Vegetable Fried Rice Recipe
Makes 4 Servings

2 cups uncooked quick-cooking brown rice
2 eggs, beaten
1 tablespoon vegetable oil
2 medium carrots, sliced (1 cup)
8 medium green onions, sliced (1/2 cup)
1 clove garlic, finely chopped
2 cups snow (Chinese) pea pods, cut in half
1 cup bean sprouts
2 tablespoons soy sauce

Cook rice as directed on package.

While rice is cooking, spray 12-inch nonstick skillet with cooking spray; heat over medium heat. Pour beaten eggs over bottom of skillet and cook until firm; remove from skillet and set aside. When eggs are cool, cut into small pieces.

Heat oil in same skillet over medium-high heat. Cook and stir carrots, onions and garlic in oil 1 minute. Stir in pea pods and bean sprouts; cook and stir 2 minutes. Stir in rice and soy sauce; reduce heat to medium. Cook 2 minutes, stirring occasionally. Stir in eggs; cook until heated through.

Spanish Rice Recipe
Makes 8-10 Servings

1 cup uncooked regular long-grain rice
1 cup water
1 medium onion, chopped (1/2 cup)
1 small green bell pepper, chopped (1/2 cup)
1 clove garlic, finely chopped
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1 can (14-1/2 ounces) diced tomatoes, undrained

Spray 3 1/2- to 4-quart slow cooker with cooking spray. Mix all ingredients except tomatoes in cooker. Top with tomatoes.

Cover and cook on low heat setting 2 to 3 hours or until rice and vegetables are tender and most of the liquid has been absorbed.

Rice with Red Beans Recipe

1 lb red bean (dry small)
13/4 lbs shanks (meaty ham)
4 cups water
4 cloves garlic cloves (minced)
1 onions (chopped about 2 cups)
11/2 cups chopped celery
1 cup green bell pepper (chopped)
1 tbsp worcestershire sauce
2 tsps creole seasoning (cajun or, tony chachere s or zatarains or to taste)
tabasco sauce
salt to taste
pepper to taste
3 cups white rice (cooked, raw)

Place dried beans in a large bowl and cover them with cold water by a couple of inches. Let soak for 8 hours or overnight. (You can quick soak them by putting them in a bowl and pouring boiling water over them, covering them by 2 inches, then letting them soak for two hours.) Drain.

Place beans, ham shanks, garlic, chopped onion, and water in a large (8-quart) pot and bring to a boil. Reduce to a simmer and cover, simmer for 1 1/2 hours or until beans are tender.

Remove ham shanks from the pot to a dish. Let cool slightly then shred the meat away from the bones. Return the meat back to the pot. Add the celery, bell peppers, Worcestershire and seasonings. Cover and cook for another hour or until the mixture gets thick. Season to taste with Tabasco sauce, salt and pepper. Serve over rice.

Rice with Fruit Salad Recipe

1 cup wild rice, cooked and cooled
1 carrot, grated
1/2 red onion, diced
1 cup snow peas, sliced in half
2 pears, sliced
1/3 cup dried or fresh cherries (or substitute dried cranberries)
4 apricots, sliced
1/3 cup Italian dressing
salad greens

Combine together all ingredients, tossing gently. Serve on a bed of salad greens.

Apple and Rice Dish Recipe

3 cups cooked Basmati rice, cold
1 cup water
1 cup raisins
1/2 cup chopped walnuts
2 stalks celery, chopped
1 apple, chopped

Place water, raisins and walnuts in a large pot and simmer for 10 minutes. Remove from heat. Add celery, apples then rice. Mix well and allow to stand for at least 10 more minutes. Serve your rice Waldorf salad chilled and season with a dash of salt, if you like things a bit salty.

Simple Spanish Rice Recipe
Serves: Makes 4 (3/4-cup) servings.

2 cups water
1/2 cup tomato sauce
1/2 teaspoon McCormick® Onion Salt
1/4 teaspoon McCormick® Cumin, Ground
1 cup long grain rice
1 tablespoon butter

Bring water, tomato sauce, onion salt and cumin to boil in medium saucepan on medium-high heat. Add rice and butter; stir. Reduce heat to low; cover and simmer 20 minutes or until rice is tender. Remove from heat. Let stand 5 minutes. Fluff with fork before serving.

For Sherry (Indiana) For the Chocolate Chip M&M Chewy Bars, do you use a 9x13 baking dish? Also, in the directions you said to add remaining ingredients, then said to top half of dough with M&M’s. I am assuming the all ingredients mean all but M&M’s.

HoneyBaked Ham 

Cheddar Stuffed Mushrooms Recipe

10 mushrooms
1/2 c. white cheddar cheese
1/2 c. orange cheddar cheese
salt and pepper and 2 tsp tyme
Preheat oven to 375 deg.
Clean mushrooms and remove stems
Grate cheeses and mix together

Brush mushrooms with a little oil and sprinkle with salt and pepper. Place mushrooms on baking pan and fill with cheese. Sprinkle with thyme.

Bake for 15 min until cheese is melted and mushrooms are browning around the edges.

Zucchini Fritters Recipe

2 eggs
1/4 red onion, grated
1/2 zucchini, grated
2 tbs. grated carrot

Season with salt and pepper for taste. Heat a small fryig pan over medium heat, Mix all ingredients. Spoon 1 heaping tbs. mixture onto hot pan. Cook 2 min, each side.

Sue requested crockpot Brunswick stew recipes in the 1/16 newsletter. There are many different versions of this recipe, some of which use rabbit or squirrel instead of chicken, some add ground beef or chopped pork with the chicken, some add barbecue sauce, and others use different vegetables. I have also seen some that add 1/2 cup butter instead of the small amount listed in this one. I hope this helps you.

Brunswick Stew Crockpot Recipe

3 to 4 slices lean bacon, diced
3 tablespoons flour
salt& pepper to taste
pinch ground cayenne pepper
3-1/2 to 4 pounds chicken pieces (1 broiler fryer)
3 medium onions, thinly sliced
2 cans (14.5 ounces each) diced tomatoes
1 red bell pepper, chopped
1/2 teaspoon dried thyme
2 cups lima beans, fresh or frozen, cooked
2 cups corn kernels, fresh or frozen, thawed
1/2 cup okra, sliced, fresh or frozen
2 tablespoons chopped fresh parsley
2 teaspoons Worcestershire sauce

In a large skillet, cook the diced bacon until fat is rendered. Remove the bacon bits with slotted spoon and refrigerate until stew is nearly done. Combine flour, salt, pepper and cayenne; dredge the chicken. Brown the chicken in the rendered fat with the onions, turning pieces to brown on all sides. Add 1 1/2 cups boiling water, the tomatoes, cayenne pepper and thyme to the slow cooker with chicken. Cover and cook Brunswick stew on LOW 6 to 8 hours. Add remaining ingredients, including reserved bacon; cover and cook Brunswick stew on HIGH for 30 minutes longer or until vegetables are tender. Can also add 8 ounces diced ham, if desired.

In response to Terry in NY. Your request for using leftover won ton wrappers was published in the Jan. 13th newsletter and I responded with suggestions which was published in the Jan. 16th newsletter. Another addition is that you can cut them into smaller squares or triangle sprinkle them with cinnamon and sugar and bake or fry them into chips for snacking.

Protein Powder Pizza Crust - Low Carb
Make this personal Pizza for lunch/snack. I make a protein powder pancake, thn top with pizza toppings. FIRST: mix 1/4 cup egg whites, 1 scoop of protein powder (~25g), and some water (enough to make it pancake consistency, or a little thinner.) Pour in onto a hot non-stick pan and cook like a pancake until golden! Then all you need to do is top it with pizza sauce, cheese, and whatever toppings, and put it in the toaster-oven, or oven, on a metal sheet until cheese is melted. Perfect personal pizza! you can use whichever protein powder flavor you want to. I love chocolate or cookies and cream when I'm making protein pancakes by themselves, put opt for plain vanilla when making pizza "crust" because it's taste is more subtle. enjoy.
