Nacho Popcorn Recipe

3 quarts popcorn
2 cups corn chips
1/4 cup butter
1 1/2 teaspoon Mexican seasoning
3/4 cup taco cheese, shredded

Heat oven to 300 degrees F. Spread popcorn and corn chips in a shallow baking pan lined with foil. Melt butter in small pan. Stir in Mexican seasoning. Pour over popcorn mixture and toss well. Sprinkle with cheese and toss to mix. Bake 5 to 7 minutes until cheese is melted. Serve at once.

Candy Apple Popcorn Balls Recipe

2 tablespoons butter
2 tablespoons granulated sugar
2 tablespoons brown sugar
1/4 cup molasses
1/4 cup white corn syrup
1/4 teaspoon cinnamon
1/8 teaspoon ginger
Dash cloves
1/2 cup popcorn, popped
1 cup toasted walnuts, chopped
1 cup dried apples, cut small

Put butter, sugar, brown sugar, molasses, corn syrup, cinnamon, ginger and cloves into a heavy saucepan. Cook over moderate heat to 280 degrees F on a candy thermometer. Pour over the popped corn, walnuts and apples. Shape into balls.

Apricot Popcorn Recipe

1/4 cup butter
2 tablespoons apricot jam or jelly
2 tablespoons brown sugar
1/2 cup popcorn, popped
1/2 cup toasted coconut
1/2 cup toasted almonds
1 cup dried apricots, cut small

Put butter, jelly and brown sugar into a heavy saucepan. Cook over moderate heat to 235 degrees F on a candy thermometer. Pour over the popped corn, coconut, almonds and apricots. Mix well.

Bacon Cheese Popcorn Recipe

4 quarts popcorn , popped
1/3 C butter or margarine
1/2 tsp season salt
1/2 tsp hickory smoked salt
1/3 C. grated parmesan or American cheese
1/3 C. bacon bits
Pour freshly popped popcorn in a large bowl. Combine butter with seasoned salt and hickory smoke salt. Pour over pop corn; toss well to coat. Sprinkle with cheese and bacon bits. Toss again and serve while warm.

Butterscotch Almond Popcorn Recipe

12 ounces butterscotch morsels
4 cups popped corn
2 cups slivered almonds

In a 1-quart microwave-safe measuring cup, microwave butterscotch morsels on HIGH power for 3 minutes, stirring after each minute, until melted and smooth. Pour over popcorn and almonds, stirring gently to mix well. Drop in small clusters onto a lightly-buttered baking sheet. Let cool.
Makes about 6 cups.

Cajun Popcorn Recipe

1/2 cup butter, melted
2 teaspoons paprika
2 teaspoons lemon pepper seasoning
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon ground red pepper
20 cups popped popcorn

Preheat oven to 300 degrees F. In a small bowl, combine butter, paprika, lemon pepper, salt, garlic powder, onion powder and red pepper. Place popcorn in a large baking pan; pour butter mixture over popcorn and stir until well coated. Bake 15 minutes, stirring every 5 minutes. Remove from oven; cool completely. Store in airtight container.

Candied Popcorn Recipe

6 cups popped corn
2/3 cup sugar
1/2 cup water
2-1/2 tablespoons white corn syrup
1/8 teaspoon salt
1/3 teaspoon vinegar
Combine last five ingredients and stir until the sugar is dissolved. Bring to a boil and cover. Cook covered for about 3 minutes (the steam from the cooking will wash down the sides of the pan). Remove cover and without stirring bring to the hard crack stage (290{d}). Be sure the fire is not too hot. Add coloring (if more than one color is desired, divide the sugar syrup and color as desired). Use plenty of coloring dye. Pour the syrup over the popped corn, stir with a wooden spoon until well coated. When it is cool enough to handle and still somewhat sticky, mold with the hands which have been lightly buttered. This can be forced into molds. Be sure you ram the corn tightly into the nooks and crannies of the mold.

Cheddar Popcorn Recipe

2/3 cup unpopped popcorn
1/3 cup butter
1 cup finely grated cheddar cheese
Salt and pepper to taste

Pop the popcorn. Melt the butter. Grind some pepper into the butter. Stir. Layer the cheese into the popcorn. Pour the butter mixture on top, and salt.

Cinnamon Apple Popcorn Recipe

2 c. dried apples, chopped
10 c. popped popcorn
2 c. pecan halves
4 tbsp. butter, melted
1 tsp. cinnamon
1/4 tsp. nutmeg
2 tbsp. brown sugar
1/4 tsp. vanilla extract
Preheat oven to 250 degrees. Place apples in a large shallow baking pan. Bake 20 minutes. Remove pan from oven and stir in popcorn and nuts. In a small bowl, combine remaining ingredients. Drizzle butter mixture over popcorn mixture, stirring well. Bake for 30 minutes, stirring every 10 minutes. Pour onto waxed paper to cool. Store in airtight container.
Yield: 14 cups.

Granola Crunch Popcorn Recipe

1/4 cup butter
3 tablespoons honey
3 tablespoons brown sugar
1/2 cup popcorn, popped
1 cup toasted nuts
1 cup rolled oats
1 cup toasted coconut
1 cup raisins

Put butter, honey and brown sugar into a heavy saucepan. Cook over moderate heat untl melted. Pour over the popped corn, nuts, oats, coconut and raisins. Bake at 300 degrees for 30 minutes.

Lemon Popcorn Recipe

1/4 cup corn oil
3/4 cup popping corn
Zest of 1 lemon
Salt
2 tablespoons lemon juice
2 tablespoons melted butter

In a large heavy pot, heat corn oil over high heat until the oil smokes. Add 1 kernel popping corn and heat until kernel pops. Add rest of popping corn, cover pot, and shake gently until corn starts to pop. Shake vigorously until popping subsides. Remove from heat. Mix lemon juice with melted butter. Toss popcorn with lemon zest, salt, and butter/lemon juice.

How to Make Cheddar Cheese Popcorn

1 cup popcorn kernels
1/2 cup cheddar cheese powder
6 to 8 tablespoons butter, melted
1 teaspoon sea salt, optional (or less, according to tastes)

Pop the corn. Stir in the powdered cheese, Stir in the butter and then the salt. You can adjust both the amount of cheese and the amount of salt to taste.

Variations of Cheesy Popcorn

Cheddar and Bacon Popcorn.
In our search, we found recipes for cheese and bacon popcorn. We fried bacon and chopped it into little pieces and tossed it with the cheesy buttered popcorn. Most of it settled to the bottom. We weren’t happy.

Parmesan Popcorn.
Kelli Tracy who works in our test kitchen did this at home. She grated parmesan over the fresh popcorn. She reported that had a great flavor but that much of the cheese settled to the bottom of the bowl.

Fresh Cheddar Popcorn.
We grated mild cheddar cheese before we popped the corn and sprinkled the cheddar over the corn while it was still hot. It didn’t melt at all and didn’t disperse. It didn’t work.

Dont use plain salt! Use flavorful salt.
We added chipotle sea salt to the basic cheddar cheese recipe. It made the cheese savory and we liked that but it didn’t deliver an appreciable amount of heat. It was as if the occasional salt crystal got lost, buried in the popcorn, and the salt came through only at the end. It was still good but no heat.

Cheddar and Roasted Garlic Salt Popcorn. We added roasted garlic salt to the cheddar popcorn. It was good and shifted the cheddar flavor but it did not deliver a strong garlic flavor. I suppose that you could add a bit of garlic powder if you wanted a more garlic flavor.

Slow Cooker Zesty Chicken Recipe

1 Whole Chicken,Optional-Can Remove Skin
1/2 cup chicken broth or 1 chicken bouilloncube
w/Water
1/3cup soy sauce
1/4 cup olive oil
1/4 cup honey
1 tsp Worcestershire sauce
2 tsp balsamic vinegar
1 tsp sesame oil (optional)
2 tsp lemon juice
2 Tbsp minced garlic
[Note: This is wonderful served with brown rice and steamed carrotsfor a healthy meal. Check the chicken as mine was falling apart at 4 hours on Hi & it was a 5 lb chicken. The recipe doesn't specify. I would do it on low the next time but was pressed for time.]
Wash chicken and empty cavity. Remove skin if desired. Pat chicken dry and place breast down in slow cooker. In a bowl, whisk together all the ingredients and pour over chicken. Cook on high for 4 hours orlow for 8 hours. Spoon sauce over cooked chicken before serving.

This is one of the easiest recipes for spaghetti sauce and makes enough for me to freeze part of it.

Super Easy Spaghetti Sauce Recipe

2 cans or jars of Spaghetti Sauce
1 15 ounce can diced tomatoes
1 15 ounce can tomato sauce
1-1/2 tablespoons Italian Seasoning
1 tablespoon sugar
1-1/2 pounds ground beef, browned and drained

Dump all ingredients into slow cooker. Cover and cook on low all
day. Serve over freshly cooked pasta.

Faye requested alternative to salt in the 2/24 newsletter. Nel VA shared this recipe in 1/13. Good Luck in altering your diet to salt fee. The hardest part is finding no or low salt items at the grocery store. Mixes, soups, cereals lunch meats, crackers, snack foods and almost everything you pick up is loaded with salt.

Everything But Salt Recipe

9 Tbs. onion powder
3 Tbs. paprika
3 Tbs. dry mustard
1 Tbs. poultry seasoning
1 Tb. garlic powder
2 tsp. oregano
2 tsp. ground black pepper
1 tsp. chili powder
Mix all together and put into a large jar or large shaker. Mix well and use like salt.
