Frugal Recipes/Part 2
Homemade Mixes

This may not work for those who have true meat lovers, but I often decrease the amount of meat, chicken or seafood called for in a recipe. If 1/2 pounds ground beef is listed, I will use only 1 pound or maybe 1 1/4 pound. Over a year it adds up in money saved and no one in our family has ever complained or even commented on their being less meat in the dish. 

One of the best cooking tips I ever received was to store fresh celery tightly wrapped in aluminum foil. It works great and I never have celery go bad.

I also save the water from cooking potatoes and use it instead of water in bread recipes, as well as casserole and soup recipes.

Hot Chocolate Mix Recipe

1 c. powdered sugar
2 c. powdered milk
dash of salt
1/4 c. cocoa

You can use sugar substitute if desired. For a richer tasting mix, add 1/3 cup powdered nondairy coffee creamer and/or a tablespoon or so of malted milk powder.

Spiced Tea Mix Recipe

2 (26 oz.) jars instant orange flavored breakfast drink
1 (3 oz.) jar instant tea
2 (8 1/2 oz.) pkg. red cinnamon candies
1 (6 oz.) pkg. sweetened lemonade drink mix
1 c. sugar
2 tsp. ground cinnamon
2 tsp. ground nutmeg
2 tsp. ground cloves
2 tsp. ground allspice

Combine all the ingredients, stirring well. Store mixture in an airtight container. To serve, place 1 tablespoon plus 1 teaspoon mixture in a cup. Add 1 cup boiling water, stirring well. Yields 14 cups.

Blackened Fish Seasoning Mix

4 Tbsp. paprika
3 Tbsp. salt
4 tsp. onion powder
4 tsp. granulated garlic
4 tsp. red pepper (cayenne)
1 Tbsp. white pepper
1 Tbsp. black pepper
2 tsp. thyme
2 tsp. oregano

Use 1/2-inch fillets of redfish, golden tile, snapper or grouper. Heat cast-iron skillet until white hot. Coat fish fillets with melted butter and sprinkle with spice mix until well coated on each side. This recipe makes about 1 cup and will keep very well in sealed container.

Pancake Mix Recipe

8 c. sifted flour
4 c. Buckwheat flour
2 Tbsp. salt
3/4 c. baking powder
3/4 c. sugar
4 c. dry milk

Mix well all ingredients. Store in airtight containers. When ready to use for each 1 1/2 cups pancake mix use 1 beaten egg, 1 cup water and 2 tablespoons melted shortening. Mix well and fry on hot griddle.

Master Cookie Mix Recipe

9 c. flour
4 tsp. baking soda
2 tsp. salt
3 c. brown sugar, packed
3 c. granulated sugar
4 c. shortening
4 (12 oz.) pkg. chocolate chips
4 c. chopped pecans

Combine dry ingredients in a large bowl. Cut in shortening and add chocolate chips and pecans. Store.

To make cookies, combine 4 cups cookie mix, 2 eggs and 1 teaspoon vanilla. Bake at 375° for 10 to 12 minutes. Makes 2 dozen.

Homemade Seasoned Bread Crumbs
If you like to use seasoned breadcrumbs a lot, mix up your own with something like this:

2 cups dried breadcrumbs
1 tsp salt
2 tsp paprika
1 tsp celery salt
1 tsp onion salt
1/4 tsp black pepper
1 tsp poultry seasoning

Mix together and store in a covered container or in the freezer. Use for fried or oven fried chicken, breaded pork chops, fried fish filets, and so forth.

Homemade Old Bay Seasoning Recipe

1 Tbs celery seeds
1 Tbs whole black peppercorns
6 bay leaves
1/2 tsp whole cardamoms
1/2 tsp mustard seeds
4 whole cloves
1 tsp sweet Hungarian paprika
1/4 tsp mace

Put it all in a food processor or grinder and grind till powdery.

Apple Pie Spice

1/4 c. cinnamon
2 tsp. nutmeg
1 tsp. allspice
1 tsp. ground ginger

Mix all spices well. Store in a spice jar or airtight container.

I am missing three messages for today's newsletter.  All three of the messages have to do with how to modify today's smaller cake mixes to what they used to be. Cake mixes now have 2-3 ounces less in a package than before.  I will include those tips in tomorrow's newsletter.  I have being going to a class in the evenings and just didn't have time to seek them out in the deep dark depths of my computer where I they were lost yesterday.

Homemade Potato Soup Mix Recipe

1-3/4 cups instant mashed potatoes
1-1/2 cups dry milk
2 tablespoons instant chicken bouillon
2 tablespoons dried minced onion
1 teaspoon dried parsley
1/2 teaspoon ground white pepper
1/4 teaspoon dried thyme or Sage
1/8 teaspoon curry powder or Cumin
1 teaspoon Seasoning salt

Combine all ingredients in a Ziploc bag and shake to mix.

To Use: add 1/2 cup mix in soup bowl & add 1 cup boiling water. Stir until smooth.

Spicy Jalapeno and Bacon Flatbread

1 lb refrigerated pizza dough
10 oz PHILADELPHIA spicy Jalapeño cream cheese spread
8 slices cooked OSCAR MAYER Butcher Thick Cut Apple wood Smoked Bacon, crumbled
1 cup cherry tomatoes, halved
¼ cup thinly sliced red onion
1 cup KRAFT shredded three cheese with a TOUCH OF PHILADELPHIA

Heat oven to 425ºF. Pat pizza dough into 16 x 12-inch rectangle on lightly floured baking sheet. Bake 10 min. Spread crust with cream cheese spread; top with remaining ingredients.

Bake 10 to 12 min. or until shredded cheese is melted and crust is golden brown.

Substitute drained canned pineapple tidbits for the halved cherry tomatoes.

Prepare using thawed frozen pizza dough.
