Leftover Ham with Pineapple for One Recipe

Ingredients
Slice of leftover baked ham
1 Tbsp. brown sugar
2 Tbsp. crushed pineapple with juice

Directions
Line a 9-inch pie pan with foil. Place ham in pan. Sprinkle with brown sugar. Top with pineapple. Bake, uncovered, at 350° for 20 to 25 minutes or until heated through.

Leftover Ham and Fried Apples for Two Recipe

Ingredients
2 large apples (unpeeled), sliced
1/2 c. brown sugar
dash of cinnamon and nutmeg
3/4 c. leftover ham, cut in thin slices
1/4 c. margarine

Directions
Place apples and margarine in skillet. Stir until margarine is melted, then add sugar. Stir until sugar is melted. Cover and cook for 5 minutes. Uncover and add ham, nutmeg and cinnamon. Continue to cook until apples are done.

Leftover Ham and Macaroni Salad Recipe

Ingredients
2 c. macaroni, cooked
1 c. diced cucumber or 1 bell pepper, chopped
1-1/2 c. cubed, leftover ham
1/4 c. chopped onion
1/2 c. mayonnaise or Miracle Whip

Directions
Combine ingredients; toss together until blended. Serve with sliced tomatoes and crackers.
Serves 4 to 6.

Leftover Ham and Asparagus Casserole Recipe

Ingredients
1 c. hot milk
1/4 lb. cheese, grated
1/2 c. dry bread crumbs
1/4 c. ham fat or butter
1/4 c. chopped pimento
1 Tbsp. finely chopped onion
1 1/2 Tbsp. chopped parsley
3 eggs, well beaten
1 (10 oz.) pkg. frozen cut asparagus spears
3 c. diced, cooked ham
3/4 c. buttered bread crumbs

Directions
Combine hot milk and cheese. Blend 1/2 cup crumbs, fat, pimento, onion and parsley. Add to milk mixture. Blend in eggs. Cool.

Cook asparagus briefly, boiling only 2 minutes. Drain. Cool. Combine ham, asparagus and egg mixture. Pour into buttered 1-1/2-quart shallow casserole. Top with buttered crumbs. Bake at 350° for 40 to 50 minutes. Freezes well. Thaw and cook as directed.
Makes 6 to 8 servings.

Leftover Ham Barbecue Recipe

Ingredients
2 Tbsp. margarine
1 medium onion, chopped
3 Tbsp. vinegar
1 c. chili sauce
1 c. water
2 Tbsp. brown sugar
1 tsp. dry mustard
2 Tbsp. Worcestershire
1/2 tsp. black pepper
dash of salt
3 cups leftover ham

Directions
Melt margarine and sauté onion until browned. Add all the other ingredients and simmer for about 20 minutes or until thickened. Stir in the ham and heat through.
Serve on toasted buns.
Makes 8 sandwiches

Leftover Ham and Noodle Casserole Recipe

Ingredients
4 oz. medium egg noodles
1 c. cream of mushroom soup
1/2 c. milk
1 tsp. instant minced onion
1/2 tsp. Worcestershire sauce
1 c. sour cream
2 c. leftover ham, chopped fine
1 c. dry bread crumbs
1-1/2 Tbsp. butter
1/4 c. Parmesan cheese

Directions
Butter 1-1/2-quart casserole dish. Cook noodles and drain. In saucepan, heat together soup, milk, onion, Worcestershire sauce and sour cream. Stir well. In casserole, layer 1/2 noodles, 1/2 ham and 1/2 cheese; repeat. Melt butter in skillet and mix in bread crumbs; sprinkle buttered crumbs over top. Bake, uncovered, at 350° until bubbly and top turns brown.
Serves 4.

Ham and Noodle Casserole Recipe

Ingredients
2 Tbsp. butter
2 medium onions, chopped
1 green pepper, chopped
1 (4 oz.) can sliced mushrooms, drained
1 c. cubed cooked ham
juice of 1 lemon
1 c. sour cream
2 c. cooked egg noodles

Directions
Melt butter in heavy skillet over low heat. Add onions, green pepper and mushrooms. Cook until soft. Stir in ham, lemon juice and sour cream. Heat 3 minutes. Arrange half of the noodles in a greased 1-1/2 quart casserole. Pour in ham mixture. Top with remaining noodles. Bake at 350° for 30 minutes or until bubbly.
Serves 4.

This can be served as an appetizer or as an alternative to garlic bread. You can use any cheese in the recipe.

Robbie's Cheese Bread with Ranch Dressing Recipe

Ingredients
1 lg. French bread
Ranch dressing- Salad dressing not the dry mix
Cheddar cheese, grated or cheese of your choice

Directions
Slice bread in half lengthwise. Place halves on cookie sheet (cut side up). Spread dressing generously on bread. Sprinkle cheese over dressing. Cover entire surface. Cook at 350 degrees until cheese is melted.

I’d like to ask Lisa in TX about her recipe for Lisa's Coconut Sour Cream Cake. Have you made this recently with cake mixes in the smaller size boxes? I have a recipe that uses a cake mix and it doesn’t come out good now, it always did before. I’m sure it has to do with the smaller amounts of cake mix they’re selling. So, do I need to buy two boxes and measure it or make it as the recipe states? Thank you. I really want to try this recipe. Betty in ME.

I checked with Lisa on the recipe and she said you need to add 6 tablespoons of the cake extender recipe.

Leftover Ham Spread Recipe

Ingredients
1 (8 oz.) pkg. cream cheese
1/4 c. mayonnaise
2 cups leftover ham, cut into small pieces
1/4 tsp. dry mustard
1/8 tsp. Tabasco sauce
1 Tbsp. chopped green onion

Directions
Combine all ingredients in food processor or blender until ham is minced. Roll into ball, chill and serve with assorted crackers.

Leftover Ham and Tator Tots Casserole Recipe

Ingredients
1 c. cubed leftover ham
1 small package tator tots
1/4 c. chopped onion
1 (14 ounce) can green beans
1 (10 ounce) can cream of celery soup (can use cream of chicken)
1 c. milk
2 Tbsp. flour

Directions
Place first 4 ingredients in a buttered casserole dish. Mix soup, milk and flour; pour over top. Bake at 350°, covered, for 1 hour, then 15 minutes, uncovered.

Leftover Ham Au Gratin Recipe

Ingredients
1 pkg. au gratin potatoes (I like the Betty Crocker brand)
1 (10 oz.) pkg. frozen chopped broccoli, partially thawed and broken apart
2 c. cut-up, leftover ham

Directions
Prepare potatoes as directed on package except use 2-quart casserole and omit butter; stir in broccoli and ham. Bake, uncovered, 45 to 50 minutes.
Makes 4 servings.

Leftover Ham and Corn Casserole Recipe

Ingredients
2 lb. bag frozen hash browns, partially thawed
8 oz. sour cream
1 can creamed corn
3 cups chopped leftover ham
2 to 3 c. shredded cheese

Directions
Mix and pour into 9 x 13-inch greased pan. Bake at 350° for 50 to 60 minutes.
Makes 4-6 servings

Leftover Ham and Corn Skillet Recipe

Ingredients
2 Tbsp. butter
1 (14 ounce) can corn, drained
1 c. chopped ham
1/2 c. chopped onion
1/2 c. chopped green pepper
1/2 tsp. salt
1/4 tsp. pepper
3 Tbsp. milk

Directions
Heat butter in skillet until hot. Add corn, ham, onion and green pepper. Sauté, stirring often, until onion and pepper are crisp and tender (about 5 minutes). Stir in salt, pepper and milk. Cut down heat. Let warm just long enough to heat thoroughly.
Makes 4 servings

Leftover Ham and Corn Fritters Recipe

Ingredients
1 c. leftover ham, chopped fine
1 (8 oz.) can cream-style corn
2 eggs
1/4 c. milk
2 c. Bisquick mix
vegetable oil for frying

Directions
Stir together the ham, corn, eggs, milk and Bisquick mix. In a large skillet, heat the oil to 375°. Drop the batter by tablespoonfuls into the hot oil. Fry for 4 to 6 minutes per side. Serve with your favorite pancake syrup .

Leftover Ham and Corn Dish Recipe

Ingredients
1 medium can whole kernel corn (16 oz.), drained
1 medium can creamed corn (16 oz., undrained)
1/4 c. flour
1/4 c. sugar (I use sugar substitute)
1/4 c. butter
2 eggs, well beaten
1 cup leftover ham, chopped into bite sized pieces
1 tsp. salt
1 tsp. pepper

Directions
Melt butter and stir in flour and sugar. Add beaten eggs and corn mixture. Mix all together. Salt and pepper. Put in 13 x 9-inch baking dish or round pie pan. Bake at 350° for 1 hour. You can remove from oven after 45 minutes and add grated Colby and Cheddar cheese on top. Return to oven and cook until cheese is melted. May double recipe for large group.
Makes a 9 x 13-inc
