One of the Southern traditions in the US eating black eyed peas on New Year's eve to bring luck for the new year. Below are recipes for News Years Day which are said to bring good luck.

New Years Good Luck Pea Dip Recipe

Ingredients
2 cans black-eyed peas with no bacon in can*
2 tsp. chili powder
1 stick melted butter or margarine
1 or 2 (4 oz.) cans green chilies,
drained
2 c. shredded sharp Cheddar cheese

Directions
*For spicier dish, use 1 or both cans of black-eyed peas with jalapenos. Drain black-eyed peas; blend using blender or food processor. Add chili powder and melted butter, then blend again. Pour mixture into shallow baking dish; top with green chilies. Sprinkle shredded cheese over mixture. Bake at 325 degrees for 10-15 minutes until cheese melts and beans are hot. Serve with chips as an appetizer, or serve as a side dish with a meal.

New Years Black-Eyed Pea Dip Recipe for Luck

1 (32 oz.) blackeyed peas with jalapenos (processed in blender)
1 lg. chopped onion
1 clove chopped garlic
1 (4 oz.) can chopped green chilies
1 tbsp. jalapeno liquid
1/2 lb. melted oleo
1/2 lb. (melted with oleo) Old
English sharp cheese

In microwaveable large dish, melt oleo and cheese. Add chopped onion, garlic, green chilies and jalapeno juice to cheese and oleo mixture. Process blackeyed peas with jalapenos (I use 3 cans, drained); (save some liquid in case it gets too thick) and add to cheese mixture. Mix well. Serve hot with chips. This also freezes well!

New Years Black Eyed Pea Relish Recipe for Luck

Ingredients
1 can black-eyed peas with jalapenos, rinsed & drained

To this add:
1/4 c. sugar
1/4 c. chopped or sliced green peppers
1/4 c. black olives
1/4 c. vegetable oil
1/4 c. chopped or sliced onions
1/4 c. fresh mushrooms

Directions
Mix together and chill before serving.

New Years Black-Eyed Peas and Rice Casserole Recipe

Ingredients
2 (16 oz.) cans black-eyed peas
1/2 c. instant rice (or 1 c. cooked rice)
1 c. diced ham
1 can S & W Ready-Cut Peeled tomatoes
1/4 c. chopped onion
1/4 c. chopped green pepper

Directions
Mix peas, ham, tomatoes, onion and pepper. Bring to boil. Add rice. Cover and let rest 5 minutes. Season with salt and pepper. Stir and pour into oiled casserole. If dry add small amount of water. Bake at 350 degrees for 45 minutes. There should be enough liquid in peas and tomatoes to cook rice. If not, add some water. Be sure to use the S & W. tomatoes, they hold their shape. This is a good dish to serve on New Year's day. Southerners believe black-eyed peas and New Year's day bring good luck all year. Serve hot with chips.

New Years Black-Eyed Pea and Ham Salad Recipe

Ingredients
2 (10 oz.) pkgs. frozen black-eyed peas
1 c. cooked rice
1/2 c. sliced celery
1/3 c. chopped sweet red pepper
1/4 red onion, sliced
1/4 c. chopped parsley
2 oz. ham, cut in slivers
1/3 c. vegetable oil
2 tbsp. red wine vinegar
1/2 tsp. salt
1 tsp. prepared mustard
1/8 tsp. crushed red pepper flakes
Pinch ground cloves

Directions
Cook black-eyed peas according to package directions. Drain; rinse with cold water to cool. Place in a large bowl. Add rice, celery, sweet red pepper, onion, parsley, and ham. Combine oil, vinegar, salt, mustard, pepper flakes and cloves in a small bowl; mix well. Pour over black-eyed pea mixture; mix gently.
Refrigerate until serving time.
Serves 4.

New Years Black Eyed Pea Hoppin John Recipe

Ingredients
8 oz. can Bush's dried black-eyed peas
1 lg. bell pepper
1 lg. onion
1 lg. or 2 med. tomatoes
1/2 (12 oz.) can Spam Lite
1 tbsp. bacon grease
1 tbsp. canola oil
2/3 c. uncooked Comet Rice
Salt & pepper to taste

Directions
Slice pepper into strips, dice fine. Dip tomato into boiling water briefly, dice fine. Dice onion also. Place veggies in separate bowls, with a teaspoon in each for serving. Place on table. Dump peas into pot, add bacon grease and salt and pepper to taste. Simmer without lid, stirring now and then. At same time start rice according to directions. Slice Spam, stack slices, cut into cubes. Brown gently in a little oil. Combine cooked rice with peas and Spam, stir, simmer for a couple of minutes.

Tomorrow will be more recipes for Southern tradition. Eating greens such as cabbage, collard greens, mustard greens, kale or spinach is said to bring money for the next year.




 

I've been making these delicious cookies for the holidays every year for the last 30 years, and usually have to make a double recipe, as they are very popular. I often make them for St. Patrick's Day also.

Judy's Pistachio Party Cookies Recipe

Ingredients
1/2 cup powdered sugar
1/2 cup butter
1/2 cup oil
1 tsp. almond extract
3 drops green food color
2 eggs
1 pkg. pistachio instant pudding
2 cups flour
1/2 tsp. baking soda
1/2 tsp. cream of tartar
1/8 tsp. salt
1/2 cup chopped pecans

Directions
In large bowl, mix well powdered sugar, butter, oil, almond extract, food coloring, eggs and pudding mix. Add flour, soda, cream of tartar and salt. Mix in until well blended. Stir in pecans . Refrigerate dough for easier handling. Shape dough into 1" balls and roll in granulated sugar. Bake at 350 for 10 to 12 minutes on ungreased sheets, until light golden brown around the edges. Immediately remove from cookie sheets to cool. Makes about 4-1/2 dozen cookies.

Judy's Dip Recipes
Here are two dip recipes that are great an time of year and easy to assemble. They can easily be made a day ahead and refrigerated.

7 Layer BBQ Bacon Dip Recipe

Ingredients
2 pkg. (8 oz. each) Cream Cheese, softened
1/2 cup Barbecue Sauce
1 pkg. (2.8 oz.) Real Bacon Pieces
1 small tomato, chopped
1/2 cup diced green pepper
1/3 cup sliced green onions
1-1/2 cups Shredded Cheddar Cheese

Directions
Spread cream cheese on 12-inch platter or pizza pan; top with barbecue sauce. SPRINKLE with bacon pieces, tomato, green pepper, onions and cheddar cheese.

Serve with scoop-shaped corn chips or tortilla chips.
Yield: 20 Servings.

Pepperoni Pizza Dip Recipe

Ingredients
1 (8 oz.) pkg. cream cheese, softened
1/2 c. sour cream
1/8 tsp. garlic powder
1/8 tsp. crushed red pepper, optional
1/2 c. pizza sauce
1 (3 oz.) pkg. pepperoni, chopped
1/4 c. green onions, sliced
1/2 c. Mozzarella cheese, shredded
Assorted crackers or vegetables for dipping

Directions
Mix cream cheese, sour cream and spices together. Spread in a 9 or 10 inch pie plate. Spread pizza sauce on top. Sprinkle with pepperoni and green onion.

Bake at 350 degrees for 10 minutes. Top with mozzarella. Bake 5 minutes more or until cheese is melted and dip is heated through. This can also be microwaved. Assemble dip completely and microwave 7 minutes at full power.

Prosciutto Appetizer Cups Recipe

Ingredients
1 (10 oz.) pkg. frozen chopped spinach
8 oz. ricotta cheese
1/2 c. grated Parmesan cheese
1 c. chopped mushrooms (fresh or canned)-If using canned, drain very well.)
2 tbsp. minced onion
1/4 tsp. oregano
1/4 tsp. salt
1 egg, slightly beaten
12 thin slices prosciutto or peppered ham

Directions
Cook spinach; drain well. In medium bowl, combine spinach, Parmesan, mushrooms, onions, oregano, salt and egg. Spray miniature muffin tins with Pam. Cut prosciutto into quarters. Press 1/4 slice into muffin tin, pressing against bottom and sides. Spoon cheese mixture into cup about 2/3 full. Bake 20-25 minutes in preheated 375 degree oven. Remove. Can be frozen.

This is the overnight rolls I make every year for Christmas morning. The family loves them and they turn out perfect every time.

Judy's Caramel Rolls Recipe

Ingredients
2 loaves frozen bread dough
1 tsp. cinnamon
1/2 cup granulated sugar
1/2 cup butter
3/4 cup vanilla ice cream
1 cup brown sugar

Directions
Thaw bread dough (takes about 4 hours) and cut each
loaf into 16 pieces. Combine granulated sugar and cinnamon
and roll each cube of dough in the mixture. Place in a greased
13 x 9 inch pan. Sprinkle with remainder of sugar-cinnamon mixture.

Melt butter, ice cream and brown sugar over low heat, stirring; pour over rolls in pan. Cover with plastic wrap and place in refrigerator overnight. Bake at 350 for 30 to 40 minutes, or until deep golden brown. Invert onto large platter. Serve warm.

NOTE: The original recipe only calls for 1/2 tsp. cinnamon, but I
double that. You can also put the cinnamon-sugar mixture in a
large plastic bag and toss a few cubes of dough at a time in it,
to save time. It didn't say to, but I use up the leftover cinnamon-sugar by sprinkling it on top the rolls. I put it together about 4:pm to have it ready by 10 Christmas morning.

A friend shared this recipe with me many years ago, and it's just so delicious! Very quick to assemble and goes down quickly too!

Judy's Butter Brickle Dessert Recipe

Ingredients
1-3/4 cups vanilla wafer cookie crumbs
1/4 cup melted butter
2 cups cold milk
2 pkgs. (4 serving size) vanilla instant pudding
4 cups (i quart) butter brickle ice cream, softened
1 (8 oz.) container Cool Whip
3 Heath candy bars, crushed

Directions
Combine vanilla wafer crumbs and melted butter; press into 9 x 13 inch baking pan. Bake at 375 for about 10 minutes, or until golden brown. Cool. Beat pudding and milk together until thickened, on low speed of electric mixer, or rotary hand beater. Mix in softened ice cream and pour over cooled crust. Chill until firm. Top with Cool Whip and crushed candy bars. Chill until serving time.

This is such a tasty dish, and an excellent way to use up some of the leftover Christmas ham. Am sure you could use Cheddar cheese in place of the American.

Measure Cornflakes after they are crushed (takes about 4 cups).

Hash Brown and Ham Casserole Recipe

Directions
2 cups (16 oz.) dairy sour cream
1 can cream of chicken soup, or any cream soup
32 ox. pkg. frozen hash browns
2 cups cubed ham (I use more)
2 cups (8 oz.) American cheese, cubed
1/4 cup chopped onion
2 cups crushed Cornflakes
1/2 cup butter, melted
1 cup (4 oz.) Mozzarella cheese, grated

Directions
In large bowl, combine sour cream and soup. Stir in frozen hash browns, ham, American cheese and onion. Turn into a 9 x 13 inch pan. Combine cereal and butter; sprinkle on the top of potatoes. Sprinkle with Mozzarella cheese. Bake 45 to 50 minutes at 350 till bubbly and well heated through.

Fruitcake Recipe

Ingredients
3 cups all purpose flour
1 TB baking soda
1 TB ground cinnamon
1/2 tsp salt
1-1/2 cups light brown sugar
3/4 cup softened butter
3 large eggs
3 cups warm applesauce
2 cups chopped dates
1-1/2 cups skinned hazel nuts chop some
1 cup candied cherries
1/2 cup apple brandy

Frosting:
6 oz white chocolate melted
8 oz softened cream cheese
1/2 cup butter
1 tsp vanilla
3 cups powdered sugar

Directions
Several days before serving, make cake. Grease and flour 2 9 inch oval or round cake pans. In bowl of electric mixer, mix flour, baking soda, cinnamon and salt. Add eggs, sugar, butter and 1 1/2 cups applesauce; beat 2 minutes. Add remaining applesauce beat for 1 minute. Fold in fruits and nuts . Pour into pans. Bake for 55 minutes or until done.

Cool in pans 15 minutes; invert onto rack. Cool completely. Brush with Apple brandy. Wrap well with cheesecloth, refrigerate.

Frosting:
Make frosting in bowl, with portable mixer beat all ingredients except sugar until fluffy; then beat in sugar. Place bowl in a bowl of ice water, beat frosting until firm. On cake dish place one cake layer. Cover top of that layer with some frosting. Place next cake layer on top and ice the whole cake. Put on any decoration you like.
