Best of the Past | Jar Mix Cookie Recipes

Jar Mix | Chocolate Raisin Cookies Recipe

3/4 cup sugar
1/2 cup packed brown sugar
1 cup chocolate covered raisins
1/2 cup milk chocolate chips
1-3/4 cups flour mixed with 1 tsp. baking powder and 1 tsp. salt

Layer ingredients in jar in order given. Press each layer
firmly in place before adding next ingredient.

Add these instructions to jar:
To make Chocolate Covered Raisin Cookies:
Empty cookie mix in large mixing bowl; stir to combine. Add 1/2 cup softened butter, 1 egg slightly beaten and 1 tsp. vanilla; mix until completely blended. Roll heaping tablespoonfuls into balls.

Place 2 inches apart on a lightly greased cookie sheet. Bake at 375º for 13 to 15 minutes until tops are very lightly browned. Cool 5 minutes on cookie sheet; remove to wire racks to cool completely.
Yield: 2-1/2 dozen.

Jar Mix | Oatmeal Chocolate Chip Cookies Recipe

3/4 cup white sugar
3/4 cup packed brown sugar
1 cup rolled oats
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup semisweet chocolate chips
1 cup chopped walnuts (optional)

Using a 1 quart or 1 liter jar, layer in the ingredients in the order given.

Pack down the jar after each addition. Put the lid on, and cover with an 8 inch circle of fabric. Secure the fabric over the lid using a rubber band, then cover the rubber band by tying a nice piece of ribbon around the lid.

Attach these instructions to jar:
To make Oatmeal Chocolate Chip Cookies Cookies:
Preheat oven to 350 degrees F. In a medium bowl, cream together 3/4 cup of softened butter, with 2 eggs and 1 teaspoon of vanilla. Add the entire contents of the jar, and mix by hand until combined. Drop dough by heaping spoonfuls onto a lightly greased cookie sheet. Bake for 12 to 15 minutes.
Makes 2 dozen.

Jar Mix | Almond Cookies Recipe

1 C. shredded coconut
1/2 C. sliced almonds, toasted and cooled completely
1/2 C. packed dark brown sugar
1 C. buttermilk biscuit and baking mix
1/2 C. packed light brown sugar
1 C. buttermilk biscuit and baking mix

NOTE: To toast almonds, place them on a microwave-safe plate
and microwave on high for 1 to 4 minutes, stirring every
minute. Timing is determined by wattage of your microwave.

In 1-quart wide-mouth glass jar, gently layer and pack ingredients in the order listed (yes, there are two layers of biscuit and baking mix). If there is any space left after adding the last ingredient, add more baking chips or nuts to fill the jar. Place lid on top.

Attach these instructions to jar:
To make Almond Cookies:
Empty contents of jar into medium bowl. Stir in 1 stick butter or margarine, melted, 1 large egg and 1 teaspoon vanilla extract until well combined. Shape into 1-inch balls. Place on baking sheets coated with cooking spray.

Bake at 375ºF for 10 to 12 minutes or until cookies are light golden brown.
Makes 2 1/2 dozen cookies.

Jar Mix | Applesauce Cookies Recipe

1 cup brown sugar
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
3/4 cup raisins
3/4 cup chopped nuts

Combine flour, salt, cinnamon and baking soda
- stir well. Place flour mixture in a clean mason jar. Pack down tight so everything will fit in the jar. (Use a spoon or a mallet.) Add other ingredients, one item at a time, packing each
layer down.

Put the lid on the jar and tie a ribbon around the lid. You can add a personalized label, if you wish. As an added touch, tie a wooden spoon to the lid with a piece of ribbon.

Instructions for Gift Card:
To make Applesauce Cookies:
Whip 3/4 cup of butter or shortening until light and fluffy. Add 1 egg and 1/2 cup applesauce and beat until mixed. Stir in the ingredients from this jar until well combined. Drop teaspoons of dough on a greased cookie sheet. Bake for 8 - 12 minutes at 350 degrees F.

Jar Mix | Chocolate Pecan Cookies Recipe

1 cup sugar
1/3 cup firmly packed brown sugar
1/2 cup cocoa powder
(clean inside of jar with a paper towel after this layer)

1 cup chopped pecans
1 3/4 cups flour mixed with 1 tsp baking soda

Layer ingredients in order given in a 1 quart wide mouth
canning jar, pressing down firmly after each ingredient.

Attach these instructions to jar:
To make Chocolate Pecan Cookies:
Empty jar into large mixing bowl, use your hands to thoroughly mix. Add 1 stick soft butter, 1 egg (slightly beaten) and 1 tsp vanilla (optional). Mix until completely blended - you will
need to finish mixing with your hands.

Shape into balls the size of walnuts. Place 2" apart on sprayed cookies sheets. Bake 375 for 11-13 minutes until edges are lightly browned - cool 5 minutes on baking sheet and remove cookies to racks to cool completely.

Jar Mix | Cranberry Cocoa Cookies Recipe

Layer the following ingredients in order in a
wide mouth quart size canning jar:

3/4 cup sugar
1/3 cup cocoa powder
(clean inside of jar with tissue after this layer)

1/2 cup brown sugar (pack firmly)
1 1/2 cup dried cranberries
1 cup chocolate chips or shaved summer coatings
1 3/4 cup flour + 1 tsp. baking powder
+ 1/2 tsp baking soda (mixed)

Remember to press firmly between each layer. Place
lid and ring onto jar.

Add these instructions to jar:
To make Chocolate Cranberry Cookies:
Empty jar of cookie mix into large mixing bowl. Add 1-1/2 stick butter or margarine, 1 egg, and 1 tsp. vanilla. Mix until completely blended. Shape into balls and place 2" apart on sprayed baking sheets. Bake at 375 degrees for 13-15 minutes.
Makes 2 1/2 dozen cookies.

Jar Mix | Chocolate Chip Cookies Recipe

1 2/3 cups all-purpose flour
3/4 teaspoon baking soda
1/2 cup white sugar
2 cups semisweet chocolate chips
1/2 cup packed brown sugar

Combine the flour, baking soda, white sugar, and the chocolate chips. Place 1/2 of the mixture in a clean quart sized glass jar, and pack firmly. Place the brown sugar on top, again packing firmly. Place the remaining flour mixture on top. Cover with a lid.

Attach these instructions to jar:
To make Chocolate Chip Cookies:
Empty contents of jar into a large bowl. In separate bowl combine 3/4 cup of butter, 1 1/2 eggs, and 1 teaspoon vanilla. Beat until creamy. Add to dry mixture. Drop by tablespoonful onto an ungreased cookie sheet, and bake in a preheated 375 degrees F (190 degrees C) oven for 8 to 10 minutes.
Makes 2 dozen.

If your quick bread has:
Tunnels and voids: Tunnels and voids in the bread are a symptom of over mixing. Mix only until the dry ingredients are moistened. Some lumps may remain

Tough texture: A tough texture instead of a tender texture is another symptom of over mixing. Occasionally, too high of baking temperature will cause toughness.

Soggy texture: If the batter is left for too long before baking, it may be soggy or sunk in the middle. If the there is too much liquid or not enough leavening, the bread may be soggy.

Coarse, crumbly texture: The bread should be moist and dense. Too much fat or too much leavening will cause the bread to be crumbly.

Bitter, soapy aftertaste: Too much baking soda or baking powder will create an aftertaste.Too thick or too brown of a crust: A tough thick crust may be caused by too high of oven temperature or too much sugar.

Greasy crumb: Too much fat will create a greasy texture.

Crisp edges: Too much fat or too much fat and sugar will create crisp edges.

Cracked top: A cracked top is desirable and not a fault.

In the 4/16 newsletter Barbara asked what I serve with the Snickers salad. I have taken it to many pitch-ins - pot lucks and served it at our family dinners. Main dishes have included: grilled hamburgers and hot dogs, sloppy Joes, ham, baked chicken nuggets, tacos, chicken or beef enchiladas, various types of lasagna, King Ranch chicken casserole, as well as many other casseroles. It has always been a huge hit and leftovers are rare. I have even been requested to make it for a Thanksgiving dinner that we attended.

I just got this from a friend on Facebook and it sounds soooo good!

Sweet Hawaiian Chicken Recipe

2 lbs. chicken breast cut into pieces
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup soy sauce

Mix all together well
Put into crockpot on low 6-8 hours

You can add pineapple chunks, small bell pepper pieces. Also you may add a few maraschino
cherries
Can add a little apple cider vinegar to make it sweet and sour.

This was served in a restaurant in Southern California. They would bring the menus, dish with radishes, olives, carrot sticks celery and green onions with this dip. Sooooo Gooooood!!

Curry Veggie Dip Recipe

1 cup mayo
1tsp curry powder
1TBSP fresh lemon juice (only fresh)
2 TBSP grated onion

Mix well let it sit for at least 2 hours

This recipe I got from a Japanese exchange student in 1962. The eggs look like black and white marble but excellent.

Japanese Marbled Eggs

Boil 18 eggs til hard, uncovered, drain. Then put into cold water. Once cold, crack eggs with
back of a spoon
In a saucepan put in ;
6 cups water
1/4 cup soy sauce
6 black tea bags (I use Lipton's)
3 TBSP salt

Bring mix to boiling drop eggs back in and turn off heat. Put a lid on let sit over night. Take out tea bags before going to bed. Next day peel eggs. I arrange them on a bed of nice greens and they look just like marble eggs.They taste great too!

It's a bit early but here is a great punch.

Wedding Punch Recipe

4 cups brewed black tea, chilled
4 cups apple juice, chilled
2 cups unsweetened pineapple juice, chilled
2 bottles chilled club soda
orange, lemon slices , and or fresh mint for garnish.

Combine tea, apple juice and pineapple juices in a large punch bowl. Then add club soda garnish with fruit and or mint pieces. Then add ice to punch bowl serves 10-12 people. Always figure 2 cups to be served to each person.

I no longer remember where I obtained this recipe. I avoid buying commercially prepared seasoning mixes. I make my own, as it is cheaper and I can omit the salt.

Fajita seasoning Mix Recipe

3 Tbsp. cornstarch
2 Tbsp. chili powder
1 Tbsp. salt - I omit this
1 Tbsp. paprika
1 Tbsp. sugar
2-1/2 tsp. crushed chicken bouillon cube
1-1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp cayenne pepper
1/4 tsp. crushed red pepper flakes
1/2 tsp. cumin

Combine all of the ingredients in a small bowl. Pour into small glass or plastic container, seal tightly and store in a cool, dry place. Makes the equivalent of 3 packets of commercial or purchased Fajita Seasoning Mix.

Brussels Sprouts with Bacon Recipe

Ingredients:
1-1/2 pounds Brussels sprouts, trimmed and halved
4 strips crisp-cooked bacon, finely chopped
1/4 cup reduced-fat sour cream
2 teaspoons prepared horseradish
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper

Directions:
Place a steamer basket in a large saucepan, add 1 inch of water and bring to a boil. Put Brussels sprouts in the basket and steam until tender, 6 to 8 minutes. Mix bacon, sour cream, horseradish, salt and pepper in a medium bowl. Add the Brussels sprouts and toss to coat.

Nutrition:
Per serving: 80 calories; 3 g fat (1 g sat, 1 g mono); 8 mg cholesterol; 9 g carbohydrates; 0
g added sugars;5 g protein; 3 g fiber; 222 mg sodium; 431 mg potassium.

Sweet and Spicy Coconut Sauce Recipe

Ingredients:
2/3 C heavy cream
3 T butter
1 T coconut extract
1 T ground coriander
1 T ground cumin
1/2 T ground nutmeg (optional)
Splenda to taste
Chili powder/sauce to taste

Directions:
Melt 2 T butter in a pan and allow to slightly brown but DO NOT BURN. Just a nice caramel color. Immediately add all other ingredients and begin stirring over medium heat. Let the sauce simmer until it starts to thicken. Turn off the heat, add the remaining butter, stir until melted then pour over fish or chicken. The nutmeg is best if freshly ground.

Serve: This sauce is especially great on sea bass, orange roughy or shrimp.

Orange Ginger Cream Sauce
Same as coconut sauce recipe except substitute orange extract for coconut and add 2 T
freshly ground ginger.
