Bisquick Cherry Crunch

2 c. Bisquick baking mix
2/3 c. sugar
3/4 tsp. cinnamon
1 egg
1/3 c. shortening
1 can cherry pie filling
Heat oven to 400 degrees. Mix all ingredients, except pie filling. Pat 2/3 of the dough in greased pan (9 x 9 x 2 inch). Spread pie filling over dough in pan. Crumble remaining dough over pie filling. Bake about 30 minutes. Serve warm.
Serves 9-12 Squares

Cherry Cream Scones Recipe

1/3 cup dried cherries
1/4 teaspoon cream of tartar
1/2 cup boiling water
1/4 cup butter at room temp.
1 + 1/2 cups all-purpose flour
1 + 1/2 Tbls. sugar
1 Egg, separated
1/2 tb Baking powder
1/4 cup Sour cream
1/3 cup + 1 Tbls. half-&-half cream
3/4 teaspoon Almond extract
1/4 teaspoon Salt
Soak cherries in hot water for 10 minutes & then drain & set aside. Combine the dry ingredients in a mixing bowl. Using a pastry blender, cut in the butter until mixture resembles coarse crumbs. Set aside. In a small bowl, mix together the egg yolk, sour cream, cream & extract. Add this to the flour mixture & stir until a soft dough forms. Mix in the cherries & then knead the dough lightly on a floured surface (just until dough can be h&led). Shape dough into a ball & pat into a 6-inch circle on a greased baking sheet. Cut into six wedges & brush with beaten egg white & then sprinkle with sugar. Bake at 400 for 15 to 20 minutes.

Cherry Popcorn Recipe

2 1/2 quarts air-popped popcorn
Butter flavored spray
1 small box cherry flavored gelatin

Put popcorn into a very large bowl and spray lightly with butter flavored oil. Sprinkle with gelatin. Put in 350 degree F oven for five minutes. Gelatin will dissolve slightly and stick to the popcorn.

Crock Pot Cherry Pork Chops Recipe

6 pork chops, cut 3/4 inch thick
1 (21 oz.) can cherry pie filling
2 tsp. lemon juice
1/2 tsp. instant chicken bouillon granules
1/8 tsp. ground mace
Brown pork chops in skillet. Sprinkle with salt and pepper. In crock pot stir together 1/2 of the can of cherry filling, lemon juice and bouillon granules. Mix well. Place pork chops on top of mixture. Cover and cook on low heat for 4 to 5 hours. Warm the other 1/2 of cherry filling and pass in sauce dish when serving chops.
Serves 6.

Cherry Cider Salad Recipe

2 cups apple cider or apple juice
6 ounces cherry gelatin (2 large packages)
1 lb. canned pitted black cherries, drained, halved, syrup reserved
1/2 cup celery, thinly sliced
1/2 cup chopped walnuts
3 ounces fat-free cream cheese, softened
1 cup applesauce

Bring cider to a boil in a saucepan over medium high heat. Remove from heat and stir in gelatin until dissolved. Add enough water to reserved cherry syrup to measure 1-1/2 cups and stir into gelatin. Set aside 2 cups gelatin mixture and cool to room temperature. Chill remaining gelatin until partially set (consistency of unbeaten egg whites). Fold cherries, celery and walnuts into partially set gelatin. Pour into a mold or 9 inch baking dish. Chill until almost firm. Gradually stir reserved gelatin into softened cream cheese, beating until smooth. Add applesauce and mix thoroughly. Spoon cream cheese mixture over cherry layer in mold. Chill until firm. Unmold onto a platter.
This Serves 8 people.

Crockpot Cherry Cobbler Recipe

1 can cherry pie filling (16 oz), regular or light
1 pkg. cake mix for 1 layer cake or sweet muffin mix
1 egg
3 T. evaporated milk
1/2 t. cinnamon
1/2 cup chopped nuts, optional

Put pie filling in lightly buttered 3 1/2 quart crock pot and cook on high for 30 minutes. Mix together the remaining ingredients and spoon onto the hot pie filling. Cover and cook for 1 to 3 hours on low, You may also use a lightly greased souffle dish in a larger crock pot.

Bing Cherry Pie Recipe

1 (14 ounce) can sweetened condensed milk
1/2 pint heavy whipping cream
2 lemons, juiced
1 cup chopped pecans
1 (16.5 ounce) can pitted Bing cherries, drained
1 (9 inch) prepared graham cracker crust

In a large bowl, combine condensed milk, lemon juice, pecans and cherries. In a separate bowl, whip cream to soft peaks, and fold into milk mixture. Pour into crust and chill in refrigerator for at least 4 hours before serving. Makes 1 - 9 inch pie

Cherry Snowball Cake Recipe

1 (8 oz.) pkg. cream cheese
2 c. confectioners sugar
1 (8 oz.) carton Cool Whip
1 can cherry pie filling
1 lg. Angel Food cake
1 can crushed pineapple

Cut cake in small pieces. Soften cream cheese. Add sugar and Cool Whip; mix well. Add drained pineapple to cream cheese mixture. Place half of cake in bowl. Add pie filling and a layer of cream cheese mixture. Add rest of cake. Top with remaining cream cheese mixture. Spread evenly.

Cherry Cheese Pie Recipe

Pastry for two 9" pies, unbaked
8 oz. pkg. cream cheese, softened
1/2 c. (each) sugar, chopped nuts
2 eggs
1 tsp. vanilla
21 oz. can cherry pie filling

Roll pastry to fit 12" pizza pan; line pan with pastry. Bake 350 degrees for 15 minutes, set aside. Combine cheese, sugar, eggs and vanilla; stir in nuts. Pour over pastry; bake for another 15-20 minutes then cool. Top with pie filling; slice and serve with whipped cream. 10-12 servings.

Cherry Oat Squares Recipes

1/3 c. sugar
1 c. chopped walnuts or pecans
1 c. quick or old fashioned oats
1/2 c. (1 stick) margarine or butter
3/4 c. all-purpose flour
1/2 tsp. cinnamon
1 (21 oz.) can Comstock cherry pie filling

Preheat oven to 400 degrees F. In large bowl, mix sugar, nuts, oats, margarine and flour until crumbly. Reserve 1-1/2 cups. Press remainder into bottom of 9 inch square baking dish. Stir cinnamon into cherry filling. Spread over crust. Sprinkle reserved crumbs over top, pressing in lightly. Bake for 20 to 25 minutes or until lightly browned. Cut into squares. Preparation time: 10 minutes. Baking time: 25 minutes.

German Chocolate Cherry Brownies Recipe

1 pkg. German chocolate cake mix
1 can coconut & pecan frosting
1 can cherry pie filling
1 egg
4 tbsp. butter or oleo

Put all ingredients into medium size bowl. Mix well with wooden spoon, until evenly mixed. Pour into 9 x 13 inch pan and spread evenly. Bake at 350 degrees for 30 to 40 minutes. Remove from oven and pour 1 cup chocolate chips on top. Let stand for 5 minutes. Then spread chocolate chips evenly over brownies. Let cool completely before cutting.

Cherry Almond Glaze Recipe

1 (12 oz.) jar cherry preserves
1/4 c. vinegar
2 tbsp. corn syrup
1/4 tsp. ground cinnamon
1/4 tsp. ground cloves
1/4 tsp. ground nutmeg
1/3 c. slivered almonds
3 tbsp. water

In a saucepan, combine all ingredients except almonds and water. Bring to a boil. Reduce heat; simmer 2 minutes, stirring frequently. Stir in the almonds. About 15 minutes before ham is done, spoon 1/4 to 1/3 cup glaze over ham. Repeat if desired. Stir water into remaining glaze; heat through and serve with ham.
Makes 1-1/2 cups glaze.

Meatballs in Cherry Sauce Recipe

2 pounds ground chuck
1 large onion, grated
1 egg
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon Oriental 5 spice seasoning

3/4 cup chopped cherry jam or cherry jelly
1 12 ounce bottle chili sauce
1 to 1 1/2 tablespoons lemon juice
cherry juice

Combine meatball ingredients. Make into 1 inch balls and place in frying pan. Combine cherry jam, lemon juice and chili sauce and pour over meatballs. Simmer 30 minutes, stirring occasionally and adding cherry juice to make a thinner sauce if desired. Serve over rice.

Cherry Upside Down Cake Recipe

7 tablespoons unsalted butter
1 cup packed brown sugar
2 large eggs
1 cup granulated sugar
1/2 cup milk
1 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 cups pitted sweet cherries*

In large oven proof skillet, melt 5 tablespoons butter; add brown sugar and cook until dissolved; remove from heat. Heat oven to 375F. In large bowl, beat eggs and granulated sugar until pale yellow; about 4 minutes. Melt remaining 2 tablespoons butter in milk; set aside. Sift together flour, baking powder and salt. Add flour mixture and warm milk mixture to eggs and sugar, beating on low just until smooth batter forms. Sprinkle cherries in an even layer over brown sugar in pan; pour batter over cherries and bake 40 minutes or until cake tester inserted in center comes out clean. Immediately invert cake onto large platter; serve warm.

Cherry Oatmeal Cookies Recipe

1 cup flour
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 cup sugar
1 egg
2 tablespoons milk
3/4 cup dried cherries
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup brown sugar
1/2 cup shortening
1 teaspoon vanilla
2 cups oatmeal

Preheat oven to 350F. In a large mixing bowl, combine flour, baking soda, salt, cinnamon, nutmeg, brown sugar and sugar. Mix well. Add shortening, egg, vanilla, and milk; blend well. Add oats; mix well. Add cherries; mix well. Drop dough by tablespoonfuls on ungreased baking sheet. Bake 12 to 14 minutes. Store cooled cookies in an airtight container.
Makes about 2-1/2 dozen cookies.

Cherry Glazed Pork Roast Recipe

4 lb. pork loin roast, rolled, boned and tied
1 (12 oz.) jar cherry preserves
2 tbsp. light corn syrup
1/4 c. red wine vinegar
1/4 tsp. salt
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
1/4 c. slivered almonds, toasted

Rub roast with a little salt and pepper. Place on rack in shallow baking pan. Roast uncovered at 325 degrees for 2 1/2 hours. Meanwhile, combine cherry preserves, corn syrup, vinegar, salt, cinnamon, nutmeg, and cloves. Heat to boiling, stirring frequently. Reduce heat and simmer 2 minutes. Add almonds and keep sauce warm. When pork has roasted 2 to 2 1/2 hours, spoon enough hot cherry sauce over roast to glaze. Return to oven for almost 30 minutes. Baste roast with sauce several times during last 30 minutes. Pass remaining sauce with meat when serving.

 Baked Ham Slices with Cherry Sauce

2 slices ham
1/2 c. brown sugar
1 tsp. cornstarch
1 (#2) can cherries
2 tsp. currant jelly
1 tsp. cinnamon
1 tsp. cloves

Put into saucepan sugar, cornstarch, and juice from a can of cherries; cook until thick. Add cherries, jelly, and spices. Heat to boiling. Put ham into a baking dish. Pour on some of the sauce, then lay the other slice on top. Spoon the rest of the sauce on top.

Ham Balls with Cherry Sauce Recipe

1 beaten egg
3 tbsp. milk
1/3 c. fine dry bread crumbs
Dash pepper
1-1/2 lbs. ground fully cooked ham
2 tbsp. shortening
1/4 c. water
1 (21 oz.) can cherry pie filling
2 tbsp. water
1 tbsp. lemon juice
1/2 tsp. ground cinnamon
Dash ground cloves

In a bowl combine egg, milk, bread crumbs, and pepper. Add ham; mix well. Shape mixture into meatballs. In a skillet brown meatballs in hot shortening, shaking pan often to keep balls round. Drain off fat. Add the 1/4 cup water. Simmer, covered 15 to 20 minutes, turning occasionally. Meanwhile, heat pie filling with the 2 tablespoons water, lemon juice, cinnamon and cloves. Pour some over meatballs. Pass the rest.

Cherry Barbecue Sauce Recipe

2 cups pitted and halved fresh sweet cherries
2 tablespoons orange juice
2 tablespoons sherry
1 tablespoon sugar
1 teaspoon grated orange peel
3/4 teaspoon Dijon style mustard
1/4 teaspoon salt
3 drops aromatic bitters, optional
1 tablespoon cold water
2 teaspoons cornstarch

Combine cherries, orange juice, sugar, orange peel, mustard, salt and bitters. Cover and simmer gently 5 minutes. Combine water and cornstarch; stir into cherry mixture. Cook and stir until thickened and clear. Sauce may be stored up to a week in the refrigerator. Serve with barbecued poultry, ham or assorted specialty sausages.

Marshmallow Cherry Squares Recipe

4 cups miniature marshmallows
1 (18.25-oz.) package yellow cake mix
1 (21-oz.) can cherry pie filling
Directions: Preheat oven to 350 degrees. Spray a 13x9x2-inch baking pan with PAM. Place the marshmallows evenly in the bottom of the pan. Prepare cake mix according to package directions. Pour batter over marshmallows. Spoon cherry filling evenly over cake batter. Bake for oven 45 to 50 minutes. The top of the cake will be bubbly and the marshmallows will be sticky on top of the cake. Let cool in the pan, then cut into squares.

Cherry Pound Cake Recipe

2 sticks margarine
1/2 c. Crisco
3 c. sugar
3 1/2 c. plain flour
6 eggs
3/4 c. sweet milk
1 tsp. vanilla or lemon flavoring
1 tall jar cherries
8 oz. cream cheese

Mix together and bake for 2 hours at 275 degrees.

Cherry Spiced Cider Recipe

1 quart apple cider
3/4 cup orange juice
1/4 cup maraschino cherry juice
1 3 inch stick cinnamon
1 strip 1/2 x 3 inches orange peel
3 whole cloves
3 whole allspice
16 maraschino cherries
8 orange slice halves

Put apple cider, orange juice, maraschino cherry juice, cinnamon sticks, orange peel, cloves and allspice in a large saucepan; bring to a boil. Reduce heat; simmer 15 minutes. Strain out cinnamon sticks, orange peel, cloves and allspice. Place 2 maraschino cherries and 1 orange slice half in each of six mugs. Pour about 2/3 cup spiced cider over cherries. Serve warm.
Makes 8 servings.

Roasted Cauliflower with Curry Recipe
Low Carb

1 large head cauliflower, rinsed, cored, and broken into medium florets
3 tablespoons extra-virgin olive oil
1 tablespoon good-quality curry powder
1/2 teaspoon salt

Preheat the oven to 425° F.
Place the cauliflower florets in a large bowl. Drizzle with the olive oil, sprinkle with the curry powder and salt, and toss together until the florets are evenly coated.
Pour the cauliflower and any oil remaining in the bowl into a roasting pan or large baking dish, and spread the florets into a single layer.

Place the cauliflower in the preheated oven and roast, stirring occasionally, until cauliflower is tender and begins to caramelize, about 30 to 35 minutes. Enjoy!

Caramelized Cauliflower, Roasted Red Pepper, and Quinoa Salad
Serves: 4-6

1 small head cauliflower
1 tablespoon olive oil
¼ teaspoon salt
2 red peppers
½ cup quinoa
½ cup cilantro
3 tablespoons olive oil
3 tablespoons lime juice
2 tablespoons honey

Optional: Green onions, Goat Cheese, Pumpkin Seeds

Preheat oven to 425°. Cut cauliflower into bite-size florets. Toss with olive oil and salt. Place on a baking tray along with whole red peppers. Roast, turning/stirring occasionally, until cauliflower is caramelized and peppers charred: 25-35 minutes. Remove from oven and let cool slightly. Dice roasted red pepper.

Rinse quinoa and combine with 1 cup water in a medium pot. Bring to a boil, reduce to a simmer, and cook for until water is almost fully absorbed, about 12-15 minutes. Remove from heat, cover and let sit until remaining water is absorbed.
Combine quinoa, cauliflower, and roasted red pepper in a bowl. Mince cilantro and add to quinoa mixture.

To make dressing, combine olive oil, lime juice, and honey in a jar with liquid. Shake until combined. Pour on salad and toss until combined.
