My son sent me a shipment from the Fish Market in Seattle of Copper River Salmon and this year he included a lb. of sole. This is the easy recipe I used last night.

Filet of Sole Meuniere Recipe

4 filets of sole seasoned w/salt & pepper
2 T. lemon juice
1 T. chopped parsley

Brown filets on both side in butter over med. heat. When easily flaked remove to warm platter. Put 2 T of lemon juice in the butter remaining in pan. Sprinkle in chopped parsley & scrape up brown flecks left in pan. Top cooked filets with this “sauce”. Serves 4.

Note! I did not
have any parsley so used a frozen cube of parsley. I am so glad that you can now buy frozen herb cubes in the freezer section!

This is for the lady who wanted a different way to marinate chicken. This is my favorite. It can be cooked in a frying pan on the stove but I prefer to do it on my gas grill.

Grilled Greek Chicken Recipe

1/2 Cup Olive Oil
3 Cloves Garlic
1 tsp. Season Salt
1 Tbs. Chopped fresh Rosemary
1 Tbs. Chopped fresh Thyme
1 Tbs. Chopped fresh Oregano
2 Lemons, juiced
1–4 lb. Chicken Breasts

Combine all ingredients in ziplock bag and marinate several hours or overnight in refrigerator. Remove chicken and discard marinade. Grill chicken on grill and turn over every 5 minutes for about 30-35 minutes,
until done.

Instead of Rosemary, Thyme and Oregano, I use Italian Seasoning.
I also use "real lemon" if i don't have the real ones. I don't measure, I just pour about equal amounts in a zip log bag.

This is for bojk1 requesting a marinade for chicken from the 6-3-2014 Newsletter. This is from my sister and was in the family cookbook I printed for family Christmas gifts many years ago. It is a family favorite and used often.

Marinade Recipe

1-1/2 cups salad oil
3/4 cup soy sauce
1/4 cup Worcestershire sauce
2 tablespoons ground pepper
1/2 cup rice wine vinegar
1-1/2 teaspoons dried parsley flakes
2 cloves garlic, crushed
1/3 cup lemon juice

Combine all ingredients together. Mix well. Use only amount needed and discard after use. Good for chicken, beef or pork. Store leftover in freezer indefinitely or in refrigerator for 1 week.
Makes about 3-1/2 cups

Looking for the recipe for cookies. I made these cookies when my kids were in high school in the late 70's and now they would really like them again. You made a dough and then put 1/2 of the Andes candy on top and that is all I remember. Can anyone help?

Hi! I am looking for the recipe for scalloped potatoes that has Chicken broth and some in the sauce instead of milk. I know you cook it on the stove with a little mayo in it and then pour over sliced potatoes. Do you happen to have this recipe

Spam Recipes
These recipes use Spam but ham could be substituted in the all the recipes. Unless stated otherwise in the recipe, a can of Spam is the 12 ounce size.


Baked Spam Recipe

1 can Spam
cloves
1/3 c. brown sugar
1/2 tsp. vinegar
1 tsp. prepared mustard
1 tsp. water

Score a whole Spam loaf and dot with cloves. Bake 35 minutes at 375°. Baste with mixture of brown sugar, vinegar, prepared mustard and water.
Makes 4-6 Servings

Green Pea Salad Recipe

1 (14 ounce) can LeSuer peas
1 small onion, grated
2 hard-cooked eggs
1/2 cup chopped celery
1 small can Spam
1/2 cup mayonnaise

Grate onion in mixing bowl. Drain peas. Chop the eggs fine. Cut ham in small cubes. Combine all ingredients; mix well. Chill and serve.

Makes 4 Servings

Spam Sandwich Spread Recipe

2 boiled eggs
1 can Spam
2 carrots
1 small onion
1/2 cup salad dressing
2 Tbsp. vinegar
2 Tbsp. sugar

Grind together the eggs, Spam, carrots and onion, then add salad dressing, vinegar and sugar.
Makes 4-6 Servings.

Spam Casserole Recipe

1 (16 oz.) jar Cheez Whiz
1 can Spam, diced
6 medium potatoes, diced

Mix together Spam and potatoes. Add Cheez Whiz. Bake at 350°, covered, until potatoes are tender.

Rice Casserole Recipe

4 cup cooked rice
1 can Spam, cut in small pieces
4 to 5 slices American cheese, quartered
1 tsp. salt
butter to taste

Place cooked rice in buttered dish. Place Spam and cheese on top of rice. Put pieces of butter or margarine on top. Place in oven at 350°. Cook until Spam is tender and cheese is melted.
Makes 4 Servings

Cornflake Baked Spam Recipe

1/2 cup corn flake crumbs
2 Tbsp. brown sugar
1/8 tsp. ground cloves
1 (12 oz.) can Spam
2 Tbsp. prepared mustard
pineapple slices
melted butter

Combine corn flake crumbs, brown sugar and cloves. Cut Spam crosswise into eight slices. Spread both sides of slices with mustard, then coat generously with a crust of corn flake crumb mixture. Place Spam and pineapple slices individually in a foil lined shallow baking pan; do not crowd. Brush pineapple slices with butter. Bake in 350° oven for 20 minutes. Serve on heated platter, placing a Spam slice on each pineapple slice.
Makes 4 Servings

Spam and Macaroni Casserole Recipe

1 (8 oz.) pkg. elbow macaroni
1 can cream of mushroom soup
1 cup milk
1 cup grated Cheddar cheese
2 cups Spam, cubed
1/4 cup green pepper, chopped

Cook macaroni and drain. Combine soup, milk and cheese. Simmer and stir until cheese is melted. Mix all ingredients and pour into a 1 1/2-quart casserole. Bake at 350° for 30 minutes.
Makes 4-6 servings

Spam Omelet Recipe

1/2 c. green bell pepper
1 small onion
1 small can mushrooms
2 (1/2-inch) slices Spam
3 eggs, slightly beaten
1 Tbsp. margarine
salt to taste

In a saucepan, melt margarine. Dice pepper and onion. Drain mushrooms. Cut meat into small pieces. Saute all of this together until done. Add eggs and salt; stir and cook until eggs are done. Serve hot.
Makes 2-3 servings

Spam Salad

1 head lettuce
1 (14 ounce) can Veg-All
1/2 lb. cubed ham, Spam
1/2 cup mayonnaise
2 Tbsp. milk
1 Tbsp. sugar

In a large bowl, break lettuce into bite-size pieces. Add drained vegetables, then cheese or ham or both, if you wish. Mix mayonnaise, milk and sugar. Pour over salad. Toss lightly, coating all. Serve with a roll and beverage for a nice lunch. Makes enough for a picnic. Store leftover in refrigerator. Keeps well.

Sweet and Sour Spam Kabobs

1 (15 oz.) can pineapple chunks
3 Tbsp. brown sugar
1 Tbsp. cornstarch
3 Tbsp. vinegar
3 Tbsp. soy sauce
2 cans Spam, cut into 1-inch squares

Drain pineapple; reserve juice. In saucepan mix brown sugar and cornstarch. Slowly add juice, vinegar and soy sauce. Cook and stir until thick and bubbly. Cook 1 to 2 minutes more. On toothpicks thread meat and pineapple. Place on cookie sheet. Baste with sauce. Broil 4 to 5 inches from heat for 8 to 10 minutes. Turn once and baste with sauce. Keep remaining sauce for dipping.
Makes 6-8 Servings

Barbecue Spam

1 can Spam
1 cup catsup
1 Tbsp. vinegar (optional)
onions as desired
1/4 cup Worcestershire sauce

Cook onion slices in hot fat until tender. Mix and add other ingredients, except Spam. Add strips of Spam. Heat to boiling. Spoon meat sauce over hot, fluffy rice.
Makes 4 Servings

Chicken Fried Spam

1 can Spam
1 egg
1/4 cup milk
flour

Cut Spam in about 6 or 8 slices. Roll in flour. Beat egg and milk. Dip the floured Spam into egg mixture, then back in the flour. Be sure and put a thick coating on Spam. Fry in skillet as you would chicken fry.
Makes 4-6 Servings

Spam Stroganoff

1 can Spam
2 Tbsp. onion, minced
1 (4 oz.) can mushroom stems and pieces
1 can cream of mushroom soup
1-1/2 cup milk
1 cup sour cream
1 small package noodles

Cut Spam into cubes. Brown Spam, onions and mushrooms in a large skillet. Mix mushroom soup and milk together. Add soup mixture to Spam in skillet. Let simmer about 15 minutes; stir frequently.

Cook noodles and drain. Add sour cream to Spam mixture; stir. Simmer for 5 minutes. Pour Spam mixture over drained noodles.
Makes 4-6 Servings
