Frugal Recipes

Wash new potatoes and place around sides of Corning Ware dish. Put lid on and cook 1 minute per potato. No liquid needed. Microwave on High.

Hungarian Cabbage and Noodles

1 large cabbage (about 3 lbs.), cored, thinly sliced (about 8 cups sliced)
1 teaspoon salt
6-8 slices of bacon, diced
1 med. onion, chopped
Freshly ground black pepper
1 tsp. garlic powder
1 (12-ounce) package egg noodles ( not thin ones)
3 tablespoon paprika
1/2 cup or more of sour cream

Fry bacon until almost crisp, add onions; cook until they start to wilt. Stir in cabbage; sauté, turning frequently, until it softens Season to taste with pepper, salt, 1 tsp. garlic powder and 2 TBS of paprika.
Add drained noodles which you cooked al-dente to cabbage mixture and add 1/2 cup of sour cream.
Stir well. Pour into casserole and top with the rest of the paprika and dollops of sour cream.
Bake at 350 degrees for at least 45 minutes.

"Cook noodles in boiling salted water until al-dente"

This is a very forgiving recipe. If you get to hungry, just go ahead and eat it, but make sure all ingredients are cooked done. It is much better baked.

Note-- Once when I had leftovers, I added some diced potato and chicken broth
and made some soup. It was very good.

Remember this dish? I usually added green pepper and garlic
and I cooked the bacon, onion and green pepper altogether.

Depression Spaghetti Recipe

8 oz spaghetti cooked and drained
3 slices of bacon cut in 1" pieces
2 med onions diced
1 large can tomatoes, crushed by hand ( or sauce) I use 28 oz. can
1-2 Tbs. sugar

Cook the bacon and remove from the pan. Add the onion and cook till wilted, add the tomatoes or the sauce and the sugar.
Reduce the heat and simmer about 15 min. Add the cooked pasta to the pan, and the reserved bacon.
Heat thru, tossing then serve.

Carrots are perfect for dipping. Dip carrot sticks in salsa, hummus (chickpea spread) or low fat salad dressing.


This is another meatless main dish that we like. You can use your favorite cheeses and alter the spices to your taste. You can cook your own black beans to save money, or use chili beans or other type of bean, if you are not a fan of black beans.

Black Bean Mexican Pizza

1 (10 oz.) can Pillsbury refrigerated all-ready pizza crust or make your own
1 (15 oz.) can black beans, drained and rinsed
3 tbsp. olive oil
2 tbsp. chopped cilantro or parsley
1 tsp. ground cumin
1 tsp. hot red pepper sauce
1/2 tsp. minced garlic
4 oz. (1 c.) shredded Monterey Jack cheese
4 oz. (1 c.) shredded Cheddar cheese
1 (2 1/4 oz.) can sliced ripe olives, drained
1/2 c. diced red bell peppers
1/4 c. sliced scallions
1/2 c. sour cream
1/4 c. green taco sauce or taco sauce
1 c. thick and chunky salsa, optional

Heat oven to 425 degrees. Lightly grease a 12-inch pizza pan or a 9x12 inch baking dish. Unroll dough and place in greased pan. Starting at center, press dough with hands to cover pan. Bake for 7 to 10 minutes.

Meanwhile, in a food processor or using a blender, combine beans, oil, cilantro, cumin, hot red pepper sauce, and garlic. Process until smooth, frequently scraping down sides of work bowl. (Bean mixture can be mashed with fork or potato masher, but will not be as smooth.)
Spread bean mixture over partially baked crust. Sprinkle with cheeses. Arrange olives, bell peppers, and scallions over top. Bake at 425 degrees for an additional 7 to 12 minutes, or until crust is deep golden brown.

In a small bowl, combine sour cream and taco sauce, blend well. Serve pizza with sour cream mixture and salsa. Makes 6 to 8 servings. Bobali ready-made pizza crust works well.

Add powdered milk in addition to hot water for a creamy hot breakfast cereal like oatmeal or cream of wheat.

Re: Modifying New Smaller Cake Mixes in Older Recipes
Well, my first thought was Cake Mix doctor and that's where your answer is.

Smaller Cake Mix Fix: Many cooks have been frustrated to watch cake mix package sizes shrink lately. But do not despair! If you are accustomed to baking my recipes with 18.25-ounce mixes, there is a simple way that you can add flour to the smaller mixes and still bake Cake Mix Doctor recipes. Pour the cake mix into a large bowl and whisk in 6 tablespoons all-purpose flour. Now proceed as the recipe instructs. Not only will the cake achieve good volume, but it will have a nice structure and slice evenly. I learned this trick years ago before the mixes were downsized. If I added a little flour to the cake mix, then the cake seemed to have more body, and it did not sink or shrink when cooling. I hope you enjoy this simple solution!

This cookie recipe has been around for a very long time, and was sent to me by a friend. There was no name on the recipe. She said her mother in law made them, and were so very good. I just simply call them "Crunchy Cookies". I think some refer to them as Ranger cookies?
They are inexpensive to make, but big on flavor.

Crunchy Cookies Recipe

1 cup granulated sugar
1 cup brown sugar
1 cup butter
1 cup cooking oil
1 large egg
1 tsp. vanilla
3-1/2 cups flour
1/2 tsp. salt
1 tsp. baking soda
1 cup Rice Krispies cereal
1 cup flaked coconut
1 cup quick-cooking oatmeal
1/2 cup chopped nuts

Cream butter, oil and sugars in large bowl for an electric mixer. Add egg and vanilla, mixing well. Add flour, salt and soda and mix
on low speed just till blended. Stir remaining ingredients in by hand. Drop by large spoonfuls onto greased cookie sheets and press down with a floured fork. Bake 375 for about 10 minutes, until golden brown.

Use leftover mashed potatoes to thicken a stew.

This is a quick and frugal dumpling. I like to drop them into cooked bean broth, navy or pinto, or chicken broth. Also can be added to soups at the end of cooking.

Simple Dumplings

1-1/2 cups unsifted flour
3 teaspoons baking powder
1 teaspoon sugar
1/2 teaspoon salt
1 egg
1/2 cup cold water.

Lightly stir all together and drop by teaspoons into hot broth or soup. Cover with lid and cook for three minutes.

This recipe is one of our staples throughout the cold weather. It says to used cooked chicken which I usually do with a deli chicken that I pick up on sale but if not I simply use chicken breast uncooked and diced as will cook nicely in the stew while preparing.

Addictive Chicken Stew Recipe

1 cup diced onion
1-2 garlic cloves, finely chopped
1 tablespoon olive oil
3 cups cooked chicken or cooked turkey, diced or shredded
1 (1-1/4 ounce) package taco seasoning mix
2 (14-1/2 ounce) cans ready-cut diced tomatoes, undrained
1 (15 ounce) can black beans or kidney beans, drained
1 (8 3/4 ounce) can whole kernel corn, drained
1 (4 ounce) can diced green chilies, drained
1 cup chicken broth
1/2 tablespoon cornstarch

Cook onion and garlic in oil in large saucepan until tender. Add cooked chicken, taco seasoning, tomatoes, beans, corn and chilies.
Blend broth and cornstarch; add to saucepan. Bring to a boil; reduce heat and simmer 15 minutes; stirring occasionally.
Serve with cornbread for a hearty meal.
It serves 5 or 4 very generously.

Macaroni and Cheese Casserole

1 pkg. macaroni and cheese mix
1 (10.5 oz.) can cream of celery soup
1 tsp. prepared mustard
1 Tbsp. dried parsley flakes
1 (6.5 oz.) can tuna fish
1/4 c. milk

Prepare macaroni and cheese mix according to package directions. Add remaining ingredients and mix well. Pour into lightly greased two quarter casserole. Bake at 350° for about 20 minutes. This is so easy even the kids can fix it! Makes 6 servings.

Homemade Sweetened Condensed Milk

1 c. instant nonfat milk
1/3 c. boiling water
3 Tbsp. melted butter or margarine
2/3 c. sugar
pinch of salt

Place all ingredients in a blender and process until smooth. Keeps several weeks in refrigerator. This can be used in any recipe calling for sweetened condensed milk.

Master Mix

5 lb. flour
2-1/2 c. dry milk solids
3/4 c. baking powder
3 Tbsp. salt
2 Tbsp. cream of tartar
1/2 c. sugar
2 lb. vegetable shortening

Stir baking powder, salt, cream of tartar, dry milk solids and sugar into unsifted flour, then sift all together. Cut shortening into mixture until it looks like corn meal. Place in sealed container and store. This is great to have in the camper and keeps well.

3 c. Master Mix
3/4 c. water

Blend and knead. Roll out and cut. Bake at 450° for 10 minutes.
Makes 1 dozen.

3 c. Master Mix
1 egg
1- 1/2 c. water

Blend together.
Makes 18 medium size pancakes.

Dumplings with Master Mix
2 c. master mix
2/3 c. milk

Drop into boiling stew. Cook uncovered 10 minutes on low heat. Cook covered 10 minutes.

Master Mix Chocolate Cake
3 c. Master Mix
1-1/2 c. sugar
1 c. milk or water
2 eggs
1 tsp. vanilla
1/2 c. cocoa

Mix dry ingredients. Add 2/3 cup of milk or water and beat for 2 minutes. Add rest of milk or water, eggs and vanilla and beat 2 more minutes. Pour into greased and floured 9 x 12 or two 8-inch pans. Bake at 275° for 25 minutes.

Master Mix Yellow Cake Recipe
3 c. Master Mix
1-1/2 c. sugar
1 c. milk or water
2 eggs
1 tsp. vanilla

Mix together all dry ingredients. Add 2/3 cup of milk or water and beat 2 minutes. Add remaining milk or water, eggs and vanilla and beat 2 more minutes. Pour into greased and floured 9 x 12-inch or two 8-inch cake pans. Bake at 300° for 22-25 minutes.

Cream of Soup Substitute Mix
Makes 9 (10 ounce) cans of soup

2 c. instant nonfat dry milk powder
3/4 c. cornstarch
1/4 c. Wyler's very low sodium instant bouillon
5 Tbsp. dried onion flakes
1/4 tsp. ground black pepper
1 Tbsp. dried basil
1 Tbsp. dried thyme

Mix all ingredients together in a medium bowl and store in airtight container. To substitute one 10 3/4 ounce can of cream soup, use 1/3 cup mix plus 1 1/4 cups water. Combine in a medium saucepan and cook until thick.
Note: Add sauteed chopped mushrooms, chopped celery or bits of cooked chicken to resemble the cream soup you usually use.

Basic Pudding Mix with Recipes

2-1/2 c. dry nonfat milk
1-1/2 c. sugar
1-1/4 c. all-purpose flour
1 tsp. salt

Mix all ingredients thoroughly and store in covered container. Prepare as directed in individual recipe.

Butterscotch Pudding Mix:
Follow recipe, substituting packed dark brown sugar for the white. Prepare pudding as directed for vanilla pudding.

Note: Double boiler must be used for all pudding recipes, else pudding will be too thick and gummy.

Vanilla Pudding From Mix:
1 1/4 c. Basic Pudding Mix
1 Tbsp. butter or margarine
1 egg, slightly beaten *
1 tsp. vanilla

*One egg substitute may be used.
In top part of double boiler, combine mix and 2 1/2 cups warm water. Put over boiling water and cook, stirring until thickened. Cover and cook, stirring once or twice, 10 minutes. Add butter and remove from heat. With spoon, beat half the mixture into egg, then stir into mixture in the double boiler. Cook, stirring, over hot water 1 minute. Remove from heat and stir in vanilla. Cool, stirring once or twice, then chill. Makes 4 to 6 servings.

Puddings From Basic Mix:
Chocolate Pudding:
Follow recipe for vanilla pudding, stirring 3 tablespoons cocoa into ingredients before cooking. Proceed as directed.

Mocha Pudding:
Follow recipe for chocolate pudding, stirring 2 teaspoons instant coffee powder into ingredients with cocoa. Proceed as directed.

Cream Rice Pudding:
Follow recipe for vanilla pudding, using either white or brown sugar. After removing from heat, stir in 2 cups cooked rice. Proceed as directed.

Peanut Butter Pudding:
Follow recipe for vanilla pudding, using either mix. Add 1/4 cup peanut butter to mix with water. Omit butter and proceed as directed.

Coconut Cream Pudding:
Add 1/2 to 1 cup toasted flaked coconut to cooked vanilla, chocolate or butterscotch pudding. Proceed as directed.

Fruit Pudding:
Serve chilled vanilla pudding on sliced fresh fruit or cooked dried fruit.
