Chicken Tortilla Soup Recipe
Makes 6 Servings

2 cans chicken and rice soup
2 cans cream of chicken soup
2 cans chicken broth
1 can mild Ro-Tel
1-1/2 cups chicken, cubed
1 tsp. cumin

Mix all ingredients together and simmer. Serve with grated cheese and tortilla chips. Can be done in crock-pot also. Canned mixed vegetables can be added.

Chicken and Rice Casserole Recipe
Makes 4 Servings

1 cup rice
1 can chicken broth
1 (10 ounce) package frozen corn
4 chicken breast

Put rice in baking dish. Add chicken broth. Dissolve 5 or 6 bouillon cubes in 1 cup water. Put in dish with rice. Put frozen corn in and mix. Place chicken on top of mixture. Bake at 350° for 1 hour.

Chicken Cordon Bleu Recipe
Makes 4 Servings

2 lb. boneless chicken breast
1 pkg. Swiss cheese
1/2 lb. deli ham
1/2 can chicken broth
1 box chicken rice

Flatten out chicken by pounding with mallet. Place 1 slice Swiss cheese and 1 slice ham. Roll up chicken breast and stick 1 to 2 toothpicks through it to hold it together. Add chicken broth. Put in 350° oven until cheese starts melting. Prepare rice. Place rice on plate and put 1 or 2 Cordon Bleu on top. Serve and enjoy.

Stuffed Chicken Breasts Recipe
Makes 6 Servings

6 boneless chicken breasts
1 box Stove Top stuffing (chicken flavor)
1 can cream of chicken soup

Prepare stuffing as directed on box. Let cool. Make stuffing balls. Wrap chicken around stuffing ball. Place in dish. Mix soup with one soup can of water. Pour over chicken. Bake at 350° for 45 minutes.

Chicken Spaghetti Casserole

1 pkg. boneless chicken
1 can cream of chicken soup
1 onion
1 bell pepper
1 c. Velveeta cheese
1 small pkg. spaghetti, cooked
1 can Swanson chicken broth
1/2 cup cheddar cheese

Cook chicken in oil until done (not brown). Add onion and bell pepper; cook until tender. Add chicken soup and chicken broth. Add Velveeta cheese. Cook until cheese is melted. Cook spaghetti (drained). Add chicken mixture to spaghetti and cook a few minutes. Can eat this way or put in casserole dish; top with cheddar cheese. Bake at 350° until cheese is melted.

Chicken and Broccoli Casserole
Makes 4 Servings

4 chicken breasts
2 pkg. frozen broccoli
2 cans cream of chicken soup
1 c. mayonnaise
2 tsp. lemon juice
1/2 to 1 can chicken stock
Parmesan cheese

Cook chicken in salted water; cut into bite size or larger when done. Save some of the stock. Cook broccoli and drain. Mix soup, mayonnaise, lemon juice and chicken stock together. In a flat baking dish arrange layers of chicken, broccoli and cream sauce. Sprinkle each layer with Parmesan cheese; garnish with paprika. Bake at 350° for 45 minutes. Serve with or on rice.

Green Bean and Chicken Casserole Recipe
Makes 4 Servings

4 chicken breasts, cooked, deboned and cut up
1 pkg. Uncle Ben's wild rice, cooked
1 can cream of celery soup
1 medium jar chopped pimento
1 medium onion, chopped
1 (16 oz.) can French-style green beans
1 cup mayonnaise
salt and pepper to taste
8 oz. grated sharp cheese

Mix all ingredients together except cheese. Pour into a 9 x 13-inch baking dish and sprinkle cheese on top, covering well. Bake for 30 minutes at 350°, uncovered.

Turkey Kabobs Recipe

1/2 cup chopped parsley
6 cloves garlic, crushed
1 Tbs. ground cumin
1/2 tsp. ground curry
1/4 tsp. ground cardamom
1/3 cup olive oil
1 1/2 lbs. Turkey Breast or Tenders cut into 2 inch pieces
2 green or red bell peppers, cut into 1 1/2 inch pieces
4 zucchini, cut into 1 inch chunks
1 large red onion, wedged

Combine parsley, garlic, cumin, curry and cardamom in a shallow baking dish. Stir in olive oil until thoroughly mixed. Toss in turkey so that it is evenly coated, cover and refrigerate for at least 30 minutes.
Skewer turkey, peppers, zucchini and onions onto 12-inch wooden skewer in an alternating pattern. Brush with any remaining marinade and season all over with salt and pepper.
Grill skewers over medium-high heat for 4-6 minutes per side until turkey is cooked through. Serves 6-8.

Rhubarb Streusel Pie Recipe

Streusel:
1/3 cup flour
1/2 cup sugar
2 tablespoons melted butter
Pie:
1 9-inch pie crust
1/2 cup sugar
1/2 cup flour
3 cups chopped rhubarb (12 to 14 ounces)
1 can (14 ounces) sweetened condensed milk

Heat oven to 425°F.
For the streusel: Combine flour and sugar. Stir in melted butter to resemble coarse meal. Set aside.
For the pie: Line 9-inch pie plate with pie dough.
Combine sugar and flour. Sprinkle about 1/3 of mixture on dough. Layer on rhubarb. Sprinkle with remaining flour and sugar mixture. Pour sweetened condensed milk over all.
Top with streusel. Bake for 30 to 40 minutes, or until well-browned and bubbly. Rhubarb Streusel Pie yields 8 servings.

Sour Cream Rhubarb Pie Recipe

Whether you use fresh or frozen rhubarb, this pie is super! It's especially good if you use fresh rhubarb because you get a scrumptious macaroon like top when baked.

1 9-inch pastry shell, unbaked
3 cups cut-up rhubarb
1 egg, slightly beaten
1 1/2 cups sugar
Dash of salt
3 tablespoons tapioca
1 cup dairy sour cream
Heat oven to 450°F.

Into pie shell, place rhubarb. Blend egg, sugar, salt, tapioca and sour cream until thoroughly mixed. Pour over rhubarb and bake for 15 minutes. Reduce oven temperature to 350° and bake for an additional 35 to 45 minutes, or until filling has firmed and is lightly browned.

Rhubarb Cream Pie Recipe

1 cup sugar
2 tablespoons (a little heaping) flour
1 cup cut-up rhubarb, small pieces
1 cup cream
1 pie shell, unbaked
Heat oven to 400°F.
Mix together sugar and flour. Stir in rhubarb and cream until sugar is dissolved.
Pour into pie shell and bake for 20 minutes. Reduce oven temperature to 350° and bake for an additional 25 minutes. Check pie, and continue cooking, reducing heat, cook more until cream looks glossy.

Cherry Rhubarb Jam Recipe

5 cups cut-up rhubarb, in 1/2-inch pieces
1 cup water
5 cups sugar
1 can (21 ounces) cherry pie filling
2 packages (3 ounces each) cherry gelatin
1/8 teaspoon almond extract
In large pan, cook rhubarb in water until tender.
Add sugar and continue cooking for another 10 minutes. Add pie filling and cook for an additional 10 minutes. Stir thoroughly. Remove from heat.
Stir in gelatin and almond extract.
Cool and pour in jars and refrigerate or freeze

Hi out there to everyone in Nancyland and especially our leader Nancy :) I thought I would drop another crockpot weight watchers chicken dish. Lots of these I do not have the points for as I have simply adapted older recipes to what weight watchers can eat and my daughter has the conversion table. I will try and get it so I can send the points with my recipes. Hope if you try it you will enjoy it as we really like this dish. We serve it with whole wheat spaghetti but can be teamed up with garlic mashed potatoes or whole wheat pasta or your choice maybe even brown rice. Donna in KS


Balsamic Slow Cooker Chicken
One chicken breast per person

4 - 6 boneless, skinless chicken breasts
2 Tbs olive oil (I cut this to 1 TBs)
1/4 cup balsamic vinegar *sometimes I use more
2 14.5 oz cans petite diced tomatoes, *do not drain
1 sweet onion, halved and thinly sliced (not chopped)
2-4 garlic cloves, minced
1 tsp each: dried oregano, basil, and rosemary
1/2 tsp thyme
freshly cracked black pepper and salt, to taste
1 tsp sugar ( used sugar substitute have even forgotten it and never noticed lol)

Pour olive oil in the bottom of slow cooker. Season each chicken breast with salt and pepper and place in to slow cooker. Sprinkle with dried herbs and minced garlic. Top with sliced onions. Pour in vinegar and top with tomatoes.
