Potato Recipes

Baked Potato Casserole

5 large potatoes, cooked and diced
6 slices bacon, cooked and crumbled
1 1/2 pounds shredded cheddar cheese
1 pint sour cream
2 bunches chopped green onions; sauteed in bacon grease
salt and pepper to taste

Mix all ingredients. Pour into casserole and bake 30 minutes at 325 degrees F.
Serves 10 to 12.

Potatoes Au Gratin Recipes

4 to 6 white potatoes
1 onion, sliced in rings
1 cup milk, or half and half
2 tablespoons butter, melted
1 cup shredded cheese
1/2 cup bread crumbs
salt and pepper to taste

Slice potatoes thin. In a greased casserole dish, place a layer of potatoes, onion rings and salt and pepper to taste. Fill the dish to within 1 inch of the top. Pour milk or half and half over potatoes, and spread cheese on top evenly. Mix together the bread crumbs and melted butter. Sprinkle this over the cheese and place dish in a hot 425F oven until potatoes are tender, about 20 or 30 minutes, depending on how deep your dish of potatoes are. Makes 6 servings.

Homemade Potato Chips Recipe

2 large russet potatoes
peanut or corn oil as needed for deep frying
salt and pepper, to taste

Slice the potatoes very thin, using a sharp knife or a mechanic mandolin.
Heat the oil over medium heat until the it reads 360F on an oil thermometer, or test the oil by dropping in one potato slice.
Drop the potatoes into the oil and stir them around with a spoon.
Cook until crisp and just beginning to brown, about 4 minutes.
Remove with a slotted spoon and place on a plate covered in paper towels. Immediately sprinkle with salt and pepper.

Buttermilk Mashed Potatoes Recipe

1 1/4 pounds white boiling potatoes, peeled and sliced
1 teaspoon salt
3/4 cup warm buttermilk
1/2 teaspoon baking soda
2 teaspoons unsalted butter
greshly ground black pepper

Place the potatoes and salt in a medium saucepan and add enough water to cover. Bring to a boil over high heat. Reduce the heat and simmer until the potatoes are pierced easily with a fork, about 10 minutes. Drain, reserving a few tablespoons of the cooking liquid. Place the potatoes in a large bowl and partially mash. Add the warm buttermilk and baking soda, mix well and mash completely. Stir in the butter and pepper and adjust the seasoning as needed. If you like your mashed potatoes creamy, add the reserved cooking liquid. Serve immediately. 4 servings.

Original Ranch® Mashed Potatoes

1 packet/1 ounce Hidden Valley® Original Ranch® Salad Dressing and Recipe Mix
4 cups hot unsalted mashed potatoes, with or without skins
butter or margarine

Add salad dressing and recipe mix to potatoes; stir well. Serve with butter or margarine, if desired.
Makes 4 servings

Baked Potato Sticks Recipe

4 to 6 baking potatoes
2/3 cup butter, melted
2 tablespoons soy sauce
1/3 cup corn flake crumbs
1 tablespoon sesame seeds

Select 4 very large or 6 medium size potatoes. Scrub well and cut each potato in to 6 or 8 wedges, lengthwise. Arrange on a baking sheet. Combine melted butter and soy sauce and brush over potatoes. In small bowl, combine corn flake crumbs with sesame seeds. Sprinkle over potatoes. Bake in preheated 400F oven for 35 minutes or until crisp and lightly browned.

Sweet Potato Recipes

Amish Pumpkin Pancakes

1 c. flour
Pinch baking soda
2 tbsp. sugar
1/4 tsp. cinnamon
1/8 tsp. ginger
1/8 tsp. nutmeg
1 egg well-beaten
1 1/4 c. milk
2 tbsp. melted shortening
1/2 c. canned pumpkin or mashed sweet potato, cooked

Combine flour, soda, sugar and spices. Combine egg, shortening, pumpkin and milk; add to flour mixture, beating until smooth. Bake on hot, lightly greased griddle, turning only once. Serve hot with butter and syrup or powdered sugar.

Candied Sweet Potatoes

6 lg. sweet potatoes
2 c. sugar
1 stick butter
1/4 tsp. nutmeg

Peel and slice potatoes. Put into baking dish. Pour sugar over potatoes, dot with margarine and sprinkle with nutmeg. Cover with foil and place pan in 350 degree oven. Cook 1 hour, then remove foil and cook 15 minutes more. If potatoes make too much juice, pour off some, then cook a few more minutes. juice will then get syrupy.

Kaukau Kasserole

4 sweet potatoes
4 bananas, sliced
1 1/2 t. salt
3/4 c. packed brown sugar
4 T butter
1/2 c. orange juice

Cook unpeeled, potatoes in boiling water until tender but firm. Drain, peel & slice 1/4 in. thick. In greased, shallow casseroled, make alternate layers of potatoes and bananas, sprinkling each layer w/salt, brown sugar and dotting with butter. Pour on orange juice & bake 350 for about 30 min until brown on top.
4-6 servings.

Italian Dressing Mix Recipe

1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon white sugar, optional
2 tablespoons dried crushed oregano
1 teaspoon ground black pepper or to taste
1/4 teaspoon dried crushed thyme
1 teaspoon dried crushed basil
1 tablespoon dried crushed parsley
1/4 teaspoon celery salt
1 to 2 tablespoons salt or to taste

In a small bowl, mix together the garlic powder, onion powder, sugar, oregano, pepper, thyme, basil, parsley, celery salt and regular salt. Store in a lightly sealed container.

To prepare dressing, whisk together ¼ red vinegar, 2/3 cup olive oil, 2 tablespoons water and 2 tablespoons of the dry mix. Mix well and refrigerate for 4 hours so it can marry.

This version does not include any salt, which we prefer. Yu can add salt to the mix, if you want .

Lipton's Dry Onion Soup (Copycat)

3/4 C. dry minced onion
1/3 C. beef bouillon powder
4 tsp. onion powder
1/4 tsp. crushed celery seed
1/4 tsp. granulated sugar

Combine all ingredients. Store in an airtight container. About 5 tablespoons of mix are equal to 1 (1.25 ounce) package.

Onion Dip:
Mix 5 tablespoons dip mix with one pint sour cream.

This may have come from a 2007 or 2008 newsletter. I no longer remember where I found this . You can cut the recipe in half to make a smaller amount and certainly reduce the sugar and salt listed in the recipe. We have always found the store bought mix too sweet for our tastes.

Jiffy Cornmeal Muffin (Clone)

4 cups flour
4 cups cornmeal
1 1/2 cups nonfat dry milk or dry buttermilk powder
2/3 cup granulated sugar (optional)
1/4 cup baking powder
2 teaspoons salt
1-1/2 cups shortening

Sift dry ingredients together until well mixed. Cut in fat until well blended. Place in a glass jar. Keep tightly closed in a cool place. Mixture will keep for 1 to 6 months on the shelf in dry weather. In hot and humid weather, store in the refrigerator.

Cornmeal Muffins
Grease 8 medium-size muffin cups. Combine 2-1/4 cups Cornmeal Mix, 2/3 cup water and 1 beaten egg. Stir just enough to moisten dry ingredients. Fill muffin cups 2/3 full. Bake at 425 degrees F for about 20 minutes.
Makes 8.

Cornmeal Biscuits
Add about 1/2 cup water to 2 cups Cornmeal Mix to make a soft dough. Drop by tablespoonfuls onto a greased baking sheet. Bake at 425 degrees F for 12 minutes.
Makes 12 biscuits.

Combine 4 1/2 cups Cornmeal Mix, 2 beaten eggs and 1 1/3 cups water. Stir just enough to moisten dry ingredients. Pour into a greased pan, about 8 inches square. Bake at 425 degrees F for about 25 minutes. S
Serves 12.

Blueberry Cornbread
Add 1 cup fresh or partially-thawed frozen blueberries to Cornbread batter and mix gently. Bake as directed.

Cheese Cornbread
After turning Cornbread batter into pan, sprinkle with shredded Cheddar cheese and sesame seed. Bake as directed.
