Lisa's Broccoli Salad Recipe

Ingredients
2 bunches broccoli
2 bunches green onions
4 stalks celery
10 slices bacon, cooked
1/2 c. cashews
1 c. mayonnaise
1/3 c. sugar
2 Tbsp. vinegar

Directions
Combine the last 3 ingredients and pour over the first 5 ingredients.

Lisa's Broccoli Salad with Grapes Recipe

Ingredients
1/2 c. mayonnaise
3 Tbsp. sugar
2 tsp. vinegar
1/3 c. cashews
2 slices cooked bacon, crumbled
3 c. chopped fresh broccoli
1 c. medium grapes, halved

Directions
In a mixing bowl, stir together mayonnaise, sugar and vinegar. Stir in broccoli and grapes. Cover and chill up to 24 hours.
Before serving, stir in bacon and cashews.
Makes 4 servings.

My Cats this Christmas
I didn't put up a tree this Christmas.  Little One is still too young to put up a tree with decorations.  In the past when I had Siggy he would make it his mission to remove all the stuffed Santas and Rudolphs off the tree.  Each morning I would find little Rudolph feet and Santa feet sticking out from his bed.

If a tree was up Little One would climb up it, so putting one up would not be a good idea this year.  Maybe next year. 

Little One and Ditto will have a visit from Santa.  Santa bought them a lot of bird seed.  My kitties activity is to watch the birds all day.  The bird seed for the bird feeders was purchased by several of our NancyLand members.  My mailman has been kidding me that my cats got more Christmas cards than I did.

Linda's Sunflower Seed Salad Recipe

Ingredients
6 medium carrots, grated
1 clove garlic, crushed and chopped
1 tsp. pepper
1/2 tsp. salt
2 Tbsp. vinegar
5 Tbsp. corn oil
1/2 c. sunflower seed kernels, dehulled
2 scallions, minced
6 lettuce leaves

Directions
Combine garlic, pepper, salt, vinegar and oil in bowl, whisking to combine. Add to carrots along with sunflower seeds and scallions. Serve on lettuce leaves.
Makes 4 Servings

Linda's Holiday Carrot Casserole Recipe

Ingredients
1 large can sliced carrots, drained
1/2 c. diced onions
1/2 c. diced celery
1/2 stick butter
2 Tbsp. flour
1 c. milk
1 c. grated cheese
buttered bread crumbs or grated cheese for topping

Directions
Sauté onions and celery in butter. Add flour, milk and cheese. After this makes a sauce, add carrots. Spoon into a casserole dish and top with buttered bread crumbs or grated cheese. Bake at 350° until heated thoroughly.

Note: I prefer to substitute frozen carrots that have been cooked a couple of minutes in the microwave. I drain them and use the recipe above..

Sharon's Holiday Corn Salad Recipe

Ingredients
2 medium cucumbers
1/2 medium onion
1 (14 oz.) can whole kernel corn
1/2 c. white distilled vinegar
2 Tbsp. sugar
2 Tbsp. water
1 tsp. dill weed
1/4 tsp. pepper
dash of cayenne pepper

Directions
Peel and thinly slice cucumbers and onion. Drain corn, reserving liquid for other recipe uses. Combine all other ingredients except parsley. Pour over cucumbers, onion and corn in salad bowl. Chill. Toss and serve.
Makes 4-6 Servings

Judy's Cranberry Fluff Recipe

Ingredients
3 cups Fresh Cranberries
3/4 cup Sugar
1 cup water
1/2 tsp ground cinnamon
2 cups sour cream or plain greek yogurt
2 cups pineapple tidbits, well drained
1-1/2 cups cranberry sauce with whole berries
2 cups mini marshmallows
1 cup chopped pecans, walnuts or macadamia nuts
2 cups flaked coconut (optional)

Instructions
Combine cranberries, sugar, water and cinnamon in a saucepan. Bring to a boil, reduce heat and let simmer 10 minutes. Cool completely (sauce will thicken upon cooling).
Add 1-1/2 cups cooled cranberry mixture from step 1 with remaining ingredients and stir well. Let sit 4 hours or overnight.
Makes 4 servings

This is my hubby's latest wing creation. Really good easy meal on a day spent wrapping presents or suchlike.
Good for a Bowl Game watching marathon, too.

Walt's Salsa Wings Recipe

To each 8 wing sections:
1 c. salsa casera or other chunky salsa
1/4 packed c. brown sugar

Spray a foil or foil-lined pan & lay wings in one layer. Mix salsa & sugar; pour over chicken. Bake at 350º for 1 hour or till cooked through, basting every 15 minutes & before lifting from pan, piling the salsa on top of the wings.

Karen's Green Bean and Carrot Salad Recipe

Ingredients
1 (8 oz.) can green beans
1 (8 oz.) can sliced carrots
1 (8 oz.) can red kidney beans
1 small onion
2 Tbsp. chopped celery
1 Tbsp. snipped parsley
3/4 c. low calorie dressing

Directions
Mix all together and serve.
Makes 4-6 Servings

Karen's Carrot and Cabbage Salad Recipe

Ingredients
2 c. shredded carrots
2 c. shredded red cabbage
1-1/4 c. sliced radishes
1/4 c. olive oil
1 Tbsp. apple cider vinegar
1/4 c. grated onion
1 tsp. salt
1/2 tsp. freshly ground pepper

Directions
Toss carrots with cabbage and radishes. Chill.

To make dressing, beat olive oil with vinegar, onion, salt and pepper. Toss salad with dressing.
Makes 4 Servings
