Lemonade PiePink Lemonade Pie Recipe

This recipe is made in three parts: a graham cracker crust, a lemonade (or other juice concentrate), and cream cheese filling, and a whipped cream topping.

For the Crust
1-1/2 cups graham cracker crumbs
1/4 cup sugar
4 tablespoons butter

Mix the crumbs, sugar, and butter in a nine inch pie pan or spring form pan. Mix until the crumbs have absorbed the butter and the mixture is uniform.

Press the crumbs across the bottom of the pan and up the sides. We've found using a drinking glass to press the crumbs up the sides works well.

Bake for eight to ten minutes at 350 degrees. (If it’s a hot July day, you can choose not to bake the crust. A baked crust holds together better because the heat melts the sugar to help hold the crumbs together.)

For the Filling
1 8-ounce packet of cream cheese, softened
1 14-ounce can sweetened condensed milk
3/4 cup pink lemonade concentrate (not mixed with water)
2 tablespoons lemon juice (fresh or bottled)
AmeriColor Red Red food coloring or equal

Using the whip attachment and your stand-type mixer or with a handheld electric mixer, mix the cream cheese until softened. Pour in the sweetened condensed milk very slowly while mixing to avoid clumps, scraping the bowl as you go.

Slowly add the lemonade concentrate and lemon juice and continue beating. Color with red food coloring as desired.

Pour the mixture into the pie shell or springform pan and place it in the freezer while you mix the topping.

For the Topping
1/3 cup shredded coconut
red food coloring
1 cup whipping cream
3 tablespoons sugar
1 teaspoon vanilla extract

Place the coconut in a small plastic zip top bag. Add a drop of food coloring and seal
the bag, trapping air inside. Shake until the coconut turns pink.

Whip the cream until stiff, adding the sugar and vanilla in the process.  Wait until the pie filling is slightly stiff on top, and gently spoon the cream over the pie filling. Garnish with the pink coconut.

Freeze the pie until firm. Slice the pie with a warm, wet knife for smooth cuts.

About the Food Coloring
Regardless of the juice concentrate you use, you’ll want to intensify the color with the addition of food color. We recommend Americolor Professional Food Color Gels.

They’re bright, intense—nine times more concentrated than liquids—and easy to apply. They come in 40 colors. The pink pie in the picture was tinted with three drops of Red Red—a great strawberry color.

Valentine Breakfast in Bed Ideas

Here are a dozen quick and easy ideas to make the breakfast in bed occasion a little easier.

Pancakes are always easy—especially with a mix. You can make them special with a topping or by adding something as a filling. Cranberries, nuts, applesauce, or chocolate chips are popular considerations.

French toast is always easy. Add a little extra cinnamon or nutmeg and maybe some vanilla extract or orange flavoring.

Scrambled eggs can be quick and easy. Make it special with bacon bits and cheddar, or sausage, or sautéed vegetables. Nearly anything that you can do to an omelet, you can do to scrambled eggs.

Strawberries and cream make for an elegant but easy breakfast dish.

You can make a bowl of old-fashioned oatmeal in the microwave. Add dried cherries, pineapple, or nuts to make the cereal special.

Pick a granola that he or she likes and serve it as a cereal.

Cut fresh fruit and present it in an attractive bowl or on a platter.

Pick up hot bagels and different flavors of cream cheese.

Make muffins from a mix.

Try broiling a grapefruit half topped with a sprinkling of brown sugar.

Consider a fruit smoothie. Use your blender and his or her favorite fruit--fresh or frozen--along with a scoop of ice cream and a little extract.

When all else fails, pick up a coffee cake or a pastry from the bakery. Better yet, use a mix and make it yourself.

Two Ingredient Fudge
This would make a really easy Valentine's Day Fudge. It has two ingredients in it. The ingredients are a package (12 ounce) of real chocolate chips. Melt the chips in the microwave until it is stirable. Add a can of cake frosting. Stir it up. Pour into a lightly greased 8 by 8 inch pan. Place in refrigerator and let set until firm. Cut into pieces. I usually keep mine in the refrigerator after cutting into pieces.Note: Doesn't work well with whipped frosting. Use real chcoloate chips.

Variations for the Two Ingredient Fudge
-Chocolate chips/chocolate frosting
-Chocolate chips/vanilla frosting
-Peanut butter chips/chocolate frosting
-Mint chocolate chips/chocolate frosting
-Cherry chips/chocolate frosting
-Vanilla chips/any flavor frosting
-Vanilla frosting/any flavor chips

Lemon Fudge:
1 can lemon frosting
1 pkg white or vanilla chips
crushed lemon drops

Melt the chips in the microwave for 90 seconds, stirring after 60 seconds. Add the lemon frosting and microwave again for 90 seconds stirring after 60 seconds. Place in an 8 or 9 inch greased pan and cool. When set, form into small balls and roll in
crushed lemon drops

Strawberry Valentine Mousse Recipe

1 (10 ounce) package frozen sweetened strawberries
1/2 cup sour cream
1/2 sup sugar
1 teaspoon vanilla extract

Process all ingredients in a blender or a food processor until smooth. Pour into a metal pan, cover with foil or plastic wrap and freeze. Serve in sherbert glasses.

Chocolate Valentine Cake Recipe

1 (8 oz.) pkg. cream cheese, softened
1 c. melted butter
1-1/2 tsp. vanilla
2 lbs. sifted powdered sugar
1-1/2 c. milk
6 squares (6 oz.) unsweetened chocolate, melted & cooled
3 eggs
2 c. all-purpose flour
1-1/4 tsp. baking soda
1 tsp. salt
1-2 tsp. milk

In a large bowl beat cream cheese, 3/4 cup butter and vanilla. Alternately beat in sugar and 1/4 cup milk. Stir in 4 squares melted chocolate. Save 3 1/2 cups mixture for frosting. Chill. Stir 2 squares melted chocolate into remaining mixture. Beat in 1/4 cup butter and the eggs. In medium bowl combine flour, soda and salt. Beat into chocolate mixture alternately with 1 1/4 cups milk. Turn into 2 greased and floured heart shaped pans or 9" x 1 1/2" round cake pans. Bake at 350 degrees for 30 to 35 minutes. Cool in pans 10 minutes. Remove; cool on wire racks. Let frosting stand at room temperature about 15 minutes. (If necessary stir in 1 to 2 teaspoons milk.) Frost cake and cool.

Valentine Refrigerator Cake Recipe

1 can Eagle Brand milk
1/4 cup lemon juice
1 cup sliced fresh strawberries
2 egg whites, stiffly beaten
24 vanilla wafers

In mixing bowl, blend milk and lemon juice. Stir til mixture thickens. Add strawberries. Fold in egg whites. Line loaf pan with wax paper. Cover bottom with strawberry mixture. Place a layer of vanilla wafers, a layer of strawberry mix, a layer of wafers and end with strawberry mixture. Chill for at least 6 hours. Turn out onto a small platter and remove wax paper. Cut in slices.
