Crockpot Barbecued Chicken Recipe

1 chicken, cut up
1 onion, chopped
10 ounces Coke
1 small bottle ketchup
3 tablespoons brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper

Put in crockpot in order listed. Stir once. Cook on low 6-8 hours.   Remove skin and bones before serving.

Crockpot Chicken Noodle Soup Recipe

1 pound boneless, skinless chicken thighs
1 tablespoon olive oil
2 stalks celery, with leaves, sliced
2 large carrots, chopped
1 onion, chopped
1 14 ounce can diced tomatoes, undrained
1 14 ounce can ready to serve chicken broth
1 teaspoon dried thyme leaves
1 9 ounce package frozen green peas
1 cup frozen homestyle egg noodles

Cook chicken in olive oil in heavy skillet, stirring frequently, for 5 minutes. Mix chicken and remaining ingredients except peas and noodles in a slow cooker. Cover and cook on low for 6 1/2 to 7 hours or until chicken is thoroughly cooked and no longer pink in
center. Stir in peas and noodles and cook 10 minutes longer until noodles are tender.
Serves 8.

Lemonade Chicken Recipe

4 to 6 pieces chicken
1 6 ounce can frozen lemonade, thawed
2 tablespoons brown sugar
3 tablespoons ketchup
1 tablespoon vinegar
2 tablespoons cornstarch
2 tablespoons cold water

Arrange chicken pieces in crockpot. Combine lemonade, brown sugar and ketchup and mix well. Pour over chicken. Cover. Cook on high 3 to 4 hours or low 6 to 8 hours.

Remove chicken from pot, cover to keep hot. Transfer liquid to saucepan. Skim fat; combine cornstarch and cold water and add slowly to liquid, while stirring over low heat. When thickened, serve with chicken over hot rice.

Chicken with Green Chiles Recipe

6 (4 ounce) skinless, boneless chicken breast halves
1-1/2 cups chopped onion
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
1 4.5 ounce can chopped green chiles, undrained
1 tablespoon vegetable oil
1 cup uncooked long grain rice
2 cups water
1 teaspoon salt

Coat large skillet with cooking spray; place over medium high heat until hot. Add chicken; cook 3 minutes on each side or until browned. Remove chicken from skillet; set aside. Recoat skillet with cooking spray. Add onion; saute until tender. Place chicken in a 4 to 5 quart slow cooker. Combine onion, soup and chiles; stir well. Pour over chicken. Cover with lid; cook on high heat setting 1 hour. Reduce to low heat setting; and cook 5 to 6 hours. Heat oil in a medium saucepan over medium high heat.

Add rice; saute 2 minutes or until rice is lightly browned. Gradually add water and salt; bring to a boil. Cover, reduce heat and simmer 20 to 25 minutes or until liquid is absorbed and rice is tender. Serve chicken and sauce over rice.

Chicken with Tomatoes and Mushrooms Recipe

2 pounds boneless skinless chicken breast
seasoned salt and pepper to taste
black olives, pitted
sliced mushrooms, drained
stewed tomatoes
2 cups tomato sauce mixed with 1 cup stock

Place chicken in crockpot; season. Add remaining ingredients. Simmer all day on low. Serve over rice.

Crockpot Brunswick Stew Recipe

1 chicken - (2-1/2 to 3 lbs)
2 Quarts water
1 onion, chopped
2 Cups cubed cooked ham
3 potatoes, diced
2 Cans tomatoes - (16 oz ea), cut up
10 Ounces frozen lima beans, partially thawed
10 Ounces frozen whole kernel corn, partially thawed
2 Teaspoons salt
1 Teaspoon sugar
1/4 Teaspoon freshly-ground black pepper
1/2 Teaspoon seasoned salt

In a crockpot combine chicken with water, onion, ham, and potatoes. Cook, covered, on LOW for 4 to 5 hours or until chicken is done.

Lift chicken out of pot; remove meat from bones. Return chicken meat to pot. Add tomatoes, beans, corn, salt, seasoned salt, sugar and pepper.

Turn control to HIGH. Cover and Cook on HIGH 1 hour. Serve in large individual bowls.

Crockpot Cola Barbecue Chicken Recipe

1 lg. whole chicken, uncooked
1 lg. bottle BBQ sauce (or your
own if you prefer)
1 med. onion
1 lemon
1 (10 oz.) coke

Place chicken in crockpot. Pour the sauce over the chicken. Slice the onion and lemon; pour the coke in the crockpot. Set on low and cook overnight. Try this with spareribs instead of chicken also.

Cranberry Chicken Recipe

4 to 6 chicken breast halves, skinless and boned
1 can whole cranberry sauce
2/3 cup chili sauce
2 tablespoons cider vinegar
2 tablespoons brown sugar
1 package dry golden onion soup mix

Place chicken breasts in the crockpot. Combine remaining ingredients; add to the crockpot, coating chicken well. Cover and cook on low 6 to 8 hours.
Serves 4 to 6.

Crockpot Chicken and Spaghetti Recipe

16 oz. spaghetti
4 chicken breast halves, skinned and boned
1/2 cup olive oil
2 large garlic cloves, minced
1/4 cup chopped fresh parsley
1/2 cup freshly grated Parmesan cheese

Cook pasta according to package directions; Drain and return to pot. Meanwhile, cut chicken breasts crosswise into 1/2" slices. Toss with 1T. of the oil. Heat remaining oil in large skillet. Add chicken and saute over medium high heat, stirring almost
constantly. Just before chicken is done, add garlic and cook, stirring constantly.

Remove form heat and stir in parsley. Pour into a sprayed slow cooked. Add pasta and cheese and toss to mix. If mixture seems a little dry, add additional oil or some of the hot pasta water. Cover and keep warm on low until ready to serve. Should keep at least an hour.

Crockpot Olive Chicken Recipe

3 to 4 lb. chicken, cut up
1/2 can beer
6 oz. can tomato paste
1 sm. jar stuffed olives with liquid
Salt, pepper, paprika, garlic salt to taste

Season cut up chicken with salt, pepper, paprika, and garlic salt. Place in crockpot. Mix tomato paste and beer together (the cook may have the remainder) and pour over the chicken. Add olives. Cover and cook on low for 7 to 9 hours. Serve over rice or noodles.

Crockpot Chicken Cacciatore Recipe

6 skinless, boneless chicken breast halves
1 (28 ounce) jar spaghetti sauce
2 green bell peppers, chopped
1/2 pound fresh mushrooms, sliced
1 onion, finely diced
2 tbs. minced garlic

Put the chicken in the slow cooker. Top with spaghetti sauce, green bell peppers, mushrooms, onion, and garlic. Cook on low for 7 to 9 hours.

Crockpot Chicken with Mushroom Gravy Recipe

1 frying chicken, cut up
Salt & pepper
1 can cream of mushroom soup
1/2 c. sauterne or sherry
2 tbsp. butter or margarine, melted
2 tbsp. dry Italian salad dressing mix
2 (3 oz.) pkgs. cream cheese, cut in cubes
1 tbsp. onion, chopped

Wash chicken and pat dry. Brush with butter. Sprinkle with salt and pepper. Place in crockpot. Sprinkle with dry salad mix. Cover and cook on low for 5 to 6 hrs .About 3/4 hour before serving, mix soup, cream cheese, wine, and onion in small saucepan. Cook
until smooth. Pour over chicken in pot. Cover and cook for 30 mins on low. Serve with sauce. Serve with rice or noodles.
Serves 4 to 6.

Crockpot Chicken Ala King Recipe

1 can cream of chicken soup
3 Tbsp. flour
1/2 tsp. black pepper
dash of cayenne pepper
1 lb. boneless, skinless chicken breasts, cut in cubes
3/4 cup chopped green pepper
1 small onion, chopped
10 oz. pkg. frozen green peas, thawed
3 Tbsp. diced pimentos, drained
cooked rice

Combine the soup, flour and peppers in the slow cooker. Stir until smooth. Stir in chicken, onion and green pepper. Cover and cook on low for 8 hours. Stir in peas and pimentos and cook for 30 more minutes. Serve over rice.

Crockpot Chicken with Tomatoes and Zucchini

4 skinless, boneless chicken breasts
1-16 oz. can stewed tomatoes
1 onion, sliced
2 small zuchini, sliced
pinch Italian seasoning
1 green pepper, sliced
1/2 tsp. garlic powder
pepper to taste

Place all ingredients in crockpot.Cook on high for 2-3 hrs and reduce to low for 7 hrs.

Cajun Chicken Recipe

3 slices of bacon, chopped
1/2 cup chopped green bell pepper
1/4 cup chopped onion
1/4 cup chopped celery
1-1/4 pound boneless skinless chicken thighs
2 teaspoons dried Cajun seasoning
1 can, 14.5 ounces diced tomatoes, undrained
1-1/3 cups uncooked regular long grain rice
1-1/3 cups water

Cook bacon in nonstick skillet until crisp. Add bell pepper, onion and celery, cook 2 to 3 minutes or until crisp tender. With slotted spoon transfer to crockpot. Sprinkle thighs with 1 teaspoon of the Cajun seasoning. Place in skillet and cook 4 to 5 minutes or
until browned on both sides. Arrange chicken and any drippings over vegetables in crockpot. Pour tomatoes over chicken. Stir in remaining Cajun seasoning. Cover and cook on Low for 8 to 9 hours. About 30 minutes before serving cook rice in water as
directed on package. Serve chicken on rice.

Crockpot Chicken and Biscuit Dumplings Recipe

4 boneless skinless chicken breasts, cut in small chunks
2 cans condensed cream of chicken soup
1/4 cup onion, finely diced
2 cups water
2 10 oz packages refrigerated biscuits
1 chicken bouillon cube

Combine all ingredients, except biscuits, in slow cooker. Cover and cook on low for 5 to 6 hours. 30 minutes before serving, tear biscuit dough into 1-inch pieces. Add to your slow cooker; stirring gently. Cover and cook on HIGH for an additional 30 mins or until
biscuits are fluffed up and cooked through.

Crockpot Apricot Chicken Recipe

1/2 Cup apricot preserves
1/3 Cup bottled Russian dressing
1/2 envelope onion soup mix
6 frozen chicken breasts, (not thawed)

Mix the first 3 ingredients together. Place chicken in crock pot and cover with apricot mixture. Cook on LOW 5 to 6 hours.
6 servings.

Crockpot Chicken and Rice Recipe

1 boneless chicken in pieces
4 potatoes; quartered
5 carrots; cut in chunks
3 celery stalks; cut in half
1 cup chicken broth; or water
1 teaspoon basil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic; powdered

Put 1 cup of water or chicken broth in bottom of pot. Layer potatoes next, then carrots then celery. On top of this add chicken. Sprinkle basil, pepper, salt and garlic on top of chicken. Cook on low for 6 to 7 hours or on high for 3 1/2 or so hours.

Crockpot Chicken Almondine Recipe

4 chicken breasts, washed, fat removed
1 Can cream of chicken soup - (10 oz)
1 Tablespoon lemon juice
1/2 Cup mayonnaise
1 Cup chopped celery
1 Tablespoon grated onions
1/2 Cup pimientos, sliced
1/2 Cup almonds
Potato chips, crushed

Lay prepared chicken breasts in the bottom of the slow cooker. Mix all other ingredients in mixing bowl, except almonds and potato chips. Pour over chicken breasts. Cover and cook on LOW for 8 to 10 hours. Remove each serving to dinner plate. Spoon extra "gravy" over chicken breast and top with almonds and potato chips.

This is for Sharon Iowa, who in the 2/16 newsletter requested the recipe for cooking a whole chicken in the crock pot. You can crumble up pieces of foil and put under the whole chicken, if you want, but in this recipe you don't need to do that. You can use any variety of spices or rubs that you like. I hope this helps. You can also drizzle Italian salad dressing over the chicken. The liquid from the chicken makes a delicious stock for soups and casseroles. this is an easy and wonderful recipe, as long as you don't have to have your chicken crisp. I have read where you can take the cooked chicken out of the crock pot and put it under the broiler to give the skin a crisper texture, but have never tried it. In my opinion you would need to do that before it starts to fall off the bone, so you would need to shorten the cooking time of this recipe.

Whole Chicken Crockpot Recipe

2 teaspoons paprika
Salt to taste
1 teaspoon basil
1 teaspoon thyme
1/2 teaspoon garlic powder
1/4 teaspoon cayenne (red) pepper
1/4 teaspoon black pepper
1 onion
1 large chicken

Liberally spray inside of crock pot with non stick spray. Combine the dried spices in a small bowl. Loosely chop the onion and place it in the bottom of the slow cooker.

Remove any giblets from the chicken and then rub the spice mixture all over. You can even put some of the spices inside the cavity and under the skin covering the breasts.

Put prepared chicken on top of the onions in the slow cooker, cover it, and turn it on to high. There is no need to add any liquid.

Cook for 4 – 5 hours on high (for a 3 or 4 pound chicken) or until the chicken is falling off the bone. Don’t forget to make your homemade stock with the leftover bones! You can also put a cut up lemon, apple or onion in the cavity for extra flavor. Note: If you
use one of the newer crock pots which cook at a higher temperature, you might want to add a cup of liquid to the pot, if you are not going to be home to check on the dish.
Cooking times may also be shorter in a new crock pot.

For the person wanting suggestions on substitutions for almond milk and almond flour because of her allergy to nuts, you could try soy milk, depending on what you are preparing. Coconut milk might also be an option. For the almond flour, I have read
that you can grind shelled, un salted and unseasoned sunflower seeds and use in place of almond flour, but I have not tried this. Good Luck and let us know what you end up using. Those of us with family and friends with nut allergies would benefit from
your experience.

Cocoa, Coffee Chile Dry Rub Recipes

1 dried ancho chile
1 dried Guajillo Chile
1/4 cup coffee beans
2 Tbsp dark cocoa powder
2 Tbsp Pimenton de la vera
2 Tbsp muscovado sugar
1 Tbsp coriander seeds
1 Tbsp all spice
1 Tbsp dried thyme
1 Tbsp ground mustard
1 Tbsp ea salt & pepper
1 star anise (optional)

Place all ingredients in coffee grinder and grind until fine.
Use on steaks, ribs, chops.

Store leftover rub in cool dry place.
