Lemon Chicken Recipe

4 boneless, skinless chicken breasts
1-1/2 Tbsp. margarine, divided
2 tsp. lemon peel
1 c. chicken broth
1 tsp. dry tarragon
2 Tbsp. lemon juice
2 tsp. flour

Melt 1 tablespoon margarine in skillet. Add chicken and brown for 3 minutes. Add broth, peel, tarragon and juice. Reduce heat, cover and simmer until meat is no longer pink, 10 to 12 minutes. Remove chicken to serving dish. Melt 1/2 tablespoon margarine, stir in flour and add juices. Bring to a boil and stir until it thickens. Pour over chicken and serve immediately.

Baked Lemon Chicken Recipe

1 package. chicken breasts, skinned
3 tablespoons fresh lemon juice or 1 lemon, squeezed
1/2 teaspoon lemon pepper
1/2 teaspoon garlic salt

Preheat oven to 350°. Spray shallow baking dish with Pam. Add chicken, pouring lemon juice on each piece. Sprinkle lemon pepper and garlic salt. Spray chicken with Pam. Bake 60 minutes.

Lemonade Syrup for Southern Style Lemonade

2 c. sugar (or sugar substitute)
1 c. water
1 c. fresh squeezed lemon juice

Combine sugar and water in saucepan. Bring to boil and boil for 5 minutes. Cool and add lemon juice. Strain the syrup to remove unwanted pulp and seeds. Store in covered glass jar in refrigerator. When ready to serve, add 2 Tbsp. of syrup to 1 glass of cold water, stir to mix, add ice and enjoy.
Makes 2-1/2 cups of syrup.
Will keep in refrigerator for 3 weeks.

Lemon Cheese Cake Recipe

1/3 lb. graham crackers, crushed
1/4 lb. (1 stick) butter
1/3 c. white sugar
1 (3 3/4 oz.) pkg. instant lemon pudding
1 (8 oz.) pkg. cream cheese
2 c. milk

Melt butter in 8 or 9-inch pan. Mix in crushed graham crackers and granulated sugar. Press evenly in bottom of pan, reserving about 1/4 cup for topping. Chill while preparing filling.

Slowly blend softened cream cheese with milk until smooth. Gradually add instant lemon pudding and beat about 2 minutes (or until smooth and well blended). Pour into prepared crust and sprinkle with reserved crumbs. Chill until ready to serve.

Asparagus with Lemon Sauce Recipe
Makes 4 Servings

1 (10 ounce) package frozen asparagus spears
1 tablespoon reduced calorie margarine
2 teaspoons grated lemon rind
1 egg
1/2 teaspoon cornstarch
1/4 cup lemon juice

Cook asparagus according to package directions, omitting salt and fat. Drain well. Place in a serving dish. Combine egg and cornstarch, stirring to blend. Melt margarine over low heat in a small skillet. Add egg mixture. Stir in lemon juice. Continue to cook over medium heat until thickened and bubbly. Pour over asparagus and sprinkle with lemon rind.

Baked Fish in Lemon Sauce Recipe
Makes 4-6 Servings

1/4 cup margarine, melted
2 tablespoons lemon juice
2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon paprika
2 to 3 pound fresh fish or 1-1/2 pound fish fillets
1 green pepper, sliced into rings
1 onion, sliced into rings

In baking dish, put onion and green pepper on fish. Pour sauce onto fish. Cover. Bake at 350° for 35 to 40 minutes.

Bread Pudding with Lemon Sauce Recipe

Bread Pudding:
8 slices bread, diced
1 stick margarine
3 egg yolks
1/8 teaspoon salt
3 cups milk, warmed
1 teaspoon cinnamon
1 teaspoon vanilla

Lemon Sauce:
1 cup water
1/2 cup sugar
2 tablespoons margarine
1 tablespoon cornstarch
2 tablespoons lemon juice

Place all ingredients in a 2-quart casserole dish. Bake at 350° for 30 to 35 minutes. Remove and let cool.

Lemon Sauce: Place all ingredients in a saucepan and continuously stir over low heat until sauce thickens.

Fresh Broccoli with Lemon Sauce Recipe

6 quart boiling water
1/4 cup olive oil
1/2 clove garlic, finely chopped
2 tablespoon lemon juice
1 bunch broccoli (about 1-1/2 pound.)

Wash and separate stalks into sections. Place in boiling 6 quarts of water; salt to taste. Cook, covered, for 10 minutes or until tender. Drain. In same pan, place oil and garlic. Heat until bubbly. Add broccoli and sprinkle with lemon juice and 1/2 teaspoon salt. Cook, covered, for 1 minute or until heated through. Serve hot.
Makes 4 servings.

Brussels Sprouts in Lemon Sauce Recipe
Makes 6 Servings

2 (10 ounce) packages frozen Brussels sprouts
1/4 cup margarine
2/3 cup mayonnaise
2 tablespoons lemon juice
1/2 teaspoon celery salt
2 tablespoons Parmesan cheese
1/4 cup sliced almonds

Cook sprouts according to directions, omitting salt. Drain. Place them in a shallow 2-quart casserole; keep warm.

Melt margarine in saucepan Add mayonnaise, lemon juice and celery salt. Beat with wire whisk until smooth. Cook over medium heat until hot, stirring constantly (do not boil). Pour sauce over sprouts, sprinkle with cheese and almonds. Serve warm.

I need recipes I can make in a crock pot and are Weight Watcher friendly. I like the kind of recipes that are a whole meal in the crock pot type.

Several years ago I copied down the recipe for The Best Spaghetti Sauce. It had pickles or pickle juice in it. Does anyone have that recipe where they can find it. My recipes tend to go in the big black hole, never to be seen again. I also need the recipe for Incredibly Delicious Banana Bread too. The names may not be exact but are close. Thanks.

When I was in high school home ec we made refrigerator bran muffins. I can't find the recipe anywhere and would like the make them again.

My husband's favorite baked bean dish is one that uses pork and beans and has pineapple in it. I think I used to make it in a crockpot but am not sure. Can any of you NancyLanders help me.

Years ago my mother made a pie that was called a Jeff Davis pie. It was similar to an chess pie. I would like that recipe if someone has it.

This is the best newsletter on the internet. Over that past 15 years I have printed out a lot of the recipes, and now I just wish I had enough time to make them all. After the age of 84 cooking is not something I do often since moving to a retirement home. The funny thing is if there is a recipe that sounds good I still print them out and share them with all my grandchildren. Nancy, just wanted to let know how reading the newsletter right after breakfast is the best part of my day, even after 15 years.

This is a wonderful and satisfying main dish. Plan ahead, as needs
to be prepared ahead of time and refrigerated overnight. I like
recipes like this, that I can make up the day before, as it leaves
me more time to do other preparations on the day I'll be serving a meal.

Chicken Noodle Casserole Recipe

1 cooked chicken, cut up in small pieces
2 cups uncooked noodles, cooked
1 pkg. (8 oz.) croutons
1/2 cup butter
1 cup water
2 eggs, beaten
1-1/2 cup milk
1/2 cup minced onion
1/2 cup chopped celery
Salt & pepper, to taste
1 can cream of mushroom soup
Parmesan cheese

Toss together cooked noodles with croutons, butter and water. Press lightly into greased 9 x 13 inch pan. Layer cut up chicken over. Mix milk and beaten egg, and add onion, celery and salt & pepper. Pour over chicken layer. Top with soup. Cover with foil and refrigerate overnight. Bake, uncovered, at 325 for 45 minutes (I baked mine for 55 minutes in my oven). Sprinkle with cheese.

My hubby says these cookie bars taste like Mounds candy bars!

Chocolate Yum Yum Recipe

3 tbsp. granulated sugar
3/4 cup flour
1/4 cup baking cocoa
1/3 cup butter
2 eggs
1-1/4 cup brown sugar
1 tsp. baking powder
1/2 cup chopped nuts
1/2 cup coconut
1 tsp. vanilla

Mix together the granulated sugar, flour, cocoa and butter and pat into a greased 8 inch square pan. Beat eggs and add remaining ingredients and spread on top of first mixture in pan. Bake about 40 minutes at 350. Cool and frost with a thin layer of chocolate frosting. Cut into squares after frosting gets firm.

This was always a favorite at our house when our four children
were growing up, but hubby and I still enjoy it. I usually add
more cheese, lettuce and corn chips than the recipe calls for,
but don't actually measure those.

Biscuit Dough Pizza Recipe

1 lb. lean ground beef
1 pkg. taco seasoning mix
1 can (8 oz.) tomato sauce
3/4 cup water
1 pkg. (8 biscuits) refrigerated buttermilk biscuits
1/2 cup shredded Cheddar cheese
1 cup shredded lettuce
1/4 cup crumbled corn chips

Brown beef in skillet. Add taco seasoning mix, tomato sauce and water; heat to boiling. Reduce heat and simmer for 15 minutes. with hands pat biscuit dough into a 12 inch pizza pan, making a 1/2 inch rim. Bake at 350 for 10 minutes, until golden brown. Stir cheese into ground beef mixture and spoon onto crust. Top pizza with lettuce and corn chips and serve immediately.
Makes 4 servings.

Rhubarb Pie Recipe

1 1/2 cups sugar
3 tablespoons flour
Pinch of salt
1/4 teaspoon nutmeg
2 eggs
2 tablespoons milk
1 tablespoon butter, melted
3 cups rhubarb
Mix dry ingredients. Beat eggs slightly, and combine eggs, milk and butter with dry ingredients. Mix in rhubarb. Place between two pie shells. Bake at 400 F for 15 minutes. Then, 350 F for 45 minutes. Enjoy!

Hi Nancy,
Finally getting caught up with your wonderful newsletters. Jiffy mixes had long been a favorite of mine and I set up a new recipe folder to hold all that you posted. I hope if the group has any more, that they will send them in. Please post the temperature and baking time for the Jiffy Spice Cake recipe, my new letter was cut off after the word bake.

Hot and Spicy Artichoke Dip Recipe

Ingredients:
1 jar of marinated artichoke hearts
1 block of cream cheese
1/2 tsp crushed red pepper
shredded cheese for garnish (optional)

The Directions:
Drain oil from artichokes and either chop the 'chokes by hand, food process or blend. I chose to blend.
Dump everything into a mini-crockpot, or insert a heat-safe dish into a large crock stone. Or quintuple the recipe so the whole thing is full. Your choice.
Heat on high for 2 hours or low for 3-4. Stir well and serve with bread, chips, or veggies. You can also add some shredded cheese to the top for an extra layer of gooeyness.

The Verdict:
Yum. I can imagine many, many variations on this---put in some fresh crab, double-up on the artichokes, put in some canned salmon add chopped green olives, etc.

Crock Pot Pork Loin Recipe

Ingredients:
1 5 - 6 pounds Pork Loin
1 can cranberry sauce
1 envelope Lipton onion soup
1/2 can water

Directions:
Pour all ingredients over the pork, cover crockpot, and cook on low for 4-6 hours.

Spicy Seasoning Blend no salt

Ingredients:
2 Tbsp. savory, crushed
1 Tbsp. powdered mustard
2 1/2 tsp. onion powder
1 tsp. ground white pepper
1 1/2 tsp. curry powder
1/2 tsp. garlic powder
1 1/4 tsp. ground cumin

Preparation:
Combine all ingredients; store in an airtight container. Use on almost anything, except maybe Ice cream,,,,grin

The chocolate lasagna recipe that Judy in Montana sent in is really good. I had gotten the recipe before Thanksgiving on Facebook. I took it to our family gathering. Very good. Another wonderful chocolate recipe I got on Facebook

Chocolate Cobble Recipe

Batter ingredients:
2 sticks butter
1-1/4 cups sugar
1-1/2 cup self-rising flour
1 teaspoon vanilla

Chocolate layer ingredients: 1 cup sugar
6 tablespoons cocoa powder
2 cups boiling water

Preheat oven: 350 degrees.
In 9x13 baking dish, melt the butter in the oven. Meanwhile, in a bowl, mix together the 1-1/2 cups sugar, flour, vanilla and milk. Once the butter is melted, pour batter over butter. DO NOT STIR. In separate bowl, mix coco and sugar together. Sprinkle over batter. DO NOT STIR. Pour boiling water over it. DO NOT STIR.
Bake for 30 to 45 minutes.
