A German and Pennsylvania Dutch tradition is to eat pork and sauerkraut (and cabbage) on New Year's day for good luck.

New Years Boiled Pork Cabbage and Potatoes Recipe

Ingredients
1 lb. ground pork
2 c. beef broth
1 tsp. salt
1/2 tsp. nutmeg
1/2 sm. cabbage, cut in 1/2-inch
slivers
3 lg. potatoes, cut in 1/2-inch slices
Raw carrots, shredded
Parsley, chopped

Directions
Combine first 4 ingredients and beat well. In large, heavy saucepan or Dutch oven, 4- to 5-quart, make a layer of half the cabbage and spread half the meat mixture on top. Add potatoes, spread with remaining meat mixture and top with remaining cabbage. Bring to a boil over medium heat. Reduce heat, cover and simmer very slowly 45 minutes, or until potatoes are very tender. Garnish with carrots around edges and parsley in center.
Makes 6 servings.

New Years Fried Cabbage Recipe

Ingredients
1/4 lb. lean salt pork, cut in cubes, I have used pork chops cut into cubes.
1 head cabbage, cored and cut into
1/2 to 1 inch strips
Caraway seeds
1/2 pkg. elbow macaroni
Pimentos

Directions
Cut lean salt pork into 1/4 inch cubes and fry in skillet until golden brown. Cook in salt pork fat the cored and cut up cabbage until cooked, along with teaspoon caraway seeds and 2-3 cut up pimentos. Set aside when done. In small pan cook elbow macaroni, drain water after macaroni is cooked and add to the salt pork and cabbage.

New Years Pork Chops with Cabbage and Potatoes Recipe

Ingredients
4 pork chops, about 1/2" thick
1-1/2 tsp. salt
1/8 tsp. pepper
1/4 c. chopped onion
1 can condensed cream of celery soup
1/2 c. milk
3 med. potatoes, pared & sliced
1 lb. shredded cabbage
1/4 c. flour

Directions
Cut excess fat from pork chops. Season with salt and pepper. Grease skillet very lightly. Brown chops on both sides over moderate heat, about 15 minutes. Remove chops. Pour off fat. Measure 2 tablespoons fat into skillet. Add onion, celery soup and milk. Stir to blend well. Put 2 alternating layers of potatoes and cabbage in 2 1/2 quart casserole. Sprinkle each layer with flour and pour about 1/4 of celery-milk mixture over each layer. Top with chops. Cover and bake in moderate oven (350 degrees) for 1 hour and 15 minutes.
Serves 4.

Sweet and Sour Stuffed Cabbage Recipe

Ingredients
1 jar or can sauerkraut, well drained
1 sm. onion, chopped and sautéed
2 tbsp. brown sugar or 1 sm. jar applesauce
1 1/2 c. water
1/4 tsp. salt
2 tbsp. butter
1/2 c. rice (not instant)
1 head cabbage
1 lb. ground beef
1/2 lb. ground pork
2 slices crustless white bread
1/2 c. milk
1 egg
1 tsp. salt
1/4 tsp. pepper
Garlic
1 onion, chopped

Sauce
1 can tomato soup
1 (16 oz.) can stewed tomatoes
2 tbsp. lemon juice
2 tbsp. brown sugar

Directions
Mix sauerkraut, sautéed onion and either brown sugar or applesauce. In saucepan, bring water, 1/4 teaspoon salt and butter to boil. Add rice, remove from heat and cover. Let stand 30 minutes. Meanwhile, core and steam cabbage just until leaves are no longer crisp. Mix together beef, pork, bread, milk, egg, 1 teaspoon salt, pepper, garlic and chopped onion. Add rice to meat mixture. Roll up cabbage leaves with some meat mixture inside. Shred remaining cabbage. On bottom of baking pan, lay shredded cabbage and some of the sauerkraut mixture. Layer cabbage rolls and sauerkraut mixture. Mix together sauce ingredients and pour over all. Bake covered for about 1 1/2 hours in 350 degree oven. Uncover and bake another 30 minutes or until done.

New Years Pork Chops and Sauerkraut Casserole Recipe

Ingredients
1 large can sauerkraut
1 large potato
1/2 large onion
1 lb. pork chops
2 tsp. brown sugar
1/2 can beer

Directions
Layer in casserole. Pour beer on top. Bake at 325 degrees for 2 hours.

I need some ideas for an adult New Years Eve party.

I have been to a lot of interesting and fun New Years parties. The one where I had the most fun was when everyone got out paper money out of our purses or pockets. We all put our paper money on the floor and stomped on the money as we told it, "I own you, you don't own me." We all had so much fun stomping and telling our money it didn't own us. We all laughed and giggled as we told our money what we thought of it.

New Years German Sweet and Sour Pork Chops and Kraut Recipe

Ingredients
6 center cut pork chops
1 can tomato soup
1 can water
1 c. light brown sugar
1 large can sauerkraut

Directions
Drain juice from sauerkraut. Place in bottom of oblong baking dish. Place pork chops over kraut. Mix and pour over top the tomato soup, water and brown sugar.
Bake 1-1/2 hours at 350°.

New Years Stovetop Pork Chops and Sauerkraut Recipe

Ingredients
6 pork chops
salt and pepper
3 c. sauerkraut
4 Tbsp. paprika
1-1/2 c. canned tomatoes
3 large potatoes, sliced and parboiled
1 Tbsp. brown sugar

Directions
Sprinkle chops lightly with salt and pepper; flour on both sides. Brown in a heavy skillet; then arrange a layer of kraut, then a layer of potatoes with a layer of kraut on top. Sprinkle with paprika and brown sugar. Pour tomatoes over top. Cover and cook slowly on top of stove for 40 to 45 minutes or until chops are very tender.
Makes 6 Servings

New Years Pork Ribs and Kraut Casserole Recipe

Ingredients
3 lb. pork ribs, cut up
1 (27 oz.) can sauerkraut
1 c. shredded carrot
1 1/2 c. tomato juice
2 Tbsp. brown sugar
2 tsp. caraway seed

Directions
Combine in covered pan. Bake at 375° for 2 hours.

Sausage and Sauerkraut Casserole Recipe

Ingredients
2 c. uncooked elbow macaroni
1 lb. bulk pork sausage
1 (16 oz.) can tomatoes with liquid, cut up
1 c. sauerkraut
1 tsp. sugar
4 to 5 Tbsp. shredded Cheddar cheese

Directions
Cook macaroni according to package directions. Meanwhile, brown sausage in a skillet; drain, reserving 1 tablespoon drippings. Add tomatoes and sauerkraut to pork and cook for 2 minutes. Drain macaroni; stir into skillet along with cheese.

Spoon into a greased 8-inch square baking dish. Bake, uncovered, at 350° for 20 minutes.
Makes 4 to 6 servings.

New Years Bavarian Kraut and Pork Ribs Recipe

Ingredients
2 large cans Bavarian style sauerkraut
1 or 2 slabs pork ribs

Directions
Layer separated ribs on top of sauerkraut in baking pan. Bake at 375° until ribs are tender.

New Years Crockpot Sauerkraut and Noodles Recipe

Ingredients
2 lb. pork sausage
2 c. sauerkraut, drained
2 Tbsp. brown sugar
1 tsp. celery seed
2 1/2 (5 oz.) pkg. medium noodles
2 c. beef broth
3/4 c. buttered crumbs

Directions
Form sausage into 12 patties; brown on both sides. Cook noodles in boiling water as directed on package. Drain and mix with 2 tablespoons pork fat. Spoon the noodles into buttered 11 3/4 x 7 1/2 x 1 3/4-inch rectangular dish. Mix sauerkraut with brown sugar and celery seed. Place on top of noodles. Place sausage on top. Pour beef broth over all and sprinkle top with buttered bread crumbs. Place, uncovered, on rack in large electric skillet preheated to 400°. Bake for 1 hour. Have skillet covered and vents closed.
Makes 4 to 6 servings.

New Years Pork and Applesauce Casserole Recipe

Ingredients
2 lb. country style pork ribs
1 Tbsp. oil
14 oz. sauerkraut (undrained)
2 tsp. caraway seed
1/2 tsp. pepper
1 medium onion, chopped
1 c. applesauce
2 Tbsp. brown sugar
1 tsp. garlic powder

Directions
In a Dutch oven, cook ribs and onion in oil until ribs are browned and onion is tender. Remove from heat. Combine remaining ingredients and pour over ribs. Cover and bake at 350° for 1 1/2 to 2 hours or until ribs are tender.
Makes 4 servings.

Three New Years Recipes for Luck
I have three recipes we use on New Years to bring luck..

Black-Eyed Pea Fritters Recipe

Ingredients
1 (14 ounce) can black-eyed peas
2 Tbsp. mayonnaise
1 medium onion, grated
1/2 green bell pepper, finely chopped
1/2 c. self-rising flour

Directions
Drain the black-eyed peas and mash with potato masher. Combine all other ingredients; stir well and drop by full teaspoons in hot oil in skillet. Brown well.
Note: If you like it spicy use black-eyed peas with jalapenos.

Aunt Bill's Good Luck Hoppin' John Recipe

Ingredients
4 to 6 slices bacon
1 c. chopped onion
1 c. chopped green pepper
1 c. chopped celery
1 (14 oz.) can tomatoes, drained and chopped
1 (16 oz.) can black-eyed peas
1 bay leaf
2 to 3 tsp. sugar

Directions
Cook bacon in skillet until crisp. Remove bacon, keeping drippings in pan. Sauté onion, peppers and celery in drippings until tender. Stir in remaining ingredients. Add about 1 cup of water. Cook over medium to low heat for 20 minutes, stirring occasionally. Remove bay leaf. Sprinkle with crumbled bacon. Serve with homemade cornbread.


New Years Good Luck Dip Recipe

Ingredients
1 (14-16 ounce) can black-eye peas
1 (14-16 ounce) can jalapeno black-eye peas
1 small can Ro-Tel tomatoes
Tostitos

Directions
Mix peas and tomatoes. Serve with Tostitos as they have just the right amount of salt.

This is for the person who requested a meatball recipe using jelly.

Barbecued Glazed Meatballs Recipe

Ingredients
1 lb frozen meatballs
1-12 oz jar current or grape jelly
1 cup barbecue sauce

Directions
Combine jelly and barbecue sauce in a large saucepan. Cook and stir over medium heat until jelly melts.

Add meatballs. Heat over medium-low heat 15 minutes or until meatballs are hot and glazed, stirring occasionally. Serve on a pre-warmed platter or crock pot.
Serves 16 at 2 meatballs each.

Here is another meatball recipe that is quite good although it doesn't use jelly.

Holiday Meatballs Recipe

Ingredients
1 lb. Frozen meatballs
1 can 14 oz. jellied cranberry sauce
1/2 cup brown sugar
1 Tbs. Dijon mustard
1/2 cup red wine

Directions
Mix cranberry sauce, brown sugar, Dijon mustard and wine in a small bowl and pour over meatballs. Simmer, covered, 30 minutes or until thoroughly cooked. Great served in a slow cooker. Serves 6 (3 per person).

Here is another great casserole using spinach. If you are unfamiliar with polenta (Polente or Poleinte in France) it is cornmeal boiled into a porridge, and eaten directly or baked, fried or grilled. The term is of Italian origin.
Polenta can be cooked to be creamy and thick, or allowed to set and then sliced. Serve it instead of pasta, rice or potatoes. It can also be Use in place of breadcrumbs. Those who need a gluten free diet often substitute it for pasta.

Cheese and Spinach Polenta Bake Recipe

Ingredients
1 tablespoon olive oil
1 onion, chopped
2 cloves of garlic, peeled and finely chopped
10 ounces mushrooms, cleaned, stemmed, and chopped into 1/4-inch pieces (about 2 cups)
1 cup frozen chopped spinach
1/2 cup fresh or frozen corn kernels
2 tubes precooked polenta
2-1/2 ounces plain or herbed goat cheese- can use other cheeses
1 cup shredded sharp cheddar cheese

Directions
Preheat the oven to 400° F. Lightly oil an 8 x 10-inch (or similar sized) baking dish. Set aside.

In a large skillet, warm the oil over medium-high heat. Add the garlic and onions and sauté until aromatic, about 30 seconds. Add the mushrooms, and sauté until they are tender and begin releasing their juices, about 2 to 3 minutes. Continue to cook the mushrooms until the juices reduce, about 2 minutes more. Add the spinach and corn, stirring occasionally, until cooked through, about 5 minutes. Remove from the heat and set aside.

Slice each tube of polenta into 12 even rounds. Line the bottom of the baking dish with 12 rounds (don't worry if there's space between the rounds). Spoon all of the mushroom mixture over the polenta rounds and smooth the top with a spatula. Crumble the goat cheese evenly over the mushrooms, and sprinkle with half of the cheddar cheese.

Top the casserole with the remaining 12 polenta rounds. Sprinkle evenly with the rest of the cheddar cheese. Cover the casserole with a lightly oiled piece of foil. Bake for 20 minutes. Remove the foil and bake for 5 more minutes, or until the cheese is bubbly and browned in spots. (Alternatively, if your baking dish is broiler-safe, you can broil the casserole for 2 to 3 minutes.) Allow the casserole to rest for 5 minutes before serving.

Kwanzaa Celebration Cake Recipe

Ingredients
1 (10 to 12-ounce) purchased angel food cake
1 container (16 ounce) vanilla frosting
2 tablespoons unsweetened cocoa powder
2 teaspoons pure vanilla extract
1 teaspoon ground cinnamon
1 (21-ounce) container apple filling or topping
1 (1.7-ounce) package corn nuts
1/2 cup pumpkin seeds, toasted
1/2 cup popped popcorn

Directions
Using a serrated knife, cut cake horizontally into 2 layers. Place bottom cake layer, cut side up, on a serving platter. Mix frosting, cocoa powder, vanilla, and cinnamon in large bowl until combined. Spread about 1/4 of the frosting over top of cake layer on platter. Top with second cake layer, cut side down. Spread remaining frosting evenly over top and sides of cake to coat completely. Spoon apple pie filling into hole in center of cake. Place candles atop cake. Sprinkle top of cake with some corn nuts, pumpkin seeds, and popcorn. Sprinkle remaining corn nuts and pumpkin seeds around base of cake.

Manhattan Meatballs Recipe

Ingredients
2 lbs. ground beef
1 lb. hot sausage
3 eggs
2 tsps. salt
6 slices bread crumbled
3/4 cup finely chopped onion
3 tbsp. chopped fresh parsley
1 tsp. garlic powder

Sauce
12 ounce bottle chili sauce
4-6 ounce jar grape jelly
1/2 cup water

Directions
Combine meat with other ingredients. Mix lightly and shape into 1 to 1 1/2 inch balls. Brown on cookie sheet in oven at 350 degrees for 20-25 minutes.

Sauce
Mix ingredients in saucepan and bring to a boil. Add meatballs. Reduce to simmer and cook for 20 minutes. Best if refrigerated overnight and reheated before serving.

Note: May also be cooked in spaghetti sauce and served over spaghetti or as meatball sandwiches.

Diabetic Raspberry Peach Delight Recipe

Ingredients
1 -prepared 8-in angel food cake cut into 1-in cubes (SUGAR FREE)
1 (.3 oz pkg.) of sugar-free raspberry Jell-O
1 cup boiling water
1 cup cold water
1-16oz can light peach slices
3 cups fat free milk
1-1.5oz pkg. sugar-free vanilla pudding
1-8oz. carton of light or fat free Cool Whip (I use the free)

Directions
Arrange cake cubes on the bottom of a 9x13 pan. Dissolve Jell-O in boiling water then stir in cold water. Pour Jell-O over cake. Arrange peaches over Jell-O. Mix together milk and pudding; spread over peaches.
Top with Cool Whip(FREE). Refrigerate at least 2 hours before cutting
