Happy New Year to all! I pray it is a more peaceful year. Today I made the Teriyaki Pork Roast recipe posted by Judy (in Alaska). It was delicious! I don't know when she posted it because I had it in my recipe folder. So easy cooking it in the crockpot most of
the day. I enjoy Judy's recipes so was not surprised at how good this one tasted.

I'm having a strange problem with my refrigerator's freezer section. It appears that the ice cubes, which the ice maker dumps into a container, melt and then refreeze forming a
block of cubes. The food in the freezer stays frozen, although it does seem to gather ice crystals very quickly. Has anyone had this problem, or have any ideas as to what might cause this? Thanks!

I had a similar problem. My ice maker in the refrigerator dropped the ice cubes and water was leaking out before the next batch of ice cubes had a chance to freeze. The water leaking out was not frozen and it melted the ice cubes.

Nancy, I would love to get some recipes that has egg noodles and chicken together. I ate something like this when I was in school many years ago and would love to get some recipes so I can make this dish.

My husband needs to cut down on his salt and sodium consumption. I need suggestions on what he can use instead of salt. He is the type of person who salts everything, even before he tastes it. I have already tried a salt substitute and it had a terrible taste. Any suggestions would be appreciated.

I would like a recipe for sweet potato hash. I found the recipe in this newsletter a couple of years ago. Wanted to make it today and realized I have misplaced it. Can someone help me with this recipe?

Our family really enjoys this recipe. At Christmas time I substitute turkey instead of chicken.

King Ranch Chicken Casserole Recipe

1 fryer
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1 (10 ounce) can Ro-Tel tomatoes & green chilies (diced)
1/2 can chicken broth
1 dozen corn tortillas
1 onion, chopped
2 cup cheese, grated

Cook chicken in small amount of water, lightly salted, until tender. Bone and cut into pieces. To make a sauce, blend until smooth the following: The 2 cans of soup, can of tomatoes and chilies and chicken broth. Set aside. Into a 2-1/2 quart casserole
(greased), place a layer of chicken, 1/2 of the tortillas, cut into pieces, 1/2 of the onion, 1/2 of the cheese and 1/2 of the sauce. Repeat the layers ending with the grated cheese. Bake uncovered for 1 hour. Bake at 350 degrees.

Foil Packet Chicken Dinner Recipe
Serves 1

1 chicken breast
1 potato, peeled and sliced
2 carrots, pared and sliced
1 small onion, thinly sliced
salt and pepper to taste
Large pat of butter

Place chicken, potato and carrots on square of foil with the dull side out. Arrange onion slices over all. Season with salt and pepper. Top with pat of butter. Wrap tighly in foil. Broil over hot coals for 30 to 40 minutes or until chicken is done and potatoes are tender.

Note. I like to separate the onion slices into rings rather than use the whole slice in one piece. This is a great meal for one person and can easily be adapted to two by just making two packets. I love a teaspoon of Worcestershire sauce added to the packet.

Another variation is to add a tablespoon of barbecue sauce.

Beef Goulash Recipe

1-2 tablespoons vegetable oil
1 pound ground beef
3 cups uncooked egg noodles
2 cups water
1 8-ounce can tomato sauce
1 envelope dry onion soup mix

Heat oil in a medium skillet over moderate high heat. Add ground beef and cook until lightly browned, stirring occasionally with a fork to break up meat. Drain off any excess fat. Sprinkle uncooked noodles over meat. Combine water, tomato sauce, and onion soup mix. Pour over noodles in skillet. Do not stir. Cover and bring to a boil. Reduce heat to low and simmer about 30 minutes or until tender. Stir and serve.
Makes 4 servings

Crockpot Meatloaf with Gravy Recipe

2 lb. ground chuck
1/2 c. green pepper, chopped
1/2 c. onion, chopped
1-1/2 tsp. salt
1 c. cracker crumbs
1 egg
1 (7/8 oz.) pkg. brown gravy mix
1 c. milk
6-8 sm. potatoes, cut up

Mix all ingredients except potatoes in large bowl. Shape into a loaf and place in the crock pot. Place potatoes at the sides of loaf. (If potatoes are peeled, wrap in foil to keep from darkening.) Cover and cook on low for 8-10 hours or high 4-6 hours.

My New Year's Resolution is to become more frugal and save on the monthly grocery bill. One problem for me is to find recipes that help me to save money. Would like recipes and ideas for making your own mixes as well and recipes for one dish meals.

Hamburger Spaghetti Recipe

1 (12 oz.) pkg. spaghetti
1/2 medium onion, chopped
shortening
1-1/2 lb. hamburger
1 can cream of mushroom soup
1 (15 oz.) can tomato sauce
1/2 c. chopped ripe olives
1 c. shredded cheese

Cook the spaghetti according to package directions and drain. Brown the onion lightly in small amount of shortening. Add the hamburger and cook, covered until done. Combine the soup with tomato sauce and olives and mix thoroughly. Add to hamburger mixture, then stir in the spaghetti. Place in baking dish. Cover with cheese. Bake at 350 degrees for 15 minutes.
Makes 8 servings.
