There weren't many recipes, replies and tips sent in since yesterday so I included some recipes from the past and more. There is an assortment of topics in today's online recipes. My search began with cake mix changes and how to adapt older recipes with new cake mixes but got off track, LOL. I never did find an answer. Can someone help me find the answer for how to adapt newer cake mixes (2 to 3 ounces less) with older recipes?

I'm disappointed that the new cake mix sizing does not fill up my 9x13 pan. The cakes now all look skimpy. So I'm looking for some basic scratch cake recipes that will make a good.. big cake in a 9x13 pan.

Another product downsizing that may have an impact on recipes where a cake mix is used as a base. AND what about all the wonderful cake mix cookies we've enjoyed ?

Angel Food Cake with Variations
Serves: 12

1 box (1-Step) angel food cake
Mix the angel food cake mix and desired flavor ingredients together and beat by hand until blended. Pour into greased 9 x 13" pan (or muffin tin) and bake at 350 for 35-40 minutes (muffins bake 15-18 minutes).

Lemon -- 1 cup + 3 Tbs water, 2 Tbs lemon juice and 2 tsp grated lemon peel

Orange Citrus -- 1 cup water, 1/4 c orange juice and 2 tsp grated orange peel

Cherry -- 1 can (20 oz) light cherry pie filling

Black Forest -- add 1 /2 cup cocoa to Cherry version

Cotton Candy -- 1 small pkg (3.4 oz) sugar free flavored gelatin, any flavor, 1-1/4 cup water.

Margarita -- 1 cup + 2 Tbs water, 2 Tbs fresh lime juice and 1-1/2 tsp grated lime rind

Pineapple -- I can (20 oz) crushed pineapple in juice

Pina Colada -- add 1 Tbs coconut extract (and 1 Tbs rum extract, if desired) to pineapple cake directions

Pumpkin -- I can (15 oz) pumpkin, 3/4 c water, 1 Tbs vanilla & 1 Tbs pumpkin pie spice (or spices for Spice Cake, below)

Spice -- 1-1/4 cup water, 1-1/2 tsp cinnamon, 1 /2 tsp ginger, 1 /2 tsp nutmeg and 1/4 tsp ground cloves

Pudding Cake and Variations

1 pkg. cake mix
1 pkg. small Jell-O instant pudding mix
1 c. water
4 eggs
1/4 c. oil

Combine all ingredients in large mixer bowl. Blend; then beat 2 minutes. Pour into a greased and floured 10-inch
Bundt or tube pan. Bake at 350 degrees for 50 minutes or until center springs back when lightly touched. Cool 15 minutes and remove
from pan.

Pudding and Cake Mix Combinations:
Pudding: chocolate - Cake Mix: chocolate.

Pudding: chocolate fudge - Cake Mix: devil's food.

Pudding: vanilla - Cake Mix: yellow, white, banana.

Pudding: French vanilla - Cake Mix: yellow, white, banana.

Pudding: lemon - Cake Mix: yellow, white, lemon.

Pudding: banana cream - Cake Mix: yellow, white, banana.

Lemon Pepper Seasoning

The zest from 4-6 organic lemons (or 1/2 cup pre-dried lemon zest)
6 Tablespoons ground black pepper (or whole peppercorns if you are using fresh lemon)
5 Tablespoons Sea Salt

To Make: If using fresh lemon Zest, thoroughly zest the lemons and spread the fresh lemon out on a baking sheet. Put into the oven on the lowest setting and leave until completely dried. Mine took about 70 minutes, but yours make take more or less time. When completely dried, mix with the peppercorns and salt in a food processor until well mixed. If making with pre-dried lemon peel, just mix all ingredients in a food processor until blended.

Salt Substitute Seasoning

1-1/2 teaspoons garlic powder
3/4 teaspoon dried thyme leaves
1/2 teaspoon dried oregano
1-1/2 teaspoons onion powder
1-1/4 teaspoons paprika
1 teaspoon celery seed
1-1/2 teaspoons white pepper
1-1/2 teaspoons dry mustard
1 teaspoon dried lemon peel
1 teaspoon ground black pepper

Whisk together garlic powder, thyme leaves, oregano, onion powder, paprika, celery seed, white pepper, dry mustard, lemon peel, and black pepper in a small bowl until well-combined.

Funnel into a dry glass container and seal tightly. Store away from heat and light. Use within 6 months for best flavor. Use on meats, poultry, seafood, and vegetables.
Yield: about 1/4 cup

Dry Rub Recipe

1/4 cup. paprika
1/4 cup. light brown sugar
3 tbsp. salt
1 tsp. dry mustard
1 tsp. ground black pepper
1/2 tsp. cayenne pepper
1/2 tsp ground cumin

Combine ingredients in a Zip-Lock bag, shaking thoroughly. Store in airtight container.

Chili Powder Mix Recipe

2 Tbsp. cumin
1 Tbsp. cayenne pepper
1 Tbsp. garlic powder
1 Tbsp. onion powder
1 tsp. allspice
1 tsp. cloves
1 tsp. oregano

Makes about 1/3 cup.

Combine spices and seal in ziploc or vacuum seal bag (or jar). Measure all into a ziploc bag, seal & shake to combine. Pour into a spice jar or bottle.

Onion Soup Mix Recipe

3/4 c. minced onion
1/3 c. beef bouillon granules
4 tsp onion powder
1/4 tsp crushed celery seed
1/4 tsp sugar

Combine all ingredients and seal in ziploc or vacuum seal bag (or jar).

Homemade Crisco Quick Bread Mix
Makes: 12 cups

10 cups ROBIN HOOD® All Purpose Flour, sifted
1/3 cup baking powder
1/4 cup granulated sugar
1 tbsp salt
2 cups Crisco® All-Vegetable Shortening Sticks

In a large bowl combine flour, baking powder, sugar and salt. Cut in 2 cups shortening with pastry blender or 2 knives until mixture resembles coarse meal.

Store in covered container up to 6 weeks at room temperature. For longer storage, place in freezer.
