon salt
1 teaspoon vanilla extract
3 tablespoons butter, cut into small pieces

Topping
1 cup heavy whipping cream
3 Tablespoons sugar
1/2 teaspoon vanilla extract
1/2 cup chopped pecans

Instructions:
To prepare checkerboard pie crust: Roll out dough and ease into pie pan. Trim crust. Make cuts through the dough at approximately ½-inch intervals and approximately ½-inch long. Carefully fold every other section up and toward center of pie to create checkerboard appearance. Line pastry with parchment paper and fill with pie weights. Bake in 450° oven for 8 minutes. Remove parchment paper; bake 5-6 minutes more or until golden. Cool.

To prepare filling: Combine brown sugar, flour, milk, egg yolks, and salt in saucepan. Cook over medium heat, whisking until mixture thickens and starts to boil, about 6-7 minutes. Continue to cook, whisking rapidly, for 2 minutes more. Remove from heat; whisk in vanilla and butter, one piece at a time. To cool, transfer filling to a bowl and chill over an ice water bath, stirring occasionally, until completely cooled. Transfer filling to pie shell, cover surface with plastic wrap, and chill in refrigerator for several hours or overnight.

To prepare topping: In large bowl, beat cream until soft peaks form, gradually adding the sugar during beating. Add vanilla and beat until nearly stiff peaks form. Spread whipped cream over pie and top with chopped pecans
